- Raspberry lollies: these are my favourite red filling for rocky road! They are easy to chop as they are soft and each raspberry can be cut into 4 pieces adding pops of colour all throughout the rocky road!
- Peanuts: adding nuts to rocky road is a tradition and you can change it up and try pistachios for colour. For this recipe, I have stuck to the ever popular peanut and recommend the roasted, unsalted variety!
- Maltesers: we need around 2 cups of these. So I use a 280 gram 'share bag' and throw them in as is. ie no chopping or breaking into pieces. If you love maltesers you might also like the Malteser Truffles, the Malteser Biscuits or the Malteser Fudge 😁👌.
- Milk chocolate: we use cooking chocolate for the recipe. You can use chocolate melts, bits, pieces or a block broken into pieces to the same amount as indicated in the recipe card (ie 600 grams).

👩🍳 How to Make Malteser Rocky Road
You can use a square or rectangular tin for the recipe. If using a square, it is then easy to cut the large square into 4 smaller squares and those into 4 even pieces.
I recommend using the microwave to melt your chocolate as it is simple and fuss free!
- Microwave the chocolate for 2 mins on high (photo 5)
- Combine chocolate and fillings (photo 6)
- Stir to combine (photo 7)
- Transfer wet rocky road into tin to set (photo 8)
It will only take a couple of mins to melt the chocolate and stir together with the rocky road fillings.
Once the ingredients are stirred and combined, the wet rocky road mix gets transferred into the tin to set.
I recommend placing in the fridge for this period of time as it will keep the rocky road firm and fresh.
Allow at least 1 hour from when the rocky road goes into the fridge for it to set.
When read to serve the rocky road, simply remove from the fridge, allow to sit for 10 - 15 mins, then use a sharp knife to cut into pieces.
You will find it easiest to clean the knife in between cuts either with paper towel or a cloth that has been rinsed with warm or hot water.

Malteser Rocky Road
- 600 grams/21 oz milk chocolate Note 1
- 2 cups Maltesers Note 2
- 2 cups mini marshmallows Note 3
- 1 cup raspberry lollies (candy) roughly chopped, Note 4
- 1 cup peanuts roasted, unsalted
- Cake tin: line a square slice or cake tin with greaseproof paper (Tray dimensions 24cm x 5cm, 9 inch x 2 inches). Leave an overhang on the sides.
- Rocky road filling: combine, maltesers, mini marshmallows, peanuts, and chopped raspberries in a large mixing bowl. Stir till consistently combined.
- Chocolate: add chocolate melts to a large heatproof jug. Place in microwave and heat on high for 2 mins. Remove and stir to melt the rest of the chocolate.
- Combine: pour melted chocolate over combined rocky road ingredients, stir till they are covered in chocolate.
- Into tin: transfer wet rocky road mix to lined slice tray, then place in refrigerator to set.
- Refrigerate: after a (minimum of 1 hour) remove rocky road from fridge and set on bench for 10 mins.
- Portion: pull Malteser rocky road from tin, by grabbing parchment paper on either side and lifting rocky road up and out of tin. Use a sharp knife to cut into pieces.
- To store: store the rocky road in the fridge in a sealed, airtight container for up to 3 weeks.
- Note 1 Chocolate: you can use chocolate melts, chocolate bits or a block of cooking chocolate broken into pieces. Ensure you measure it using kitchen scales or purchase exact quantity ie 600grams/21 oz.
- Note 2 Maltesers: I use 1 x 280 grams (approx 2 cups) share bag of Maltesers. I don't crush these, I add them in as they are from the packet.
- Note 3 Mini marshmallows: these mini marshmallows are perfect to use when baking as they don't need to be prepped. You can simply open the bag and throw them on into the mix. If you want to use regular size marshmallows, it is a good idea to use kitchen scissors and cut eat marshmallow in half.
- Note 4 Raspberry lollies: I use kitchen scissors and cut each raspberry in half (repeat for all) and then each piece in half again. So essentially each raspberry is cut into 4 pieces. They are quite a chewy lolly and I find bit size is better.
