The individual pieces are the cloves and the whole garlic is the bulb or head. There are usually 10 - 15 cloves of various sizes in each whole garlic head.
This recipe is as simple as seasoning olive oil, preparing our garlic bulbs, brushing them with the oil mix and oven baking them.
How to roast garlic in a pan?
To roast garlic in a pan, we need to cut the top off, season the cloves with oil, thyme, salt and pepper, then roast in the oven. This is an easy recipe with fantastic results!
How to roast garlic fast?
Our recipe for oven roasted garlic is quick and easy. It takes 30 mins to roast, we start with 20 mins cut side facing up, then rotate the garlic heads to face down and roast for a final 10 mins.

How to roast garlic without foil?
We roast our garlic in a pan (cast iron skillet is perfect), and use no aluminium foil.
The photos below show you this process:
We season the oil simply by adding salt, pepper and thyme, then whisk or stir to combine. Next we cut the tops off our garlic to remove some skin and expose the garlic cloves.
Then we use a pastry brush to coat the seasoned oil over each garlic head. Followed by pouring the leftover oil into the base of your pan.
How to store roasted garlic?
If you are going to use your garlic in the next (up to 3) days, it is fine to keep in a sealed container. Any longer than that and you are best to remove the bulbs from the skin and store in a sealed air tight container (up to a week).
If you won't be eating the garlic with a week, then simply freeze and use as needed (it will defrost quickly as the pieces are so small).

- cut the tops of the garlic heads with one slice per head
- brush the oil directly onto the cut garlic to get the flavour right in there
- start roasting your garlic cut side up, then flip and complete cut side down in the oil
- you will literally be able to push the garlic cloves out of their skin, starting at the base

Whole Roasted Garlic
Equipment
- Skillet or fry pan
Ingredients
Whole Roasted Garlic
- 1 kg whole garlic bulbs Note 1
- ½ cup olive oil
- 1 tablespoon thyme Note 2
- salt and pepper to taste
Instructions
Whole Roasted Garlic
- Preheat oven to 200°c/400°F, gas 6
- Combine olive oil, thyme, salt, pepper and whisk to combine
- Use a knife to cut the tops off the garlic bulbs Note 3
- Place your garlic bulbs into an oven proof pan cut side up Note 4
- Use a pastry brush to coat each bulb with the seasoned oil. Pour the remaining oil into the base of the pan.
- Cook for 20 mins, use an oven mitt to remove your pan from the oven, then use tongs to turn each garlic head cut side down. Return pan to oven and roast for a further 10 mins
- Remove from oven, allow to cool for 1-2 mins and serve Note 5
Notes
- Note 1 you can usually buy a 1kg bag of garlic at the grocery store or fruit shop. This is a good way to purchase your garlic as the bulbs are usually around the same time so they will cook consistently across the batch.
- Note 2 An Australian tablespoon measured 20ml. A half tablespoon measures 10ml.
- Note 3 You will be able to cut across the bulb in 1 cut. It will cut the top off each garlic clove, but they will still be connected at the root and will stay together. Make the slice the thickness that you need so that each bulb just gets the '1' cut.
- Note 4 I use my cast iron skillet for this and it is perfect
- Note 5 You can serve the garlic in the bulbs like seen in the photos or 'pop' each garlic clove out of the skin and serve. The cloves will come out very easily with a little 'push' from the base.
