    Caramel Cheesecake Brownies are simply amazing! Made by creating a chocolate brownie base which is baked then topped with a cheesecake layer, dolloped with caramel and swirled to combine. Deliciously indulgent this is a luxurious recipe that satisfies the chocolate craving as well as getting a homemade fix on. Bake without a care for the minute on the lips, lifetime on the hips risk ๐Ÿ˜‚.

    ๐Ÿค Caramel Cheesecake Brownies Recipe

    ๐Ÿฅ— Ingredients

    The photo below is to show you everything you need to make this deliciously fudgy recipe. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.

    For the chocolate brownie layer you will need:

    • Vanilla.
    • Salt.
    • Eggs: free range.
    • Butter: we want to use unsalted butter as we add salt as a separate ingredient.
    • Chocolate: I love using dark chocolate chips for the recipe as it gives the brownie layer a very dark fudgy colour.
    • White sugar.
    • Cocoa powder.
    • Plain flour.

    For the caramel cheesecake layer, you will need:

    • Eggs.
    • White sugar.
    • Cream cheese.
    • Caramel: I find the best caramel to use is homemade caramel sauce. I do this the day before in the slow cooker (recipe: Dulce de Leche). If you don't have time then the best option is a can of caramel top and fill.

    ๐Ÿ˜‰ Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Chocolate: you can use milk chocolate chips in place of the dark chocolate chips if you wish to. This will mean the brownie layer is slightly less dark, but otherwise it is a very same, same ingredient.
    • Fruit toppings: I also also experimented with this recipe by adding fruit like strawberries or raspberries to the topping. It is a fun idea that works if you wish to try it too!

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Caramel Cheesecake Brownies

    To make the brownies we start by lining a 23 cm or 9 inch baking dish with 2 layers of overlapping baking paper. See photo 1 below for reference.

    • Prepare the slice tin (Photo 1)
    • Add cheesecake layer ingredients (Photo 2)
    • Combine chocolate and butter (Photo 3)
    • Add sugar and salt to large mixing bowl (Photo 4)

    ๐Ÿณ Instructions

    We make the layers for the cheesecake topping and brownie base in separate bowls. Start by adding the cream cheese, eggs, vanilla and sugar to one bowl then set this aside (so it softens) whilst you make the brownie base.

    To do this add the dark chocolate chips and unsalted butter to a heatproof jug. Then use the microwave (high heat) to melt in 30 second increments, stirring in between. This will need approx 1 ยฝ minutes to full melt. Once it has, remove it from the microwave and gently stir it to consistently combine.

    Next add the sugar and salt to a large bowl like you see in the photos above.

    • Chocolate and butter into sugar and salt (Photo 5)
    • Stir to combine (Photo 6)
    • Add eggs and vanilla (Photo 7)
    • Stir to combine (Photo 8)

    Next pour the melted chocolate and butter into the sugar and salt. Then use a rubber spatula to stir and combine.

    Once done add the eggs and vanilla then stir again to combine.

    Step by step instructions 9 to 12
    • Add the flour and cocoa powder (Photo 9)
    • Stir to combine (Photo 10)
    • Transfer to baking tin (Photo 11)
    • Whisk the cheesecake layer (Photo 12)

    ๐Ÿซ Brownies With Caramel Cheesecake Topping

    Next add both the plain flour and cocoa powder to the mixing bowl and stir to combine.

    Then transfer the wet brownie batter into the prepared slice tin like you see in the photos above. This then gets put into the oven (middle shelf, uncovered) and bakes for 20-25 minutes whilst you return to the cream cheese mixture.

    Use electric beaters to whisk together the ingredients for the cheesecake topping. It will be thick, fluffy and smooth with no lumps.

    Step by step instructions 13 to 16
    • Whisk the caramel (Photo 13)
    • Remove baked brownie from oven (Photo 14)
    • Add the cheesecake layer (Photo 15)
    • Add the caramel (Photo 16)

    Next we whisk together the caramel so that it is smooth and dollop-able.

    Now we use oven mitts to remove the slice tin from the oven and set it on a heatproof surface.

    Then pour the cheesecake layer over the top and use the spatula to spread it out in one even layer.

    Once done use a teaspoon to dollop the caramel onto the top of the cheesecake filling like you see in the photos above.

    Once you have added the spoonfuls of caramel to the cheesecake layer use a chopstick or skewer and swirl to combine. It will end up looking like the photo above at this point.

    ๐Ÿฝ Serving Suggestions

    Plain or warmed with a scoop of whipped cream or ice cream, you do you when it comes to serving the brownies.

    Almost anything you do with them will be delicious so don't stress too much about making things complex.

    How to Store

    Store the brownies in the fridge in a sealed air tight container. They will last 4-5 days.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Technique: you will find it easiest to use a separate bowl for 1) the brownie base, 2) the cheesecake layer 3) the caramel. These can be large, then medium then small.
    • Method: if you don't have a hand mixer you can still make this recipe. I have done that simply using elbow grease and vigorously whisking together each layer. The main thing with doing this is that you need to get the lumps out of the cheesecake mixture. The caramel will be thick, but stir/whisk it and it will start to soften also.
    • Parchment paper: we use the parchment paper to help lift the brownies up and out of the pan once cooled. For this reason we want to have an overhang on each side. That way we can use this to 'pull up and out' of the slice tin.
    • Layers: you don't need to wait for the brownie layer to cool before adding the cheesecake layer. But do use oven mitts as the slice tin will be hot!
    • Baking time: for the brownie layer to cook we need about 20-25 minutes. So use this time to make the cheesecake layer as well as whisking the caramel then you will be ready once the base is cooked to add the top layer.
    • Cool: it is important to let the brownies cool before you remove them from the tin or slice them. To speed this process up you can put them into the fridge.

    Can I use any caramel sauce for this recipe?

    No, you are best off using a can of caramel top and fill or making your own caramel from sweetened condensed milk.

    Can I add salt to these caramel cheesecake brownies?

    Yes, if you are after a 'salted caramel cheesecake brownies' type flavor you can sprinkle sea salt over the top of the caramel cheesecake layer before putting the brownies into the oven.

    Can I make brownies with plain flour?

    Yes, you can use plain flour to make brownies. Doing so creates a dense fudgy brownie base as there is no rising agent in the flour or recipe. This also avoids the texture being too cake like.

    Caramel Cheesecake Brownies

    Ingredients

    Caramel Cheesecake Layer

    • 500 grams/16 oz cream cheese Note 1
    • 2 large eggs free range
    • 2 teaspoons vanilla extract
    • ยผ cup caster sugar
    • 400 grams caramel sauce Note 2

    Chocolate Brownie Layer

    • 1 ยฝ cups/250 grams dark chocolate chips Note 3
    • 125 grams/1 stick butter unsalted
    • 1 cup white sugar Note 4
    • ยฝ teaspoon salt
    • 3 large eggs free range
    • 1 teaspoon vanilla extract
    • 1 cup plain flour
    • ยผ cup cocoa powder

    Instructions

    • Preheat oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
    • Slice tin:ย line a square 23cm (or 9 inch) slice tin with 2 sheets of overlapping baking paper and 2 inch over hang on either side.ย Note 7
    • Caramel cheesecake layer: add the cream cheese, eggs, vanilla and sugar to a medium sized mixing bowl. Then set aside.
    • Brownie layer: add the sugar and salt to a large mixing bowl. Then add the dark chocolate chips and butter to a heatproof jug. Microwave (high heat) the chocolate and butter in 30 second increments (for 1 ยฝ minutes) and then remove and stir gently. Pour this into the sugar and salt then stir to combine.
    • Oven bake: use a rubber spatula to spread the wet brownie batter over the base of the prepared slice tin. Then place this uncovered into the oven (middle shelf) and let it bake for 20-25 minutes.
    • Caramel cheesecake layer: return to the bowl with the cheesecake ingredients and use electric beaters to beat till smooth and lump free.
    • Combine: use oven mitts to remove the slice tin from the oven and set it on a heatproof surface. Pour the cheesecake layer over the top and use the spatula to spread the cheesecake mixture across the top in one smooth layer.
    • Caramel: rinse the beaters, dry them and then in a separate bowl use them to whisk the caramel until it is a thick, smooth sauce. Then use a teaspoon to dollop this onto the cheesecake layer. Once done use a chopstick or skewer to swirl so that the layers are mixed together.
    • Oven bake: using the oven mitts gently tap the slice tin on the bench top to remove air bubbles then place the brownies back into the oven. Let them cook for a further 20-25 minutes. Once cooked they will puff up around the center and pull away from the edges of the slice tin. A skewer inserted will have only a few crumbs no wet smear on it.
    • Cool: let the cooked brownies cool in the tin for at least 1 hour (can be in the fridge). Once they have use the baking paper overhang to lift them up and out of the pan. Discard the paper and then slice the brownies into 16 evenly sized portions.

    Notes

    • Note 1 - Cream cheese: this doesn't have to be room temperature but it does help if it has softened a little. This is why I add the ingredients for this layer to a separate bowl to the brownie layer 1st then set it aside. I find that the eggs and vanilla plus the time in the bowl allows it to soften so when I come to beat it, it is still cold, but a little softer.ย 
    • Note 2 - Caramel: I find the best caramel to use is homemade caramel sauce. I do this the day before in the slow cooker (recipe: Dulce de Leche, 7 hours on low. If you don't have time then the best option is a can of caramel top and fill. This 1 tin is 397 grams which is about 1 cup of thick caramel.ย 
    • Note 3 - Chocolate chips:ย you can use milk chocolate chip in place of the dark chocolate chips if you wish to. This will mean the brownie layer is slightly less dark, but otherwise it is a very same, same ingredient.
    • Note 4 - White sugar: not icing sugar, this is regular white sugar. We use caster sugar for the topping and white sugar for the brownie layer.ย
