Marshmallows and chocolate is a winning combination, the kids can help with the adventure!

🥗 Ingredients
Everything you need to make the recipe is shown in the photo below. Please refer to the printable recipe card for exact measurements.
As you can see, the recipe calls for:
- Marshmallows: I recommend using mini marshmallows. They are cute and fun and will be found in the cooking aisle with the sprinkles and food colouring.
- Milk Chocolate: when working with chocolate, my preference is to use chocolate melts. You can however, use a block, bits or chocolate chips.
Tasty Tip: I use 2 x 4cm (1.5 in) silicon 15 individual dome moulds. You don't have to use the exact same version as me, however, the ingredient quantities match the chocolate moulds of this size.
🍳 Instructions
Here are the step by step instructions to make the recipe. I am showing you how to use 2 different techniques so you will have 2 different looking chocolates with the same ingredients.
- Add marshmallows to 1 chocolate mould (Photo 1)
- Microwave the milk chocolate to melt (Photo 2)
- Pour the melted chocolate over the marshmallows (Photo 3)
- Technique 2 - add the remaining marshmallows to melted chocolate (Photo 4)
👩🍳 How to Make Marshmallow Chocolates
To make the chocolates start by adding the mini marshmallows to the chocolate mold. Each mold will take 3 to 4 mini marshmallows. The next step is to add the cooking chocolate to a heatproof microwave safe jug and then to melt it. It will take a total of 3 minutes and the best way to do this is in 1 minute increments, stirring in between.
Tasty tip: the handle of the microwave safe jug will be hot. Use an oven mit to remove it in between heating times. I also find a chopstick super handy to stir the chocolate as it is melting (once removed from the microwave) 😊.
- Technique 2 - add remaining marshmallows to chocolate and stir to combine (Photo 5).
To make the chocolates using the 2nd technique we add the remaining marshmallows to the melted chocolate. This is similar to the technique used when making rocky road. Simply stir to combine and then use 2 teaspoons to spoon the combined marshmallow mixture into the 2nd chocolate mold.
- Spoon the wet marshmallow mixture into the 2nd chocolate mold.
🍽 Serving Suggestions
To serve the chocolates, you simply need to push them out of the mould and break off any excess chocolate bits. Use can use a knife for this process if you like. The excess chocolate is the bit that sits on the perimeter of the individual dome which will form a tail to the half round shape of the individual chocolates.
They will pop out easily and it will only take 2 minutes to remove all of the chocolates from the moulds.
If you want to use both techniques, like I have done, it will mean that you get a diverse range of chocolates for presentation.
Some will look like the photo above and some will have their marshmallows more 'hidden' to be revealed by the 1st bite. These ones using the 2nd technique will look more like rocky road. Personally as it really doesn't involve much effort to do the 2 techniques across the one recipe, I like and enjoy doing this. You are best using 2 chocolate moulds in this case 1 for each technique. Marshmallow chocolate anyone? 🥰.

Store the chocolates in a sealed, air tight container. They will last for at least 2 weeks.
😉 Substitutions and Variations
Here are my sub ins and outs that you can consider as you make the recipe.
- You can use chopped regular sized marshmallows in place of the mini marshmallows if you wish.
- If you only want to make chocolate covered marshmallows, then use technique 2 where the marshmallows are 'hidden' or covered in chocolate.
- Try adding some coconut to the recipe as an additional filling for the chocolates.
- You can use mini coloured marshmallows in a variety of colours, if you like rather than the simple pink and white combination I am using. (Some stores sell pastel colours with multi colours).
- Whilst I am using milk chocolate, you could use dark chocolate or white chocolate as alternatives.
- For something completely different use caramilk chocolate if you want to try it.
🛎 Tasty Tips
These are my top tips and tricks I want to share with you so that you can get the recipe spot on from the get go!
- Try and use a chocolate mould with the same dimensions as the ones I am using (4cm which is approximately 1.5 inches).
- There is no need to spray or grease the chocolate moulds if using silicon ones.
- The chocolates will be able to be easily popped out (push from the dome side) once they are set.
- Use a knife and chopping board if you wish to trim any excess tail bits of set chocolate from the dome shape.

What are marshmallows made of?
The packet for the mini marshmallows lists their ingredients as containing: sugar, glucose syrup, water, dextrose, gelatin, corn starch, natural flavour (vanilla) and natural colouring.
What does marshmallow taste like?
Marshmallows taste sweet and have a soft chewy texture.
Do Aldi sell mini marshmallows?
Some Aldi's (especially in the United States of America) do sell mini marshmallows. In Australia, Aldi may sell them with their special buys at Christmas time. Woolworths and Coles in Australia sell mini marshmallows as a regular in stock everyday ingredient in the baking (cooking) aisle, ie where the sprinkles and cake mixes are.
How many marshmallows are in a bag of mini marshmallows?
There are approximately 200 individual mini marshmallows or 2 cups of mini marshmallows in a 100 gram packet. This is around 3.5 oz.

Marshmallow Chocolates
Equipment
- 2 Silicon chocolate molds measuring 4cm or 1.5 inches, 15 domes per mold
- 1 Heatproof jug to melt the chocolate
- 1 Oven Mit the handle of the heatproof jug gets hot
- 1 Chopstick handy to stir the melted chocolate
- 2 Teaspoons to spoon the filling into the moulds
- 1 Chopping board to support the mold when placing in the fridge
Ingredients
- 300 grams/ 11 oz milk chocolate Note 1
- 2 cups mini marshmallows Note 2
Instructions
Technique 1
- Marshmallows into mould: place 3 - 4 mini marshmallows into each individual chocolate dome.
- Chocolate: add the chocolate to a heatproof microwave safe jug. Microwave for 1 minute, then remove and stir (handle will be hot). Microwave for an additional minute, remove and stir, then microwave for 1 more minute (total time: 3 minutes).
- Melted chocolate: working one dome at a time, pour the melted chocolate into the mould till it reaches the surface. Don't worry if a little excess flows out onto the flat part of the mould. You can cut this off once the chocolates are set.
- Set: carefully pick up the filled chocolate mould with 1 hand either side and place into the fridge (either open it 1st or get someone to open it for you) for a minimum of 1 hour. Note 3
- Serve and enjoy: once the chocolates are set, remove from the fridge, place mould on chopping board and push from the back to pop the chocolates out. Repeat for remaining chocolates.
Technique 2
- Fillings: add the remaining mini marshmallows to the melted chocolate and stir to mix in together.
- Moulds: use 2 teaspoons to spoon the combined wet rocky road mixture into the chocolate mould. Repeat to fill each dome.
- Set: carefully pick up the filled chocolate mould with 1 hand either side and place into the fridge (either open it 1st or get someone to open it for you) for a minimum of 1 hour. Note 3
- Serve and enjoy: once the chocolates are set, remove from the fridge, place mould on chopping board and push from the back to pop the chocolates out. Repeat for remaining chocolates.
Notes
- Note 1 - Chocolate: You can use chocolate melts, chocolate bits or a block of cooking chocolate broken into pieces. Ensure you measure it using kitchen scales or purchase exact quantity ie 300 grams which is approximately 11 ounces.
- Note 2 - Mini Marshmallows: these will be found in the cooking aisle as opposed to the sweets aisle. They come in a 100 gram packet and you can get pink and white or pastel colours. I like using approximately 3 mini marshmallows per individual chocolate and this is about 90 all together which is around 1 cup. You don't have to count them, approximate is totally fine!
- Note 3 - Mould info fridge: the silicon mould is flexible and curvy. If you place it onto a chopping board for support, you can then hold this in one hand and use your other hand to open the fridge. Otherwise you have 1 hand at each end of the mould and no hands to open the fridge. You can open it before putting the mould into the fridge or ask someone in the house to open it for you also.
- Note - Melting the chocolate: some recipes that talk about melting chocolate, will say microwave the chocolate in 30 second increments. However, I have tried this and let me tell you nothing happens after 30 seconds!!! So I microwave for 1 minute, remove (use an oven mit as the handle is hot) and stir, microwave for 1 minute, remove and stir, then return to the microwave for 1 final minute and stir after that time. It works perfectly!
