Recipe inspiration: recently I saw a photo of some delicious looking blondies on Facebook published by my friends (Mindy and Lee) over at Mindy's Cooking Obsession. They were Mindy's Caramel Pecan Blondies. I had to try them! So I did. They are SO very good ๐. Fast forward a few months to me developing a flavor combination for my own blondies inspired but different to that recipe. Here it is ๐๐.

The photo below is to show you everything you need to make the recipe. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.
As you can see the recipe calls for:
- Vanilla.
- Eggs: always free range of course!
- Butter: we want to use unsalted butter. This is because we are using roasted and salted macadamia nuts. We don't want too much salt in the mix.
- White chocolate: white chocolate chips or white chocolate chunks roughly chopped. Cooking chocolate (cooking aisle) is recommended over eating chocolate (sweets aisle).
- Macadamia nuts: buttery macadamia nuts are an excellent snack but they are also so good to bake with! (There is a reason why those Subway Cookies are so popular ๐๐). Roasted and salted is recommended. Some halves, some bits and pieces, not too many whole large nuts.
- Brown sugar: one of the 2 primary dry ingredients in a classic blondies recipe.
- Plain flour: no need to sift.
๐ Substitutions and Variations
Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:
- Chocolate: you can use milk chocolate or dark chocolate chips in place of the white chocolate chips. Or use a combination of white chocolate and one or both of the above (equivalent total amount).
- Nuts: you can use other types of nuts in place of the macadamia nuts if you wish to. Keep the measurement the same but sub in either hazelnuts, pistachio nuts, pecans or walnuts.
- Butter: if you only have salted butter then you are best using unsalted macadamia nuts (or unsalted nuts of a different version you try).
๐ฉโ๐ณ How to Make White Chocolate Macadamia Blondies
To make the White Chocolate Macadamia Blondies we start by adding the brown sugar to a large mixing bowl.

Here are the step by step instructions to make the recipe. We start by:
- Line the baking dish (Photo 1)
- Add sugar to a large bowl (Photo 2)
- Melt the butter (Photo 3)
- Pour butter into the sugar (Photo 4)
Lining the baking dish with parchment paper is important as we use this to remove the cooled blondies from the dish later down the track. After adding the sugar to a bowl place butter in a heat safe jug and microwave in 30 second increments till melted. When it has pour the melted butter into the sugar and combine.
- Crack the eggs (Photo 5)
- Add the eggs to the butter mixture (Photo 6)
- Stir to combine (Photo 7)
- Add the flour to the batter (Photo 8)
Stir the flour mixture until the blondies take on a thick caramel looking colour with consistently textured batter.
- Stir to combine (Photo 9)
- Add the nuts and chocolate (Photo 10)
- Pour batter into prepared pan, bake (Photo 11)
- Let cool (Photo 12)
After adding the flour to the mixing bowl, stir to combine consistently then add the white chocolate chips and macadamia nuts. Keep gently stirring till these are folded in then transfer the wet batter into the lined baking dish like you see in the photos above. Next use a spatula to spread the batter into an even layer (see video for technique).
Once done bake the blondies for 35 minutes. Then use a pair of oven mitts to remove the baking dish and place it on a heatproof surface. Then let the blondies cool for around 20 minutes (still in the baking dish).
After this time lift the baking paper up and out of the dish and place the full slab of blondies on a wire rack. Let them cool for a further 20 minutes before slicing into pieces (the best bit aside from the eating, right ๐๐).

When it comes to time to serve your blondies (they are worth the wait!) you have multiple options up your sleeve.
Serve them with vanilla ice-cream like we do for the Chocolate Self Saucing Pudding.

How to Store
Once you have sliced the blondies you can transfer them to an airtight container and place them in the fridge. They will keep for 3-5 days.
How to Reheat
If you want to reheat refrigerated blondies, simply transfer them to a bowl and microwave for 1 minute on high.
๐ก Tasty Tips
Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:
- Baking dish: I like to use a square pan for this recipe. I do that as I then cut that square into 4 and those squares into 4 so you get 16 equal sized blondies.
- Baking paper: line the baking tray in both directions with enough overhang for easy removal. It will allow you to pull the blondies up and out of the tray once they have cooled.
- Oven temperature: turn the oven on before starting any of the other steps to make the recipe. This will allow it to preheat. This will also mean that the cook time for the blondies is accurate with the time specified in the recipe card. We want a precise cook time with little room to under or over cook the blondies.
- Cooling is important: part of the success is making blondies with their soft fudgy centre and crisp top is to let them cool! Do this in the pan for 20 minutes once they are removed from the oven and then let them cool for a further 20 minutes on a wire rack before cutting. This is the best way of ensuring that they won't break or fall apart.

White Chocolate Macadamia Blondies
Ingredients
- 2 cups brown sugar Note 1
- 250 grams/2 sticks butter unsalted, Note 2
- 2 large eggs free range
- 2 teaspoons vanilla
- 2 cups plain flour Note 3
- 1 cup white chocolate chips Note 4
- 1 cup macadamia nuts roasted and salted, Note 5
Instructions
- Preheat the oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
- Baking dish: line a square baking dish (24 cm x 24 cm or 9.4 inches) with 2 overlapping layers of baking paper with overhang on each side.
- Sugar: add the brown sugar to a large mixing bowl.
- Butter: add the butter to a heatproof container and place it into the microwave. Heat it on high for 30 second increments until melted (around 1 ยฝ minutes). Once melted, gently stir the butter.
- Butter and sugar: next pour the melted butter into the bowl with the brown sugar and use a spatula or wooden spoon to stir until combined. Once combined let cool for 1-2 minutes.
- Eggs, vanilla and flour: after letting the batter cool for a couple of minutes add the eggs and vanilla. Stir to combine consistently and then add the flour and stir again till consistently combined.
- Mix ins: next pour the white chocolate chips and macadamia nuts into the bowl and gently fold in.
- Transfer: use a spatula to transfer the blondie batter into the lined baking dish. Then gently level so that it is pushed into all 4 corners of the baking dish.
- Bake: place the baking dish into the oven and bake the blondies for 35 minutes.
- Cool: when the cook time is up use oven mitts to remove the baking dish and set it on heatproof surface. Let the blondies cool in the dish for at least 20 minutes. After this time is up, grab the baking paper and pull the blondies up and out of the dish. Place them onto a wire rack and let them cool for a further 20 minutes before slicing.

- Note 1- Brown sugar: loosely packed.ย
- Note 2 - Butter: as I recommend us using roasted, salted macadamia nuts, I then also recommend using unsalted butter. This is because the nuts will bring the 'salt' and we don't want the blondies to be too salty.ย
- Note 3 - Flour: this is plain flour, not self-raising flour. No need to sift. Simply measure and then add to the mixing bowl.ย
- Note 4 - Chocolate: I have also used dark chocolate chips to make the recipe and they were perfect! You can also use milk chocolate chips if you wish to. Or you can use a combination. We do however want to ensure that we are using cooking chocolate chips as well as sticking to the amount indicated in the recipe card.ย
- Note 5 - Macadamia nuts: I recommend using roasted, salted macadamia nuts for the best flavor and crunch. If you want to use another nut like walnuts, pistachio nuts or pecans you can. As above, stick to the same amount of 'nuts' in the recipe card.ย
