Is there anything better than eating veggies that taste insanely delicious?
Nope, I don't think so either!
This recipe takes mushrooms to a taste and texture level of pure bliss.
Easy with a quick cook time, these mushrooms will add a healthy side dish to any main meal in a sophisticated manner.
Ingredients needed
The ingredients you need are shown in the photo below, they are all simple and can be found at the local shop (or you may already have!).
As you can see, the recipe calls for:
- Portobello mushrooms
- garlic
- olive oil
- dried thyme
- salt and pepper
The mushrooms come in a variety of sizes. The size I have in the photo above is good as they are 2-3 bite sizes of yum.
You can also get the larger Portobello mushrooms and slice them into long strips if you wish (perfect for tacos or pasta!).
How do I cook Portobello Mushrooms
To cook Portobello Mushrooms, you can oven bake them, grill them, pan fry or Air Fry.
For each method, we start by seasoning the mushrooms to ensure they taste delicious when they are cooked!
Can you eat the gills of a Portobello Mushroom
Yes you can.
The gills are the thin strips under the mushroom cap that have a soft fine texture.
When stuffing mushrooms like in our Baked Stuffed Mushrooms and Baked Stuffed Flat Mushrooms it is a good idea to remove the caps and or the gills to create more room.
However, for an easy side dish like this recipe, there is no need to remove the gills and their texture adds to the delicious taste of the dish.
Instructions
Here are the step by step instructions to make the recipe.
As you can see in the photos below, seasoning the mushrooms is done in quick easy steps.
- Combine oil, garlic, thyme, salt and pepper (Photo 1)
- Use a pastry brush to coat the underside of the mushrooms (Photo 2)
- Flip the mushrooms to the other side and coat (Photo 3)
- Use tongs to transfer the mushrooms into the Air Fryer (Photo 4)
I use freshly minced garlic for this recipe. You can also use jarred minced garlic.
You only need a small amount but the flavour combo is is a match made in heaven.
The photo on the left above shows you the mushrooms when they go into the Air Fryer.
The photo on the right above shows you the mushrooms halfway through cooking, when they are flipped to the other side.

Expert tips
This is what I have learnt that will help you master the recipe from the 1st time and every following time:
- The oil is great to allow us to season the mushrooms, we only need a touch of it
- You can pull the basket out by the handle to check how the mushrooms are cooking along the way
- There are so many sizes and types of Air Fryers that some will cook faster or slower depending on the model.
- The 1st time you make the recipe, check the mushrooms after 2 mins to see how they are cooking!

Air Fryer Portobello Mushrooms

Ingredients
Air Fryer Portobello Mushrooms
- 6 portobello mushrooms Note 1
- 1 tbs olive oil
- 2 cloves garlic minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
Air Fryer Portobello Mushrooms
- Turn the air fryer on to 180°C/350 F for 10 mins Note 2
- Add olive oil, minced garlic, dried thyme, salt and pepper to a small bowl and stir to combine.
- Place mushrooms cap side up on a chopping board and use a pastry brush to gently coat each mushroom with the season oil mix
- Flip the mushrooms to the other side and repeat brushing to season
- Use tongs to place each mushroom cap side up in the Air Fryer, cook for 4-5 mins
- Pull the handle of the basket towards you and rest on a heat proof surface as you use tongs to flip the mushrooms to the other side
- Cook for a further 2 mins (total cook time is between 6-7mins)
- Serve with herbed yoghurt sauce (optional)
Notes
- Note 1 Portobello Mushrooms come in a few different sizes. I find this size perfect for a side dish and the larger ones perfect if I am stuffing them.
- Note 2 I don't preheat my Air Fryer. I simply often turn it on for 15 mins and start using it to allow me to work in batches where needed. For this recipe I did 4-5 mins for the 1st side (cap up), then 2 mins (cap down).
- Note serving size is 1 mushroom per person (Nutritional information)
