Tasty Tip: this one is for my USA and Canadian readers. In Australia we call what you call 'candy', 'lollies'. It is the same thing. So where in Australia we would think of rocky road as having chocolate, nuts and lollies, you would think of it as having chocolate, nuts and candy. Simply different words referring to the same thing ❤😉.
🥗 Ingredients
The photo below is to show you everything you need to make the recipe. Please refer to the printable recipe card for exact measurements and detailed how to guide.
As you can see, the recipe calls for:
- Milk Chocolate: I recommend using cooking chocolate. My preference is melts, but you can use chocolate chips, bits or a block broken into pieces.
- Marshmallows: the best ones to use for the recipe are mini marshmallows. They come in a packet which has a combination of pink and white colours or there is a pastel range you can get. This will save time in chopping up regular sized marshmallows and won't leave the tops of the chocolate sticky from the cut bits.
- Raspberry lollies: I use kitchen scissors and a glass jug to chop these into small pieces. Use can also use a knife and chopping board if you like.
- Roasted peanuts: unsalted roasted peanuts are the best to use for the recipe as we don't need or want the salty taste in the chocolates. You can use kitchen scissors to roughly chop these into pieces if you want smaller bits of nuts or use the version called 'crushed nuts' which are also peanuts but really small pieces which takes the work out of you chopping them up. I don't chop them for your info.
Tasty Tip: you will be able to purchase the ingredients needed to make the chocolates from your local store. Be it Walmart, Safeway, Aldi, Tesco, Woolies or Coles. I also have a kitchen wares store at my local shops, so purchased the chocolate moulds from there. If you don't have a kitchen supplies store, I recommend looking online as there are plenty out there! Another alternative is to use silicon ice cube trays 😉.

Here are the step by step instructions to make the recipe. I am using 3 cm (1.2 inches) dome chocolate molds which I purchased from my local kitchen supply store.
- Combine the fillings (Photo 1)
- Stir to mix them together (Photo 2)
- Fill chocolate mould with fillings (Photo 3)
- Melt chocolate in microwave (Photo 4)
👩🍳 How to Make Rocky Road Chocolate
To make the chocolates, start by combining the marshmallows, raspberry lollies and nuts in a mixing bowl. Use a spoon to stir and combine. Then use a teaspoon to start to fill the chocolate mould with the filling ingredients.
Once that is done, you are ready to add the chocolate to a heatproof jug. It will take 3 minutes to melt in the microwave, which is best done as a 1 minute period, then stirred followed by another 1 minute period, stirred and a final 1 minute.
- Pour melted chocolate over the fillings (Photo 5)
- Transfer remaining fillings into the melted chocolate (Photo 6)
- Stir to combine (Photo 7)
- Spoon into the chocolate mould (Photo 8)
🍽 Serving Suggestions
To serve the chocolates, you simply need to push them out of the mould and break off any excess chocolate bits. Use can use a knife for this process if you like. The excess chocolate is the bit that sits on the perimeter of the individual dome which will form a tail to the half round shape of the individual chocolates.
They will pop out easily and it will only take 2 minutes to remove all of the chocolates from the moulds.

Store the rocky road in an air tight container in the fridge. It will last for 10 days or more.
😉 Substitutions and Variations
Here are my subs ins and outs that you might like to consider as you make the recipe.
- If you prefer you can use white or dark chocolate instead of the milk chocolate.
- You can use a different nut, like pistachios in place of the peanuts.
- If you want to use can use chopped up pieces of red licorice instead of the raspberry candy.
- Add some coconut to the rocky road filling ingredients if you wish.
- You can use whole marshmallows and kitchen scissors to chop them into pieces if you like.
- Red Hots cinnamon flavored candy is a type of candy in the United States, commonly sold at Walmart that would be an option to use if you cannot find Raspberry lollies (candy) the one we can in Australia.
- Jelly Babies are an other option, sold at Tesco that you could try. Either using all of the colours, or picking out your favourite ones.
- Wine Gums and Licorice All Sorts are other candy/lolly type options that you could chop into small pieces and use as alternatives.
🛎Tasty Tips
Here are my top tips and tricks to share with you so that you can get the recipe right from the get go:
- Try and use a chocolate mould with the same dimensions as the ones I am using (4cm which is approximately 1.5 inches).
- There is no need to spray or grease the chocolate moulds if using silicon ones.
- The chocolates will be able to be easily popped out (push from the dome side) once they are set.
- Use a knife and chopping board if you wish to trim any excess tail bits of set chocolate from the dome shape.

Rocky Road Chocolate
Equipment
- 1 Mixing bowl
- 1 Soup Spoon
- 2 Silicon dome chocolate moulds 4cm, 1.5 inches
- 1 Heatproof microwave safe jug
- 2 Teaspoons
Ingredients
- 300 grams / 11 oz milk chocolate Note 1
- 1 cup roasted unsalted peanuts roughly chopped
- 1 cup mini marshmallows Note 2
- ½ cup red lollies roughly chopped, Note 3
Instructions
Technique 1
- Combine: add mini marshmallows, chopped candy lollies and roasted peanuts to a medium sized mixing bowl. Use a soup spoon to stir and combine.
- Fillings: use a teaspoon to spoon the combined rocky road fillings into the chocolate mould.
- Chocolate: add the chocolate to a heatproof microwave safe jug. Microwave for 1 minute, then remove and stir (handle will be hot). Microwave for an additional minute, remove and stir, then microwave for 1 more minute (total time: 3 minutes).
- Melted chocolate: working one dome at a time, pour the melted chocolate into the mould till it reaches the surface. Don't worry if a little excess flows out onto the flat part of the mould. You can cut this off once the chocolates are set.
- Set: carefully pick up the filled chocolate mould with 1 hand either side and place into the fridge (either open it 1st or get someone to open it for you) for a minimum of 1 hour.
- Serve and enjoy: once the chocolates are set, remove from the fridge, place mould on chopping board and push from the back to pop the chocolates out. Repeat for remaining chocolates.
Technique 2
- Fillings: add the combined rocky road fillings to the melted chocolate and stir to mix in together.
- Moulds: use 2 teaspoons to spoon the combined wet rocky road mixture into the chocolate mould. Repeat to fill each dome.
- Set: carefully pick up the filled chocolate mould with 1 hand either side and place into the fridge (either open it 1st or get someone to open it for you) for a minimum of 1 hour.
- Serve and enjoy: once the chocolates are set, remove from the fridge, place mould on chopping board and push from the back to pop the chocolates out. Repeat for remaining chocolates.
Notes
- Note 1 - Chocolate: You can use chocolate melts, chocolate bits or a block of cooking chocolate broken into pieces. Ensure you measure it using kitchen scales or purchase exact quantity ie 300 grams which is approximately 11 ounces.
- Note 2 - Mini Marshmallows: these will be found in the cooking aisle as opposed to the sweets aisle. They come in a 100 gram packet and you can get pink and white or pastel colours. I like using approximately 3 mini marshmallows per individual chocolate and this is about 90 all together which is around 1 cup. You don't have to count them, approximate is totally fine!
- Note 3- Raspberry lollies: A standard 190 gram packet of these is approximately 1 cup and we only need to use half of them. They can be quite chewy, so I like to take kitchen scissors and chop them into 4 pieces (roughly) so that they are less big hunks and more smaller flecks of colour.
- Note - Melting the chocolate: some recipes that talk about melting chocolate, will say microwave the chocolate in 30 second increments. However, I have tried this and let me tell you nothing happens after 30 seconds!!! So I microwave for 1 minute, remove (use an oven mit as the handle is hot) and stir, microwave for 1 minute, remove and stir, then return to the microwave for 1 final minute and stir after that time. It works perfectly!
