As you can see the recipe calls for:
- Pistachio nuts: these lovely robust green nuts provide a fantastic colour contrast with the dark chocolate and bright red raspberry lollies.
- Coconut: this is desiccated coconut and you will find it in the cooking aisle with the dried fruits and nuts.
- Raspberry lollies: bright and adding pops of colour to the rocky road these will be in the lolly aisle.
- Marshmallows: these soft sweet pink and white marshmallows are an almost essential ingredient to use when making rocky road!
- Dark chocolate: these are cooking chocolate melts which are recommended over eating chocolate as they melt differently.

🍳 Instructions
Here are the step by step instructions to make the recipe. We start by preparing the marshmallows. You will need a knife and cutting board for this initial step.
- Slice the marshmallows (Photo 1)
- Add them to a bowl (Photo 2)
- Slice the raspberry lollies (Photo 3)
- Add them to a bowl (Photo 4)
👩🍳 How to Make Dark Chocolate Rocky Road
We start to make the rocky road by chopping the marshmallows in halves. To do so, use a knife and cutting board and slice 4-5 marshmallows at a time.
Once done, transfer the marshmallow halves into a large mixing bowl like you see in the photo above.
Next use the same knife and chopping board to slice the raspberry lollies in halves and once done add these to the marshmallows like you see above.

- Then add the coconut (Photo 6)
- Melt the chocolate (Photo 7)
- Combine and then into tin (Photo 8)
Next add the pistachios to the mixing bowl, followed by the coconut.
Once done, give them a stir to combine.
Now we are ready to melt the chocolate. To do so add the dark chocolate melts to a heatproof jug. Place the jug into the microwave on high for 1 minute. Once the minute is up, remove and stir the chocolate. Then return it to the microwave for another minute and once that is up remove and stir. Next place it back into the microwave for 1 further minute.
Then pour it over the top of the fillings in the mixing bowl and stir until the wet rocky road is consistently combined.
When it is, use a spatula to transfer the wet mixture into the prepared lined tin and place it into the fridge for at least an hour.
🍽 Serving Suggestions
Once the rocky road has set you can remove it from the fridge and place the tin onto a chopping board. Then grab the paper overhang and lift the rocky road up and out of the tin.
Discard the paper and then use a knife to cut the square into 4 smaller squares. Then cut these squares also into 4 smaller squares. Using this method allows you to cut the large square into 16 pieces of rocky road.
Of course if you want to cut the pieces into longer lengths for gift giving and what not, go right ahead my friend 😉👍.

😉 Substitutions and Variations
Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:
- You can use peanuts in place of the pistachio nuts if you wish to (equivalent amount).
- You can use mini marshmallows in place of the larger size marshmallows. In which case you don't need to chop them, simply add them to the bowl.
- If you want to use milk chocolate or white chocolate in place of the dark chocolate you can.
- Or you can use shredded coconut in place of the desiccated coconut.
- You can use snake lollies or red licorice pieces finely chopped in place of the raspberry lollies.
💡 Tasty Tips
Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:
- Line your cake tin with 2 overlapping sheets of baking paper and use a little grease of butter on the tin itself to help stick these 2 pieces of paper in place.
- The total cook time for the chocolate in the microwave is 3 minutes. We don't however, want to do that in one interval as we risk overcooking the chocolate. So the 1 min, stir, 1 min, stir, 1 min, final stir is the trick to perfecting it 👍😉.
- Work reasonably quickly once you have combined the rocky road and are transferring it into the tin. This will ensure that the chocolate doesn't start to set before you have got it into the slice tin.

Dark Chocolate Rocky Road
Ingredients
- 2 cups marshmallows Note 1
- 1 cup raspberry lollies Note 2
- ⅓ cup pistachio nuts Note 3
- ⅓ cup desiccated coconut Note 4
- 4 cups dark chocolate melts Note 5
Instructions
- Cake tin: line a square cake tin with 2 sheets of overlapping baking paper with a smear of butter to hold them in place.
- Marshmallows: use a knife and chopping board to slice the marshmallows in halves. Then add these to a large mixing bowl.
- Raspberry lollies: use the same knife and chopping board to slice each of the raspberry lollies in half then add these to the bowl with the marshmallows.
- Coconut and pistachio nuts: next add the coconut and pistachio nuts to the mixing bowl.
- Chocolate: add the dark chocolate melts to a microwave safe jug. Microwave them on high for 1 minute and then remove and stir. Return them to the microwave for a further minute, then once again remove and stir. Finally return them to the microwave for a final minute. Once the 3 minutes total is up, remove the melted chocolate from the microwave and give it a stir.
- Combine: pour the melted chocolate over the combined fillings in the bowl. Then stir these until they are consistently mixed together.
- Transfer: use a spatula to transfer the wet rocky road into the prepared tin. Then continue to use the spatula to push it into the 4 corners and spread it out evenly across the pan.
- Refrigerate: place the rocky road into the fridge for a minimum of 1 hour to set.
- To serve: after an hour, remove the rocky road from the fridge and place the tin onto a chopping board. Then use the overhang to lift the rocky road up and out of the pan. Use a knife to slice the rocky road into pieces.
Notes
- Note 1 - Marshmallows: this 2 cup amount is just less than a full bag. For this recipe I intentionally reduce the marshmallows to allow the other ingredients to shine also. You can use mini marshmallows also if you wish to. They require no chopping.
- Note 2 - Raspberry lollies: for Aussies this is 1 x standard size 190 gram bag. You don't have to use this exact lolly. You can use snakes roughly chopped or red licorice pieces finely chopped.
- Note 3 - Pistachios: you can use these whole or chop them and use the chopped pieces. Use peanuts (equivalent amount) as a substitute.
- Note 4 - Coconut: you can use shredded coconut in place of the dessicated coconut if you wish to.
- Note 5 - Dark chocolate: cooking chocolate not snack eating chocolate is the best to use. We only need 3 minutes to melt it in the microwave, but we want to do this in 1 minute intervals, stirring after each 1 minute.
