    Birthday Cake Blondies are colorful and fun with a chewy texture. Quick and easy to make they are a one bowl delight that come together with minimal effort. If you need a dessert, sweet treat or simply want to get your bake on they offer homemade deliciousness with every single bite!

    • Minimal effort: we don't have to whip cream, we don't have to wait for chocolate to melt and we don't have to pipe anything. These birthday cake blondies are perfect for all skill levels in the kitchen and are very straight forward and easy from start to finish.

    As you can see these birthday blondies call for:

    • Vanilla.
    • Eggs.
    • Butter: unsalted butter is best to use. This is because the nuts will bring a salty flavor to the blondies and we don't want to make them 'too salty'.
    • White sugar.
    • Brown sugar.
    • Sprinkles: rainbow sprinkles with every color under the sun!
    • Chocolate chips.
    • Scorched peanut bites.
    • Plain flour: no need to sift.

    ๐Ÿ˜‰ Substitutions

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Chocolate: I like to use white chocolate chips for this recipe and they give a nice contrast to the milk chocolate on the peanuts. You can do the same or use milk chocolate, dark chocolate or a combination of chocolate chips.
    • Scorched peanut bites: can switch out for a bag of Reese's peanut butter cups. When I have tried a version with these, I don't chop them, I simply open the bag and thrown them in (unwrapped version).
    • Sugar: the recipe will work if you use only either white sugar or brown sugar. If using only brown sugar the blondies will be less crispy on the edges and have a much softer texture. If using only white sugar the blondies won't have that browned butter flavor but they will still tick a lot of boxes.
    • Other mix ins: want even ore birthday blondies fun? Push some chopped pieces of golden oreos into the top of the batter, scatter some birthday sprinkles across the top or use almond extract in place of the vanilla for a different flavor profile.

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Birthday Cake Blondies

    Here are the step by step instructions to make the blondies. We start by lining a large square baking dish with baking baking.

    ๐Ÿณ The Basic Instructions

    • Line the baking dish (Photo 1)
    • Chop the scorched peanuts (Photo 2)
    • Add sugar to a large bowl (Photo 3)
    • Pour in the melted butter (Photo 4)

    Line the baking dish with 2 sheets of overlapping parchment paper. Then set this aside whilst using a knife and chopping board to roughly chop the scorched peanut bites.

    Next we begin to add everything to a large mixing bowl. You can start with the brown sugar, then the white sugar. Once done add the butter to a microwave safe bowl and melt it using high temperature.

    When the butter has melted pour it over the sugar like you see in the photos above.

    • Combine the butter and sugars (Photo 5)
    • Add the eggs and vanilla (Photo 6)
    • Combine (Photo 7)
    • Add the flour and combine (Photo 8)

    Next add the eggs and vanilla then stir to combine. From there add the plain flour to the wet ingredients and again stir until consistently mixed in.

    • Transfer to a baking dish (Photo 11)
    • Spread across the dish (Photo 12)

    Now add the white chocolate chips, sprinkles and chopped scorched peanut bites. Then stir to gently fold these in.

    Once done transfer the combined mixture into the prepared baking dish and then spread the raw batter across the base like you see in the photos above.

    We bake the blondies for 35 minutes then use oven mitts to remove them and place them onto a heatproof surface.

    Now we let them cool in the pan (important).

    Then remove them to a wire rack and let them cool a little further.

    Once the blondies have cooled you can then use a knife to slice them into individual portions.

    This is where the square baking dish will come in handy as you can make the large square 4 smaller squares and then those squares 4 smaller squares and you will end up with 16 even pieces ๐Ÿ˜‰๐Ÿ‘Œ.

    ๐Ÿฝ Serving Suggestions

    When it comes to serving your blondies I like to think of it as each to their own. Some people will want a scoop or 2 of ice-cream on top, some will want to eat hot, some will want cold and some will want as is.

    You my friend, can do you. There is not a lot that can go wrong once these have baked and cooled.

    After slicing the blondies, stack them in a sealed, airtight container and place them in the fridge. They will last 3-4 days.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Baking dish: the baking dish I use for the recipe is 24 cm or 9.4 inches. Yours doesn't have to be square, you can use a rectangular one. I like the square shape as it makes cutting the blondies into even pieces very easy. But either way, the recipe will still work. We don't want to use a tin or dish that is too small as we don't want them to be too high/thick.
    • Olive oil: I lightly spray the baking dish with oil to 'stick' the 1st piece of baking paper down.
    • Batter: after adding the flour, we need to mix the batter until there is no visible flour. I use a long handled spatula for this. I also lift the bowl and look at it from the base to see that it is consistently mixed in. This process is easy and will only take minutes. You will notice, however, the mixture is quite thick by this point, so a little bit of elbow grease is required.
    • Cool: one of the most important steps in making blondies is ensuring that they have cooled enough before slicing them that they won't fall apart. If you want to leave them overnight (in the pan) you can. Otherwise aim for 30 - 40 minutes in the pan cooling time and 30 minutes once out of the pan. You can also place the cooked blondies (still in the baking dish) into the fridge to speed up this process.

    What oven setting for blondies?

    Preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.

    Do blondies need a leavening agent?

    No. When making blondies you don't need to use baking power or baking soda. This is because the mixture is very dense and thick. This creates an organic thickness to the blondies.

    What is the best flour to use for blondies?

    All purpose flour, also known as plain flour is recommended for blondies.

    Ingredients

    • 1 cup white sugar
    • 1 cup brown sugar
    • 250 grams/2 sticks butter unsalted, Note 1
    • 2 large eggs free range
    • 2 teaspoons vanilla
    • 2 cups plain flour no need to sift
    • 1 cup white chocolate chips Note 2
    • 140 grams/4.9 scorched peanut bites Note 3
    • 2 tablespoons sprinkles Note 4

    Instructions

    • Preheat oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
    • Line baking dish:ย lightly grease a large square (24 x 24 cm or 9.4 inch) baking dish with spray oil then line it with 2 overlapping sheets of baking paper. Leave an 2-3 inch overhang on each side.
    • Batter: add both the brown and white sugar to a large mixing bowl. The add the butter to a microwave safe jug and use high heat to melt. Pour over the sugar and stir to combine. Then add both the eggs as well as the vanilla. Stir again to combine. Then add the flour and mix until it it no longer visible. Now add the white chocolate chips, chopped scorched peanut bites and sprinkles. Gently stir until folded in.
    • Baking dish: transfer the combined blondie batter into the prepared baking dish and use a spatula to push it out to form one layer.
    • Bake: place the baking dish into the oven (middle shelf) and let the blondies bake for 30-35 minutes. Once the cook time is up, use oven mitts to remove the baking dish and set it on a heatproof surface.
    • Cool: let the blondies cool in the pan for at least 30 minutes. After this time grab the overhanding parchment paper and lift it up and out of the pan. Discard the paper and then use a knife and sharp cutting board to portion the blondies into even pieces. Note 5

    Notes

    • Note 1 - Butter: I like to use unsalted butter as the nuts bring a salty flavor and we don't want the blondies to be 'too salty'. I chop the block/sticks up, add them to a heatproof jug and microwave on high in 30 second increments (total around 1 min 30 seconds) till melted. Then stir and pour in. I don't set the timer for 1 ยฝ minutes as I find it too intensely hot and doing so leads to a pop and butter all over the microwave. So short, high heat increments work best.ย 
    • Note 2 - White chocolate chips: I like to use these as they give a nice color contrast to the chocolate covered peanuts. You can do the same or use milk chocolate chips, dark chocolate chips or a combination of the 3 to the equivalent amount (ie 1 cup).ย 
    • Note 2 - Scorched peanut bites: this is 1 regular size bag of them from the supermarket. These have a very hard texture and caramelized nut filling with chocolate coating. I do recommend chopping them before adding to the mix as they are just a bit too big and firm to leave whole.ย 
    • Note 4 - Sprinkles: you can use your favorite type of sprinkles. I like to use the long slender ones as they are most commonly seen on a birthday cake, but a wide variety of sprinkles, even themed ones will work here.ย 
    • Note 5 - Cool: cooling the blondies is an important step in the process. Not doing so leads to blondies that will fall apart as they are too warm and haven't set properly. Aim for a minimum of 30 minutes in the pan and 30 minutes removed from the pan before slicing. You can also leave them in the fridge overnight or use the fridge to help speed up the cooling process.ย
