    Baileys Pudding

    Baileys Pudding is a rich and creamy chocolate pudding that melts in your mouth. Made with simple ingredients we have a very moist chocolate cake pudding batter and self saucing layer on top. Microwaved in only 10 minutes this recipe is one to turn to when dessert is the last thing on the dinner party menu.

    Irish Cream Chocolate Pudding

    The Microwave Chocolate Self Saucing Pudding is the original recipe that inspired this Bailey's pudding. I shared that recipe in October 2023. Feedback from one reader suggested adding a little rum. That got me thinking ๐Ÿ˜‰๐Ÿ‘Œ.

    ๐Ÿค Baileys Chocolate Pudding

    I have summarised everything that you will come to know and love (LOVE โค) about the recipe in the points below:

    • Quick: total time needed is 15 minutes.
    • Easy: this easy dessert recipe is suitable for all cooking abilities.
    • Basic ingredients: many are pantry or fridge staples.
    • Simple technique: no electric mixer needed, we simply stir the ingredients together with a spatula. (In which case serve with ice cream as to not have to whip cream).
    • Small portions: a little goes a long way for this pudding! Individual servings can be smaller than a traditional dessert.
    • Indulgent: with a rich chocolate flavor and moist tender texture every bite of this boozy dessert is pure bliss.

    The photo below is to show you everything you need to make the Baileys self saucing pudding recipe. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.

    For the chocolate pudding we need:

    • Vanillla.
    • Milk.
    • Baileys: we use some Baileys Irish Cream in the actual pudding and some poured on top once it is cooked.
    • Cocoa Powder.
    • Vegetable oil.
    • White sugar.
    • Self-raising flour.

    For the chocolate sauce we need:
    • Boiling water.
    • Coca powder.
    • Brown sugar.

    ๐Ÿ˜‰ Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Baileys: you can use rum, whisky or a coffee liqueur in place of the Bailey's if you wish to.
    • Raspberries: where I am showing the dessert served with fresh raspberries you could also use fresh strawberries.
    • Mint: add some fresh mint leaves for an after dinner mint concept ๐Ÿ˜‚๐Ÿ‘.
    • Cream: the photos throughout the post show the pudding with freshly whipped cream. Equally you could serve it with vanilla ice cream.
    • Chocolate: if you want to roughly chop some dark chocolate and sprinkle the flakes over the pudding to serve it you can. Or add a handful of chocolate chips to the pudding mixture before cooking.

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Baileys Pudding

    To make the pudding we start by greasing a 6 cup capacity microwave safe baking dish.

    ๐Ÿณ Instructions

    • Grease the baking dish (Photo 1)
    • Add flour and cocoa powder to large bowl (Photo 2)
    • Add milk, Bailey's, oil, vanilla (Photo 3)
    • Stir to combine (Photo 4)

    Next sift both the self-raising flour and cocoa powder into a large mixing bowl. Then add the milk, Baileys, oil and vanilla. Use a rubber spatula to stir until the pudding mixture is consistently combined.

    Next transfer the combined chocolate pudding into the prepared baking dish.

    Once you have we then move on to making the chocolate sauce. To do this sprinkle the cocoa powder over the wet batter then do the same with the brown sugar.

    Now take a large spoon and flip it over. Then pour the boiling water over the back of the spoon into the dish. It will end up looking like photo 8 above. You just won't see my face in the reflection ๐Ÿ˜‚.

    Place baking dish into the microwave and set the temperature to high heat for 10 minutes. During this time you can whip your cream if you can going to serve it with that.

    A final touch for the pudding is to use oven mitts to remove it from the microwave and pour a splash of Baileys over the top (see the video for reference). Then you can read the tips below or decorate it as you see fit.

    ๐Ÿฝ Baileys Pudding Serving Ideas

    When it comes to serving your freshly cooked Baileys pudding whipped cream is a great choice! Simply add a touch of vanilla and icing sugar to heavy cream and whip till stiff peaks form. You can see how that will look in the photos throughout the post.

    Vanilla ice cream will also work. Raspberries or strawberries add a colourful touch and you can choose your favorite!

    ๐Ÿ‘ How to Guide

    How to Store

    This pudding is best cooked and consumed straight away. The longer it sits the more it absorbs both the sauce and the baileys. If you do have leftover, you can store them in a sealed, airtight container. These need to be refrigerated.

    How to Reheat

    Add leftovers to a bowl and cover with cling wrap. Reheat on high temp in the microwave for 1-2 minutes.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Baking dish: if you don't know the size of your baking dish you can fill it with water and then use a large measuring jug to capture that and see the total amount ie we need a 6 cup capacity (1.5 litres).
    • Grease: we do want to grease the baking dish so that the pudding doesn't stick. I use unsalted butter across the base and up the sides.
    • Cooking: once you have put the pudding into the microwave to cook, set the timer and don't open the door during this time. As long as your baking dish is the right size capacity for the pudding it won't overflow. If unsure the 1st time you make it you can set the timer for 9 minutes and then add an extra minute at the end. But we need to give it a chance to cook and opening the door to take a peak halfway will affect the total cook time.

    Can I freeze this pudding?

    This pudding is best cooked and consumed straight away. It is not suitable to freeze.

    Can I bake this pudding in the oven?

    Yes, you can. It will however, take a lot longer than when it is cooked in the microwave. To cook it in the oven use 180 degrees and bake for 25 to 30 minutes.

    Can I use a different type of alcohol?

    Yes, you can use rum, whisky or a coffee liqueur in place of the Baileys.

    My baking dish won't fit in the microwave?

    Then use the oven and cook the pudding in there.

    Baileys Pudding

    Ingredients

    Chocolate Pudding

    • 1 cup self-raising flour Note 1
    • 2 tablespoons cocoa powder also Note 1
    • ยพ cup caster sugar Note 2
    • ยฝ cup/125ml vegetable oil Note 3
    • ยผ cup/60 ml Bailey's Irish Cream Note 4
    • ยผ cup/60 ml milk
    • 1 teaspoon vanilla extract

    Chocolate Sauce

    • 2 tablespoons cocoa powder
    • ยพ cup brown sugar
    • 1 ยผ cups/310 ml boiling water Note 5

    To serve (optional0:

    • ยผ cup/60 ml Bailey's Irish Cream, whipped cream, raspberries Note 6

    Instructions

    Chocolate Pudding

    • Baking dish: use unsalted butter to grease a 6 cup capacity baking dish then set aside.
    • Pudding: sift the self raising flour and cocoa powder into a large mixing bowl. Add the sugar. Then add the oil, Baileys, milk and vanilla. Use a rubber spatula to stir and combine. Then transfer the pudding batter into the prepared baking dish.

    Chocolate Sauce

    • Sauce: sprinkle the cocoa powder and brown sugar over the top of the wet pudding. Then use the back of a large spoon to gently pour the boiling water over the top.
    • Cook: gently place the baking dish into the microwave. Set the heat to 10 minutes on high.

    Baileys Pour

    • To serve: once the pudding has cooked, use oven mitts to remove it from the microwave and place it onto a heatproof surface. Add whipped cream and drizzle Baileys over the top. Then decorate with raspberries and serve immediately.

    Notes

    • Note 1 - Self-raising flour and cocoa powder: I do sift these 2 ingredients for the pudding batter. Later for the sauce I don't sift the cocoa powder as the water very quickly dissolves it.ย 
    • Note 2 - Caster sugar: you can use regular white sugar if you don't have caster sugar.ย 
    • Note 3 - Vegetable oil: you can use olive oil if you don't have vegetable oil.ย 
    • Note 4 - Bailey's Irish Cream: from my original recipe I take ยฝ of the milk and replace it with the Bailey's. This way we maintain a pudding texture that is rich and thick, on the dense moist side but not too watery. If you want even more Bailey's flavor add it to the sauce (drizzled over) as opposed to adding it to pudding batter.ย 
    • Note 6 - Boiling water: for this I simply boil the kettle and then use a heatproof measuring jug to measure the required amount. I reduce the amount of boiling water used from my original Microwave Chocolate Puddingย  sauce as we add Bailey's to finish this version off.ย 
    • Note 7 - To serve: you will see from the video that I pour ยผ cup Bailey's over the whipped cream as a serving idea. I then add the raspberries. This gets absorbed very quickly so do it right when serving not too long before hand.ย 
    • Note 8 - Portion size: a little of this pudding goes a long way! Portions can be smaller than if you were serving a cake or cheesecake slice. 4 serves or more if smaller.ย
