Baileys Cheesecake Balls are simply to die for! Super fun to make, creative and sure to get 'ohhhs and 'ahhhs' from the eaters, they are the perfect sweet treat or dessert. Moist baileys balls covered in chocolate that simply melt in your mouth, you can't resist!

As you can see, the recipe calls for:
- Bailey's Irish Cream: this is one of the smoothest, creamiest liquors around town. It goes down a treat on ice or mixed in with other ingredients like this to make a super simple dessert.
- Sweet vanilla biscuits: we use 2 packets (400 grams) sweet vanilla biscuits. It doesn't matter how plain, boring and straight your biscuits (cookies) are as the cream cheese and Bailey's lift these for the ultra yum experience.
- Cream cheese: you can use either a block or a spreadable tub of cream cheese. This is the ingredient used to 'stick' all of the other ingredients together.
- White chocolate: you can use chocolate melts, chocolate chips or a chocolate block to the equivalent measurement. I am using chocolate melts.
- Milk chocolate: we need slightly less of this than the white chocolate. it is for the drizzle you see on top of the balls.
I purchased my Bailey's from the local bottle shop and the rest of the ingredients at the local supermarket. Another thing I love about a recipe like this is that you can be organised and get all of the ingredients in advance and then bring them together when ready.
Tasty Tip: None of the ingredients are quick to expire, (other than when using the Bailey's for a night cap if tempted!), so you can get yourself ready for Christmas without the stress of last minute shopping!
These are the step by step instructions to make the recipe. We start by lining a baking tray and then blitzing our biscuits in the food processer.
- Add vanilla biscuits to food process (Photo 1)
- Blitz for 15 - 20 seconds to form a fine crumb (Photo 2)
- Add chopped cream cheese (Photo 3)
- Add Bailey's Irish Cream (Photo 4)
👩🍳 How to Make Bailey's Cheesecake Balls
To make the cheesecake balls, start by adding the vanilla biscuits to the bowl of a food processor and blitz to a fine crumb. Then add the cream cheese and Bailey's.
- Blitz till the mix comes together (Photo 5)
- Transfer wet mix to bowl (Photo 6)
- Portion biscuit mix out onto tray (photo 7)
- Roll into balls (photo 8)
When you are blitzing the Baileys cream cheese biscuit mix, you will get to the point where it comes together in one dough type ball.
This is the point we want to get to where the wet ingredients are consistently and thoroughly combined with the dry ingredients. This happens after blitzing for about 25 seconds.
After you have transferred the wet mix to a mixing bowl, use a mini cookie scoop (or teaspoons) and portion the mixture out.
I find it easiest to portion all the mix out and then roll into balls.
Don't use wet hands otherwise you will have a wet mushy poop type mix in your hands that you are rolling and that isn't fun!

- Working one by one, coat each ball in white chocolate (photo 12)
- Place on baking tray as you coat each ball (photo 13)
- Place the tray into the fridge to allow the chocolate to set (photo 14)
I find the easiest way to coat the Baileys balls in chocolate is to sit them on a fork, dip that into the melted chocolate, lift it up and allow the extra chocolate to drip off ('shake it off!').
If you have too much chocolate on your balls (hee hee) then you can simply break this off when the chocolate is set (it is super easy).
I use a skewer to push the ball off the fork onto the baking tray which is hard to show you as I would have needed 3 hands for the photo and I only had 2 at the time.
But you can either roll or push the coated balls off the fork and repeat till each of them are covered.
🦄 No Bake Baileys Balls Decoration
To decorate, we melt the milk chocolate and drizzle it all over the balls. This is seen in the photo below:
Drizzling the balls with chocolate is one way of decorating them.
There is no limit to the decorating you can do and if you want to switch it up a little, go for it!
Another idea you will see in my White Chocolate Oreo Balls is that I sometimes top the ball with chocolate but not fully cover it in chocolate.
It depends on your mood on the day!
A handy tip to keep in mind when decorating the balls is that you can use a fork, squeezy bottle or zip lock bag to drizzle the chocolate.
I find a fork works well but I get 'neater' results when I use the zip lock bag technique. This involves transferring the melted chocolate into the bag (sealing it), cutting a small nick in one corner and then having all the fun in the world!
Once you are done, you can simply store the balls in a sealed (with willpower) air tight container in the fridge till ready to use!
😘 Substitutions and Variations
Here are my sub in and outs that you might like to try when making the recipe:
- Use you change the chocolate so that the milk chocolate is on the outside and the balls drizzled with white chocolate.
- You can use dark chocolate in place of either the white or milk chocolate.
- Sprinkle some crushed nuts over the outside of the balls after coating in the 1st layer of chocolate.
🛎 Tasty Tips
- I recommend the use of a mini cookie scoop to make these. It helps to ensure that all of the balls are a consistent size and when you next make the recipe you know how many balls you will end up with.
- Melt the white chocolate 1st, on its own and then later melt the milk chocolate. This gives you more time to pace out the steps of coating and decorating the balls.
- When you decorate the balls by drizzling the melted milk chocolate over them, the technique is to consider that you are coating the paper not the individual balls. I always have this mindset when doing this as I find the results much better. If you focus too much on decorating each individual ball, then your chocolate will be in wiggled lines as your back and forth motion with your hand too short to create the long lined of drizzle. - When setting up your frozen balls, melted white chocolate and lined baking tray, have them close together. This helps so that you can work quickly and dunk, coat and repeat till they are all done.
- You will need to either drop the balls off the fork or push them off. I recommend pushing them off. To achieve this, I have the ball on the fork in my left hand (I am left handed), then I use a skewer in my right hand and push it off.
- If you have any excess chocolate on the balls of the balls (it happens), wait till the chocolate is set and then you can either break or chop this off.
- Store the balls in a sealed air tight container in the fridge for up to one week.

Baileys Cheesecake Balls
- 1 Baking tray
- 1 Baking paper/Parchment paper
- 1 Food processor
- 1 Large mixing bowl
- 1 Mini Cookie Scoop
- 1 Large heatproof jug
- 1 Fork
- 1 Wooden skewers
- 1 Zip lock bag
- 400g sweet vanilla biscuits/cookies Note 1
- 250g cream cheese roughly chopped, Note 2
- ½ cup/120 ml Baileys Irish Cream
- 2 cups white chocolate Note 3
- 1 cup milk chocolate
- Baking tray: line a baking tray with parchment/baking paper and set aside.
- Blitz biscuits: add biscuits to the bowl of the food processor and blitz for 15 - 20 seconds until they are a fine crumb.
- Combined mixture: add roughly chopped cream cheese pieces and Baileys. Blitz for 20-25 seconds till mix comes together to form a wet dough
- Portion: use a mini cookie scoop to portion out the mix into 30 pieces
- Roll and freeze: use dry hands to roll the portions into smooth round balls, place in the freezer for 10 mins.
- Melt chocolate: add white chocolate to heatproof jug, microwave for 1 min, stir, then microwave again in 30 second periods, till melted (2 x 30, stirring in between).
- Coat in chocolate: remove cheesecake balls from the freezer and bring together on the bench with the melted white chocolate. Working quickly, use a fork in one hand with cheesecake ball on it and dunk them in the chocolate, using a skewer in the other hand, transfer to lined baking tray. Repeat to coat all Baileys Cheesecake Balls in white chocolate, place in fridge for 5 mins
- Melt decorating chocolate: add milk chocolate to heatproof microwave jug. Microwave for 1 min, then 2 x 30 second periods, stirring in between.
- Decorate: remove Baileys Cheesecake Balls from the fridge. Transfer melted chocolate to a zip lock bag, seal and snip the end off. Using a wide diagonal right to left movement, drizzle each cheesecake ball with milk chocolate. Place in fridge to set.
- Serve and enjoy: store in an air tight container in the fridge for up to 1 week.
- Note 1: Vanilla biscuits: I use 2 x 200 gram packets of plain vanilla biscuits (no sugar on top). You can use shortbread biscuits to the equivalent also if you wish.
- Note 2 - Cream cheese: You can use either a block of cream cheese or a spreadable tub of the equivalent measurement. I interchange them at times and find no great difference in the results.
- Note 3 - White chocolate: We use the white chocolate as the main coating to the Baileys Cheesecake Balls.
- Note 4 - Milk chocolate: We use the milk chocolate to decorate as we drizzle it over the white chocolate coating on the balls.
