    M And M Blondies are a fun and colorful sweet treat with crunchy peanut m and m's as well as chunks of chocolate chips. This fun blondie recipe is quick to make and will be loved by the whole family! With a fudgy buttery filling and crispy crackling top you will find yourself returning to these peanut m&m blondies over and over again!

    I have summarised everything that you will come to know and love (LOVE โค) about the chewy m&m blondies recipe in the points below:

    • One bowl: one of the best things about this recipe is that there is no stand mixer or electric beaters required. We also need only 1 large mixing bowl and a spatula or wooden spoon to stir it all together. This keeps both the effort involved as well as the clean up to a minimum.
    • Make it your own: another fun thing about these m and m blondies is that you can make it your own. Choose your favorite m and m's as well as chocolate be it milk, dark or white chocolate. You can put your own spin on it to make it exactly what you want it to be.
    • Easy method: a lot of blondies recipes call for 'browned butter'. This involves melting the butter (till it browns, dir hahah ๐Ÿ˜‚๐Ÿ˜‚) in a saucepan on the stove. The process takes time, effort and more washing up. My recipe for these easy blondies uses the microwave to melt the butter. This keeps the recipe quick, easy and needing only minimal effort ๐Ÿ˜‰๐Ÿ‘!

    ๐Ÿฅ— Ingredients

    As you can see the recipe for these easy cookie bars calls for:

    • Vanilla: vanilla extract or vanilla essence, whichever you have on hand.
    • Eggs: 2 large eggs, which are free range of course! No need for room temperature. Straight from the fridge is fine.
    • Butter: unsalted butter. This is because there is enough salt from the peanuts to not need to add additional salt to the recipe.
    • M and M's: your choice of which type. I like to use peanut ones as I think blondies with nuts are kind of dreamy. Plain m and m's will also work well. So will crispy, mini and peanut butter m&m's.
    • Brown sugar: light brown sugar, loosely packed.
    • White sugar.
    • Plain flour: one of the key dry ingredients for the blondies. No need to sift, simply pour into the bowl and stir.

    ๐Ÿ˜‰ Substitutions and Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Chocolate: I use milk chocolate chips. You can do the same or use dark chocolate chips or white chocolate chips. Or you can use a mixture ie milk and white. In either case we want to keep the ratio to that 'one cup'.
    • Nuts: if you use peanut m&m's that will be enough nuts in the recipe. If however, you want to add use plain m&m's and then add nuts you can. Some options are peanuts, pistachio nuts, hazelnuts or pecans. Each of these should be roughly chopped.

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make M and M Blondies

    To make your m and m blondies, start by measuring out all of the ingredients. Once you have done that add the brown sugar and white sugar to a large mixing bowl.

    ๐Ÿณ Instructions

    Here are the step by step instructions to make the recipe.

    • Line the baking dish (Photo 1)
    • Add sugars to bowl (Photo 2)
    • Melt the butter (Photo 3)
    • Pour melted butter into bowl (Photo 4)

    Transfer the butter to a heatproof jug and melt in the microwave using 30 second increments (it will take about 1 ยฝ minutes all up).

    Give the butter a gentle stir and then let it cool whilst you crack the eggs into a small bowl.

    When the butter has cooled pour it into the sugar and stir until it is consistently combined. Next add the eggs and vanilla to the butter sugar mixture. Stir to combine. It will look like photo 6 in the shots below at this point.

    • Add the eggs and vanilla (Photo 5)

    • Add flour to the butter mixture (Photo 7)
    • Stir to combine (Photo 8)

    Next add the flour and stir with a spatula until there is no visible flour in the bowl.

    Once done add both the m and m's as well as the chocolate chips.

    Give these a gentle stir and the batter will be looking like the image below.

    • Add mix ins (Photo 9)

    Once you have added the m and m's and chocolate chips to the bowl stir to fold them in and then transfer them to the prepared baking dish.

    Next use a spatula to push the mixture so that it is spread out across the baking dish. It doesn't have to be an exact flat layer but a reasonably spread out one reaching all 4 corners.

    And once you have pushed it out so that it covers the dish, we pop it into the preheated oven and bake it for 35 minutes.

    ๐Ÿฝ Blondies Serving Suggestions

    You will need a little bit of patience even though your mouth might be drooling with these!

    They need to cool. If they don't they can crack, fall apart and not be a solid baked blondie to pick up and bite into.

    So once they have baked, breathe in, breathe out and let them cool ๐Ÿ˜๐Ÿ‘Œ.

    Then comes the fun part, cutting them into portions. I take the big square cut it in to 4 then cut each of those into 4. I do this to get 16 even pieces. These can of course to cut into smaller pieces to suit.

    Of course when it comes to serving your blondies you can do so as is or dollop a scoop of vanilla ice cream on top or serve them with a glass of milk and call them dessert!

    How to Store

    You can transfer the cooled portioned slices of blondies into an airtight container and place them into the fridge. They will keep for 3-4 days.

    How to Freeze

    Or once the blondies have cooled, wrap each piece in cling wrap. Then place these into a larger zip lock bag. These can be frozen for up to 3 months and need to be thawed before consuming.

    How to Reheat

    To reheat refrigerated blondies, place them on plate and microwave in 30 second increments until warmed through with the chocolate noticeably melted. To reheat frozen blondies, let these thaw completely and then reheat following the step above. They will need an extra minute or so as they will be colder to start with.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Parchment paper: parchment paper or baking paper is needed to line the baking dish. We also want a decent amount (2-3 inches) of overlap on the sides. When it comes to lifting the blondies out of the baking dish, you will grab the overhanging paper and pull them up and out.
    • Cooking oil: re the above. I also recommend giving the baking dish a light spray with cooking oil before lining it with parchment paper. The cooking spray will help those 2 pieces of paper to 'stick' to your baking dish. That way they won't move around too much when you add the blondie batter.
    • Butter: if you don't keep an eye on the butter whilst using the microwave to melt it, it can over melt and 'explode'. You will hear it! So it is better to use short increments, keep an eye on it and then have the right amount needed for the blondies.
    • Cool, cool, cool: I repeat myself as it is a necessary and important step to take๐Ÿ˜‰๐Ÿ‘ . Whilst they will look solid when you remove them from the oven, it is not till they are fully cooled that you can slice them knowing that they won't fall apart.

    Can I use regular M&Ms for baking?

    Yes, absolutely! You can bake with mini m&m's, regular m&m's, peanut m&m's or your favorite type of m&m's. You can also keep them whole or crush them into smaller pieces before adding them to recipes.

    Yes, you can add chocolate and nuts to blondies. One of the most fun things about baking blondies is getting creative with the mix ins that you add.

    Ingredients

    • 1 cup brown sugar Note 1
    • 1 cup white sugar Note 2
    • 250 grams/2 sticks butter unsalted, Note 3
    • 2 large eggs free range, Note 4
    • 2 teaspoons vanilla Note 5
    • 2 cups plain flour no need to sift
    • 1 cup m and m's Note 6
    • 1 cup milk chocolate chips Note 7

    Instructions

    • Preheat the oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
    • Baking dish: lightly grease a square (24 x 24 cm or 9.4 inch) baking dish with cooking oil then line it with 2 overlapping sheets of baking paper with a 2-3 inch overhang on each side.
    • Sugar and butter: add each of the brown sugar and white sugar to a large mixing bowl. Then transfer the butter to a heatproof jug and heat in the microwave using the high setting for 30 second increments till melted (around 1 ยฝ minutes). Once the butter is melted, use an oven mitt around the hand of the jug and remove it from the microwave. Set it on a heatproof surface and use a spatula to give it a gentle stir. Let it cool for a minute or so (use this time to crack the eggs into a small bowl). Then pour the melted butter into the bowl and stir until consistently combined.
    • Vanilla and eggs: next add the eggs and vanilla to the bowl and stir till consistently combined.
    • Flour: then add the flour to the bowl and stir till it is mixed in with no visible flour at the bottom of the bowl.
    • Mix ins: next pour the m and m's and chocolate chips into the blondie batter and gently stir to fold these in.
    • Transfer: transfer the combined blondie batter into the prepared baking dish. Then use a spatula to push it so that it is in a reasonably even layer and fills all 4 corners of the dish.
    • Bake: place the blondies into the oven (middle shelf). Bake them for 35 minutes. Once the cook time is up, use oven mitts to remove them from the oven and set them onto a heatproof surface.
    • Cool: rest the blondies in the baking dish still for 20 minutes. After this time, grab the overhanging parchment paper and lift the slab up and out of the baking dish. Place this onto a cooling track and let them cool for a further 20 minutes.
    • Portion: transfer the blondies slab to a clean, dry cutting board. Use a sharp knife and cut this into 16 equal pieces.

    Notes

    • Note 1 - Brown sugar: for an even softer, more moist filling you can use 2 cups of brown sugar in place of the 1 cup of white and 1 cup of brown sugar. It will change the texture of the blondies though. The main thing you will notice is that the filling or centres will be more soft and the top won't have that flaky/crisp crackle to it.ย 
    • Note 2 - White sugar: as above. Although this time if you omit the brown sugar and only use white then you will loose a bit of the soft butterscotch taste that the brown sugar delivers.ย 
    • Note 3 - Butter: unsalted is recommended as the nuts provide a little salt. If you want to use no nuts at all in the recipe then you can add a pinch of salt.ย 
    • Note 4- Eggs: these don't need to be at room temperature, nor do they need to be whisked before adding them to the bowl.ย 
    • Note 5 - Vanilla: you can use vanilla extra or vanilla essence. Don't let anyone talk you down about how the cheaper version is synthetic. It maybe but we are in a cost of living crisis and it is considerably cheaper! So you do you boo and pffft to the others.ย 
    • Note 6- M and M's: you can use your favorite here! Be they regular milk chocolate m and m's, peanut m and m's, crunchy m and m's, crispy m and m's or other.ย 
    • Note 7- Chocolate chips: chocolate chips from the baking section of the supermarket or a block of cooking chocolate or chocolate melts chopped into chunks. Either way we always want to use cooking chocolate, not sweet eating chocolate.ย
