    Apple Cinnamon Blondies are warm, cozy and delicious! Quick, easy and versatile, these sweet treats will be something you turn to again and again. Made from a simple batter with chunks of tender apples topped with melted butter and cinnamon sugar. They have a snickerdoodle like flavor and half a piece simply won't be enough ๐Ÿ˜‰๐Ÿ‘Œ!

    As you can see for the blondie base we need:

    • Vanilla.
    • Eggs: 2 large eggs that are free range of course.
    • Butter: unsalted butter is recommend.
    • Brown sugar: the primary dry ingredients are sugar and flour.
    • White sugar: regular white sugar or caster sugar will both work.
    • Plain flour: no sifting needed!

    ๐Ÿ Cinnamon Sugar Blondies Ingredients

    • Butter.
    • Cinnamon sugar: this is actually sold as 'cinnamon sugar' in the baking aisle where the herbs and spices are. It is a combination of powdered cinnamon and sugar.
    • Brown sugar.
    • Lemon juice.
    • Brown sugar.
    • Water.
    • Granny smith apples: we use fresh apples that we peel and dice then stew. These give the blondies a fresh and fruity flavor profile that makes them the perfect fall dessert.

    ๐Ÿ˜‰ Substitutions and Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Chocolate: if you want to add chocolate to the blondies you can. My recommendation is 1 cup of white chocolate chips, folded in when mixing the apple pieces into the batter.
    • Nuts: if you want to add some chopped nuts you can. Some options that fit the flavor profile are chopped walnuts, pecans or hazelnuts.
    • Glaze or frosting: if you want to make a vanilla cinnamon glaze or maple cream cheese frosting to spread on top of the blondies, be my guest. I prefer the simplicity of the melted butter and sugar topping but you do you ๐Ÿ˜๐Ÿ‘.

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Apple Cinnamon Blondies

    To make the apple cinnamon blondies we start by peeling the apples. You will need a vegetable peeler and cutting board to begin with.

    • Peel the apples (Photo 1)
    • Dice the apples (Photo 2)
    • Cook the apples (Photo 3)
    • Line the baking dish (Photo 4)

    Use the vegetable to peel the skin from the apples (discard) then use a small sharp knife to cut out the seeds and dice the apples initially into thin slices and then into small pieces.

    Next add the chunks of apples to a large saucepan and cook the apples with the water, lemon juice and brown sugar until the liquids and sugar have been absorbed. Let cool.

    Now when ready use 2 overlapping sheets of baking paper to prepare the baking dish. Allow an overhang on each side as we will use this to lift the cooked blondies up and out of the dish later.

    ๐Ÿณ Instructions To Make Blondies

    • Add sugars to large bowl (Photo 5)
    • Melt the butter (Photo 6)
    • Add butter to sugars, combine (Photo 7)
    • Add eggs and vanilla, stir (Photo 8)

    Next add both the brown and white sugar to a large mixing bowl. Then place the butter into a heatproof jug and microwave on high in 30 second increments until melted. Remove the butter from the microwave, stir and pour this into the bowl with the sugar.

    Stir till the butter is combined with the sugar then transfer in the remaining wet ingredients by adding the 2 eggs and vanilla. Stir again until mixed in.

    Next add the flour to the bowl.

    • Add flour and combine (Photo 9)
    • Add the cooked apple pieces (Photo 10)
    • Transfer the batter into baking dish (Photo 11)
    • Combine the sugars in a small bowl (Photo 12)

    Once done add the cooked diced apples to the bowl and use a spatula to gentle fold these in.

    Then transfer the combined batter into the prepared baking dish.

    ๐ŸŽ Cinnamon Sugar Blondies

    Now we are ready to make the topping!

    Add both the brown sugar and cinnamon sugar to a separate bowl (to the one you made the blondies in) and mix till consistently combined (see photo 12 above).

    • Melt the butter (Photo 13)
    • Pour over the blondies (Photo 14)
    • Sprinkle with sugar mix (Photo 15)
    • Cook (Photo 16)

    Then add the butter to a microwave safe jug and heat it on high for around 30 seconds until melted.

    Once the butter has melted, pour it over the top of the blondie batter like you see in the photos above. Then sprinkle the combined sugars over the top.

    Now we are ready to place the baking tray into the preheated oven on the middle shelf. Bake the blondies for 35 minutes. The top will be golden brown and the edges firm and a little crispy.

    Once the cook time is up, use a pair of oven mitts to remove the baking dish and set it onto a heatproof surface.

    The next step is to let the baked blondies cool. Leave them in the pan for at least 20 minutes. Then use the baking paper to lift them up and out of the dish.

    Now let them cool for another 20 minutes (or in the fridge overnight) before slicing into portions.

    If you have used a square baking dish, you will be able to cut the large square into 4 then those 4 squares into 4 and this will give you 16 evenly portioned pieces.

    ๐Ÿฝ Serving Suggestions

    Finally, we have arrived at the best part...the eating of course.

    Serving your delicious apple blondies warm with a scoop of vanilla ice cream on top seems like an obvious choice!

    Or simply slice into portions and present them on a serving platter, ready for everyone to grab a piece.

    How To Store

    Once the blondies have cooled and been sliced into individual pieces these can be transferred to an airtight container. Place these into the fridge and store for 3-4 days. These blondies can be served cold or warmed through.

    How To Freeze

    To freeze the blondies, ensure that they have cooled and then wrap the individual portions in plastic wrap. Stack these in the freezer. They can be kept for 3 months.

    How To Reheat

    To reheat the blondies, place them on a plate (one by one) or spread out in one layer not on top of each other. Then place these in the microwave and use the high setting to reheat in 30 second increments until warmed through.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Baking dish: I definitely think a square baking dish is the way to go when making blondies or brownies. This will allow you to use that square to cut the slice into 16 even pieces. If you don't have a square baking dish a rectangular one will work just fine though.
    • Overhang: we line the baking dish with 2 overlapping sheets of parchment paper. This is because we later use that paper to lift the blondies up and out of the baking dish. This ensures that we don't have to tip them out. Aim for 2 inches on either side.
    • Cooking oil: use a small amount of cooking spray in the baking tray base and sides. This will help 'stick the baking paper'.
    • Cool: cool, cool, cool. It is so very important that you let the blondies cool before trying to portion them. As much as they look cooked, they can easily crumble and fall apart if they are removed from the baking dish too early. So be patient and let them cool for 20 minutes in the pan and 20 minutes on a wire rack before slicing. Or put them in the fridge overnight and slice them the next day. If you do however, slice them too early and they fall apart they can still be served like a slice of apple pie in a bowl with cream, so all hope is not lost ๐Ÿ‘.

    Ingredients

    Stewed Apples

    • 4 granny smith apples Note 1
    • โ…“ cup water Note 2
    • 1 tablespoon brown sugar
    • 1 tablespoon lemon juice Note 3

    Blondies

    • 1 cup brown sugar lightly packed
    • 1 cup white sugar
    • 250 grams/2 sticks butter unsalted
    • 2 large eggs free range
    • 2 teaspoons vanilla
    • 2 cups plain flour no need to sift

    Topping

    • 50 grams/1/2 a stick butter unsalted
    • 1 tablespoon brown sugar
    • 1 tablespoon cinnamon sugar Note 4

    Instructions

    • Preheat the oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
    • Apples: use a vegetable peeler and cutting board to peel each of the apples. Then use a small knife to remove the seeds and chop the apples into small pieces. Pour the water, lemon juice and brown sugar into a saucepan and add the apples. Turn the temperature to high and cook for 4-5 minutes or until the liquids and sugar has been absorbed. You will need to stir regularly throughout this time. Once cooked, allow to cool.
    • Baking dish:ย lightly grease a square (24 x 24 cm or 9.4 inch) baking dish with cooking oil then line it with 2 overlapping sheets of baking paper with a 2-3 inch overhang on each side.
    • Sugar and butter: pour both the brown sugar and white sugar into a large mixing bowl. Then place the butter into a microwave safe jug and heat in the microwave using the high setting in 30 second increments until melted (usually less than 1 minute). Use a tea towel to grab the jug out of the microwave and set it on a heatproof surface. Stir the melted butter then pour it into the bowl and combine with the sugars.
    • Eggs and vanilla: next add the 2 eggs and vanilla to the mixing bowl and stir till the batter is consistently combined.
    • Flour and apple pieces: next add the plain flour to the bowl, stir to combine. Then add the cooked apple pieces and use a spatula to gently fold in.
    • Baking dish: use the spatula to transfer the blondie batter into the prepared baking dish. Then spread this out so that it reaches all 4 corners and is in a reasonably even layer.
    • Topping: add the butter for the topping to a heatproof jug and microwave on high for 30 seconds to melt. Then pour the butter over the top of the blondies. Next sprinkle the combined sugar over the top. Once done place the baking dish into the preheated oven on the middle shelf. Let the blondies bake for 35 minutes.
    • To serve: use oven mitts to remove the baking dish from the oven when the blondies are cooked. Then let them cool in the dish for at least 20 minutes. Remove them by pulling the paper up and out of the tray and rest them on a wire rack. Let them cool for another 20 minutes. Then slice into 16 even portions and serve warm with vanilla ice-cream.

    Notes

    • Note 1 - Granny smith apples: these apples are great to bake with! They are sweet but not too sweet which is good as we add some sugar whilst cooking them. We peel, slice then dice before stewing. The stewing only takes 4-5 minutes as we wait for the sugar to melt and liquids to be absorbed.ย 
    • Note 2 - Water: plain, tap water is fine for this ingredient.ย 
    • Note 3 - Lemon juice: bottled lemon juice is totally fine for this! As we are not using a great quantity it seems a pity to squeeze a whole fresh lemon when we would only be using a small amount of it.ย 
    • Note 4 - Cinnamon sugar: this is sold in the cooking aisle in the supermarket where the flour and cake mixes are. It is a combination of ground cinnamon and white sugar.ย
