    • Pantry staples: many of the ingredients to make these blondies are pantry or fridge staples that you are likely to have at home. This makes it a great option for last minute baking ensuring you don't have to whip out to purchase every single thing.
    • One bowl: whilst we do use a heatproof jug to melt the butter, this entire recipe gets made in one bowl! We simply stir everything together (no electric mixer needed) and then add it to the baking dish. This makes it a great option if you feel like baking but not cleaning up for hours afterwards.
    • Flavor profile: the pairing of the sweet white chocolate and juicy tart raspberries is a match made in heaven. They work so well together. Baking them into a sweet treat is a no brainer for a delicious flavor combination.

    As you can see the recipe calls for:

    • Vanilla: the primary wet ingredients are butter, eggs and vanilla.
    • Eggs.
    • Butter: we want to use unsalted butter.
    • White sugar: the primary dry ingredients are sugar and flour.
    • Brown sugar.
    • Raspberries: fresh or frozen raspberries will work.
    • White chocolate chips: the combination of the bright red raspberries and the white chocolate is so pretty!
    • Plain flour: no need to sift.

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Sugar: if you only have either white sugar or brown sugar, you can use both BUT...the texture will be different. Only using brown sugar results in much softer blondies without a crisp aspect to them. Only using white sugar works but leaves the blondies without the same depth of flavor as when using brown sugar (this is despite not browning it as many recipes will call for).
    • Raspberries: other fruits will work in place of the raspberries. Think other fresh berries like strawberries, blueberries or a mixed berry combination. For outside of the square options trying adding stewed apple or pear pieces.
    • Chocolate: white chocolate is the obvious choice for these blondies. However, you can substitute the equivalent amount of dark chocolate, milk chocolate or a combination of white, milk and dark chocolate. You can also use chocolate chips like I am, white chocolate chunks or a block of chocolate roughly chopped (in all cases we need to use cooking chocolate for the best results).

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Raspberry And White Chocolate Blondies

    Here are the step by step instructions to make the recipe. We start by lining a large square baking pan with parchment paper. You can also turn the oven on to preheat at this point as it doesn't take long for you to bring together the batter.

    ๐Ÿณ Instructions

    • Line the baking dish (Photo 1)
    • Add sugars to bowl (Photo 2)
    • Pour over melted butter (Photo 3)
    • Stir to combine (Photo 4)

    Use the microwave to melt the butter (in a heatpoof bowl) then pour this into a large mixing bowl over the top of the sugars. Stir till consistently combined and the mixture will look like the 4th photo above.

    • Add the eggs and vanilla (Photo 5)
    • Stir to combine (Photo 6)
    • Add the flour and combine (Photo 7)
    • Add the raspberries and chocolate chips (Photo 8)

    Next add the eggs and vanilla extract and stir till they are consistently mixed in.

    Then add the flour to the combined wet ingredients and stir again.

    Once done add both the raspberries and chocolate chips to the blondie batter and now gently stir to fold these in (see photo 9 below)

    • Gently combine (Photo 9)
    • Transfer into the baking dish (Photo 10)
    • Push to spread out evenly (Photo 11)
    • Bake (Photo 12)

    Now take the mixture and a spatula and spread it out across the base of the baking dish. This doesn't have to be 'perfect', more so into all of the corners with an attempt at being even.

    From there place the blondies into the preheated oven and bake them for 30-35 minutes.

    Once the cook time is up, use a pair of oven mitts, remove the baking dish from the oven and set it on a heatproof surface.

    Next we want to cool the blondies. They will still be very warm at this point, so leave them in the baking dish for 30 minutes and then once the base underneath feels cool to the touch pull the paper up and out of the dish.

    As you can see from the photo above a square baking dish lets you portion the larger square into 4 smaller ones and then we get 16 evenly sized portions.

    The straight cut edges are because these were in the fridge for a couple of hours before being sliced. They will firm up during this time but they keep their deliciously fudgy inner texture.

    ๐Ÿฝ Ways To Serve White Chocolate Raspberry Blondies

    Plenty of options here!

    Simply grab one and eat it, or warm it through a little and pop it in the microwave, add a scoop of vanilla ice-cream or pop one in the kids lunch box, you have plenty of options and none that won't leave delicious little crumbs to be licked from your lips.

    If you do want to warm them through, they will melt and fall apart if too high heat and too much heat is used. If serving in a bowl then probably no worries about that. But if you still want to be able to 'eat a slice' then use minimal heat to simply warm through.

    How to Store

    Slice the cooled blondies and transfer the individual portions to an airtight container with baking paper separating the layers. Place these into the fridge and consume within 3 days.

    ๐Ÿ’ก White Chocolate Raspberry Blondie Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Lining the baking dish: this is essential as we will use the overhang of that paper to lift the blondies up and out of the pan.
    • Gentle stir: raspberries whilst bursting with the berry-ness are fruit perfection. But they are also fragile little things. So once you have added them to the mixing bowl, use a very gentle hand to stir them into the mix. Some will still break and you will be get a smear through the blondies but this just adds to their poetic beauty.
    • Cooling: whilst it does increase the amount of time before the 1st bite, it is also essential that we cool the blondies. If we don't cool them they can crack and fall apart. If we do cool them they can be cut nicely and evenly with sharp edges.
    • Fridge: re the point above - if you want to place the cooked blondies into the fridge to cool you can. I have done this both for a few hours as well as overnight. The main thing is that you will get the best results and straight edges with no soft edges caving in. You won't get the look of melted chocolate oozing out, but that is more of a photo thing than an eating thing anyways.
    • Similar options with different cooking techniques: Macadamia Caramel Slice, Coffee Slice, Chocolate Caramel Slice, No Bake Caramel Cheesecake.

    Can I add raspberries to blondies?

    Yes for sure you can! Adding raspberries to blondies is a great idea. Both fresh and frozen blondies will work and they will give the blondies a sweet but tart flavor. This is best contrasted with the addition of semi sweet chocolate such as white chocolate chips.

    Can you freeze blondies?

    Yes you can freeze blondies. Simply wait for them to cool, individually portion and wrap then stack in the freezer. These can be kept for up to 3 months then thawed and consumed or warmed through and served with vanilla ice-cream.

    How long do blondies last in the fridge?

    Usually blondies will last up to one week in the fridge. However, fruit based blondies are more delicate and best consumed within 3 days.

    Ingredients

    • 1 cup brown sugar loosely packed
    • 1 cup white sugar
    • 250 grams/2 sticks butter unsalted, Note 1
    • 2 large eggs free range, Note 2
    • 2 teaspoons vanilla
    • 2 cups plain flour no need to sift
    • 1 ยฝ cups white chocolate chips Note 3
    • 1 ยฝ cups raspberries Note 4

    Instructions

    • Preheat oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
    • Prepare baking dish:ย lightly grease a large square (24 x 24 cm or 9.4 inch) baking dish with olive oil and then line it with 2 overlapping sheets of baking paper. Leave a 2-3 inch overhang on each side.
    • Sugar and butter: add the brown sugar and white sugar to a large mixing bowl. Then place the butter into a heatproof jug and melt on high heat in the microwave for 30 second increments until melted. Remove and stir gently once melted then pour over the sugars and stir to consistently combine.
    • Eggs: vanilla and flour: next crack each egg and add them to the bowl followed by the vanilla. Stir till these are consistently mixed in and then add the flour. Stir again once the flour has been added until the mixture is smooth with no visible flour at sides or base of the bowl.
    • Raspberries and chocolate: next add the white chocolate chips and raspberries. Then stir gently to fold these in. Note 5
    • Transfer: transfer the combined blondie batter to the prepared baking dish. Use a spatula to spread this out reaching all 4 corners and make it one reasonably flat or evenly spread layer.
    • Bake: place the baking dish into the preheated oven and let the blondies bake for 30-35 minutes. A skewer inserted will come out with minimal crumbs at this point.
    • Cool: use oven mitts to remove the baking dish from the oven and set it on a heatproof surface. Leave it to cool for at least 30 minutes (can refrigerate for this time). Then pull the blondies up and out of the baking dish. Then leave to cool for another 30 minutes before removing the baking paper and slicing into portions.

    Notes

    • Note 1 - Butter: I use unsalted butter to lean the blondies towards a sweet not salty flavor profile. I also chop the bigger block or sticks of butter into smaller pieces before adding these to a microwave safe jug. Once the butter has melted (I use high heat for 30 second increments), give it a stir before pouring over the sugars.ย 
    • Note 2 - Eggs: so that you don't end up with any eggshell in the mixing bowl, crack each egg into a small bowl before adding to the wet batter.ย 
    • Note 3 - White chocolate: I use chocolate chips for this recipe. Equally you could use a block and cut it into pieces or chocolate melts roughly chopped. You can also use either milk or dark chocolate to the equivalent amount. Whichever chocolate you choose needs to be cooking chocolate, not eating chocolate.ย 
    • Note 4 - Raspberries: this is one punnet of fresh raspberries. Or you can use frozen raspberries to the equivalent amount.ย 
    • Note 5 - Gentle stir: raspberries whilst bursting with the berry-ness are fruit perfection, they are also fragile little things. So once you have added them to the mixing bowl, use a very gentle hand to stir them together.
