    Baileys Cheesecake Brownies are fudgy melt in your mouth delicious. Made by layering a Baileys infused cheesecake topping onto a chocolate brownie base and swirling to combine. This easy recipe tastes like a creamy cheesecake and chocolate brownie all at the same time! It is the perfect dessert.

    • Bailey's Irish Cream: this beautiful Irish cream liqueur is rich, creamy and unique in flavor. Drinking it is nice, cooking with it is even better!

    The photo below is to show you everything you need to make the Baileys cheesecake chocolate brownies recipe. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.

    The photo above shows you what you need for the brownie layer. These are:

    • Vanilla.
    • Salt: if you are using salted butter, then you can omit this.
    • Eggs: free range of course!
    • Butter: see point 2 above re salt. I prefer using unsalted butter and then adding salt.
    • Dark chocolate chips.
    • Baileys.
    • White sugar: there is 4 primary dry ingredients for the recipe which are the sugar, flour, cocoa powder and salt.
    • Cocoa powder.
    • Plain flour.

    ๐Ÿ˜‰ Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Chocolate: you can use milk chocolate chips in place of the dark chocolate chips if you want to. You will get slightly less of a dark chocolate brownie flavor but in most cases this is not that noticeable.
    • Vanilla: I use the vanilla extract in both layers. If you only want to use it in one layer, I would use it in the chocolate brownie layer for the balance of flavors.
    • Cheesecake layer: omit the Baileys for a simple cheesecake layer or use your favorite fruit puree and swirl that through the topping for something different.

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Baileys Cheesecake Brownies

    To make the brownies we start by lining a square baking tin with 2 overlapping sheets of baking paper.

    ๐Ÿณ Instructions

    • Line the baking dish (Photo 1)
    • Add cheesecake ingredients to small bowl (Photo 2)
    • Add butter and chocolate (Photo 3)
    • Add sugar and salt to large bowl (Photo 4)

    Next start by preparing the cheesecake layer. To do this add the cream cheese, Bailey's, egg, vanilla and sugar to a medium bowl like shown in the 2nd photo above and then set aside.

    Now start the brownie layer. This is done in a separate bowl. To do this add the dark chocolate chips and butter to a heatproof jug and then melt in the microwave (high heat) using 30 second increments for approximately 1 ยฝ minutes.

    Add the sugar and salt to a large mixing bowl then remove the melted butter and chocolate mix from the microwave. Stir gently then pour the combined melted chocolate and butter over the top of the sugar.

    • Pour the chocolate over the sugar (Photo 5)
    • Add the Bailey's and vanilla (Photo 6)
    • Add the eggs (Photo 7)
    • Stir to combine (Photo 8)

    ๐Ÿซ Bailey's Cheesecake Chocolate Brownies

    Next add both the Bailey's and vanilla to the bowl, followed by the eggs and then stir to combine.

    Once combined add both the flour and cocoa powder like you see in the photos below and again stir till consistently combined.

    Once the chocolate brownie layer has been combined like this you can transfer it into the prepared pan and smooth with a rubber spatula till it is in a reasonably flat layer.

    • Add flour and cocoa powder (Photo 9)
    • Stir to combine (Photo 10)
    • Separately whisk together the cheesecake batter (Photo 11)
    • You will have 2 separate layers (Photo 12)

    Next return to the cream cheese mixture and use a whisk or electric beaters to combine till smooth with very few lumps.

    • Spread brownie layer into pan (Photo 13)
    • Top with cheesecake mixture (Photo 14)
    • Swirl (Photo 15)
    • Bake, cool, portion (Photo 16)

    Spread the cheesecake layer over the top of the brownie batter (see photos and video for reference) then use a skewer and swirl to combine the 2 layers.

    Place the baking dish into the oven and let the brownies cook for 30 minutes.

    Once the cook time is up, (a toothpick inserted will have only a few crumbs not wet batter) use oven mitts to remove the baking dish, set it on a heatproof surface and let the brownies cool.

    When they are cool, grab the baking paper overhang, lift it up and out of the pan and then remove and discard.

    Slice the brownies into 16 equal pieces.

    ๐Ÿฝ Serving Suggestions

    When it comes time to serve your Baileys Cheesecake Brownies, it seems like grabbing a piece and taking a bite is the natural way people will like to consume them.

    If you want to go all out you can whip some cream, add some fresh fruits like strawberries or raspberries or a dollop of ice-cream on the side.

    How to Store

    Once you have cooled and portioned the brownies you can store them in the fridge in a sealed, airtight container. They will last 4-5 days.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Baking tin: I spray a little olive oil into the base and up the sides of the tin as this helps the 1st layer of parchment paper to stick.
    • Cream cheese: grab this out of the fridge as a starting point so that it has a chance to soften. Also cut it into smaller pieces (optional but handy) so that it is easier to work with.
    • Electric beaters: if you don't want to use electric beaters or a hand held mixer for this recipe you don't have to. The trick in achieving this is to start with your cheesecake layer and pour the liquids over the cream cheese, set it aside and let it soften. You will have to use a little elbow grease to whisk/stir the mixture vigorously so that there is minimal lumps but it will work and I have tried this method when I was too lazy ๐Ÿ˜‰ to get out the beaters/whisk.
    • Two layers: you will see in the process shots that I show you one image where the 2 layers are next to each other in separate bowls. This is so that you get the concept and understand the process. However, I do recommend after making the chocolate brownie layer that you put it straight into the base of the baking dish. It is not essential but if you don't it starts to thicken and will be a less pliable to spread across the base of the baking dish.
    • Cheesecake swirl: the cheesecake swirl can be as mixed in or delicately done as you would like. Try not to pierce the baking paper on the base with the skewer and literally swirl to the bottom then top to get chocolate up into the cheesecake layer.
    • Cool: an important step in the recipe is to allow the brownies to cool once cooked. We want them to be cold when we cut them for a nice clean cut with straight edges.

    Can I freeze these brownies?

    It is not recommended to freeze these brownies. Reason being that Bailey's should not be frozen as the liquor can seperate.

    Baileys Cheesecake Brownies

    Baileys Cheesecake Brownies are fudgy melt in your mouth delicious. Made by layering a Baileys infused cheesecake topping onto a chocolate brownie base and swirling to combine. This easy recipe is one that will tick the dessert, chocolate craving or sweet treat all at once!

    Ingredients

    Cheesecake Layer

    • 250 grams/8 oz cream cheese Note 1
    • ยผ cup/60 ml Baileys Irish Cream Note 2
    • 1 large egg free range
    • ยผ cup caster sugar Note 3
    • 1 teaspoon vanilla

    Brownie Layer

    • 1 ยฝ cups dark chocolate chips Note 4
    • 125 grams/1 stick butter unsalted
    • 1 cup white sugar
    • ยผ teaspoon salt
    • ยผ cup/60 ml Bailey's Irish Cream
    • 3 large eggs free range
    • 1 teaspoon vanilla
    • 1 cup plain flour
    • ยผ cup cocoa powder

    Instructions

    • Preheat oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
    • Baking tin: line a square 23cm (or 9 inch) baking dish with 2 sheets over overlapping baking paper with 2 inch over hang on either side. Note 7
    • Cheesecake layer: add the cream cheese, Bailey's, egg, vanilla and sugar to a small bowl and then set aside.
    • Brownie layer: add the dark chocolate chips and butter to a heatproof jug. Microwave on high in 30 second increments (approx 1 ยฝ minutes) until melted. Remove and stir. Add sugar and salt to a large mixing bowl and then pour the combined melted butter and chocolate over the sugar. Next add the Bailey's, eggs and vanilla. Stir to combine and then add the flour and cocoa powder. Consistently combine. Once combined use a rubber spatula to transfer the brownie batter into the prepared baking tin and spread it out into one reasonably level layer.
    • Baileys' Cheesecake layer: now return to the cheesecake layer and use an electric whisk or beaters to combine this. Smooth the lumps out as it comes together. Once combined pour this over the top of the chocolate brownie layer. Spread this out across the top with the spatula so that you have the cheesecake layer covering the brownie layer.
    • Swirl: now use a skewer and swirl it to integrate the 2 layers.
    • Oven bake: place the baking dish into the oven on the middle shelf and bake the brownies for 30 minutes. Once the cook time is up, use oven mitts to remove the baking dish and set it on a heatproof surface. Allow the brownies to cool and when no longer warm to the touch under the base of the pan, remove and slice into even pieces.

    Notes

    • Note 1 - Cream cheese: whilst this doesn't have to be a room temperature it is easier to beat if it has softened slightly. So grab it out of the fridge as a starting point, remove the packaging and chop it into small pieces. Then let it sit whilst you get the rest of the ingredients together.ย 
    • Note 2 - Baileys: you can use less if you want to. I haven't tested the recipe using more than the specified amount. That could throw the ratio of wet to dry ingredients out, so think twice before adding more.ย 
    • Note 3 - Caster sugar: or regular white sugar will work too.ย 
    • Note 4 - Dark chocolate chips: I use 1 x 250 gram bag of dark chocolate chips. You can use milk chocolate chips is you wish to. I have made this recipe in the development phase with less chocolate and found the batter to be too 'cake like'. So please do stick to the specified amount as the results are far better than using less chocolate. Also I recommend only using cooking chocolate, not eating chocolate.
    • Note 5 - Butter: In Australia a standard block of butter is 250 grams. We want to use half of this. In the USA a standard stick of butter is just under this amount at 113 grams. In which case you can use 1 stick plus a tablespoon to get to the same amount.ย 
    • Note 6 - Baking tin: I spray a little olive oil into the base and sides of the tin to stick the 1st layer in place. This helps so that it doesn't move around too much when you are adding the wet batter.ย
