    Beef And Bean Enchiladas are a quick and easy family meal. Made by combining juicy ground beef, black beans and soft tortillas these Mexican favorites will be a huge hit with all ages. Simple to make with a cheesy sauce topping these melt in your mouth enchiladas will fast become your essential weeknight recipe.

    • Weeknight recipe: the whole family will love this dish and it is easy enough to bring together in 30 - 40 minutes on a weeknight.

    As you can see the recipe calls for:

    • Olive oil.
    • Salt and pepper: we use salt and a little bit of black pepper to season the beef mince.
    • Onion.
    • Garlic.
    • Black beans: you will find these either in the International foods aisle or the canned vegetables aisle in the supermarket.
    • Corn kernels.
    • Enchilada sauce: store-bought sauce keeps the recipe easy and convenient.
    • Beef mince: beef mince or ground beef is a budget friendly cut of meat that is always handy to have in the fridge or freezer.

    • Greek yogurt.
    • Avocado.
    • Tomatoes.
    • Lettuce: I find shredded ice berg lettuce the easiest.
    • Tortillas: 10 large corn tortillas.

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Beans: I like to use black beans as they are small and pair well with the beef and corn combination. You could use refried beans, red kidney beans, chickpeas or lentils as alternatives.
    • Seasoning: if you want to use enchilada seasoning or taco seasoning to cook the beef you can. Another option is to use garlic powder, onion powder, chili powder, ground and smoked paprika (in which case omit the fresh garlic and onion).
    • Corn: you could use small pieces of chopped bell peppers in place of the corn kernels if you wish to make this change.
    • Beef: you could use ground chicken or ground turkey in place of the beef mince.
    • Tortillas: I like to use flour tortillas. You could also use corn tortillas or bakery style flat breads if you wish to.
    • Jalapenos: you can add some sliced jalapenos, black olives or pickled onions if you want additional Mexican style vegetables involved.
    • Sauce: I like to use a red enchilada sauce. Another option is to use a green enchilada sauce.
    • Greek yogurt: Greek yogurt or sour cream dolloped on top of the cheese layer.
    • Garnish: you can use sliced green onions in place of the fresh cilantro.

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Beef And Bean Enchiladas

    To make the beef enchiladas with start by browning the beef. You will need a large frying pan to begin.

    ๐Ÿณ Instructions

    • Cook the beef (Photo 1)
    • Add the beans (Photo 2)
    • Add the corn (Photo 3)
    • Combine (Photo 4)

    Place a large frying pan on the stove top, turn the heat to high and add the olive oil. Next add the garlic and sautรฉ it for 1 minute. Once done add the diced onion and cook for 1-2 minutes. Then add the beef and use a heatproof spatula or wooden spoon to break up the clumps as it cooks. We want it to be fully browned and this will take 7-8 minutes.

    Once the beef is cooked add the drained black beans and corn kernels, stir to combine then turn the heat off and let this mixture cool.

    • Work one tortilla at a time (Photo 5)
    • Add enchilada filling (Photo 6)
    • Roll (Photo 7)
    • Grease and add sauce (Photo 8)

    ๐Ÿง€ Beef And Cheese Enchiladas Method

    Working one at a time place a tortilla in the centre of a clean, dry cutting board. Then scoop 1-2 spoonfuls of the beef and bean filling into the middle of the tortilla. Grab the base of it and roll. Then set aside and repeat.

    Next grease a large baking dish with cooking oil and spread a small (1-2 tablespoons) amount of enchilada sauce over the base of the dish.

    Then transfer the rolled enchiladas into the dish like you see in the photos below.

    • Into casserole dish (Photo 9)
    • Pour sauce over the top (Photo 10)
    • Add the extra beef and beans (Photo 11)
    • Add cheese (Photo 12)

    Pour the remaining enchilada sauce over the enchiladas then spread the extra beef and bean mixture over the top.

    Once done spread the cheese over the top and place the baking dish into the preheated oven.

    The enchiladas will take 15 to 20 minutes to cook. During this time we are wanting the cheese to melt and turn a little bit golden brown with crispy bits of tortillas sticking out of each end.

    ๐Ÿฝ What To Serve With Beef And Bean Enchiladas

    A simple salad with shredded lettuce, chopped tomatoes, avocado and green yogurt is a great accompaniment on the side of a plate of cheesy enchiladas.

    This easy combination can be prepared whilst the enchiladas are cooking and plated to give balance as well as a sense of completeness to the dish.

    How to Store Enchiladas

    Once the enchiladas have cooked and cooled you can transfer them into an airtight container. These can be kept in the fridge and are best reheated and consumed within 3 days.

    How To Freeze

    Or if you want to freeze the enchiladas follow the step above and portion into multiple air tight containers. Then stack these in the freezer. These portions can be kept for 3 months.

    How to Reheat

    To reheat refrigerated enchiladas place them on a plate with cling wrap. Reheat in the microwave on high for 2-3 minutes until warmed through. For frozen enchiladas allow these to thaw in the fridge during the day. Then follow the step above to reheat using the microwave. Thawed enchiladas will take an extra minute or 2 to reheat as they will be colder to start with. So check the internal temperature before heading to the dinner table.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Beans and corn: for each of these we drain and rinse them. A sieve over the sink with running tap water will be the easiest way to achieve this.
    • Cooking oil: we do want to grease the baking dish with a little cooking spray. This will ensure that nothing sticks and also ensures that the clean up of that dish is easier.
    • Sauce: we smear some of the sauce on the base of the dish before placing the enchiladas on top. This helps them to stick to the base of the dish and not move around too much when you are adding the rest of them.
    • Ice-cream scoop: I like to use an ice-cream scoop to fill the tortillas. This way you add an even amount of the beef mixture to each tortilla. I use 1 ยฝ scoops.
    • Leftover beef mix: you will see that I use the leftover beef bean mixture over the top of the enchiladas before adding the sauce and cheese. This adds texture. If you don't want to do this, you can refrigerate the leftover beef mix and repurpose it for another meal.

    Ingredients

    • 1 tablespoon olive oil
    • 1 tablespoon garlic chunky chopped, 2 cloves finely chopped or minced
    • 1 large brown onion peeled and diced
    • 500 grams/16 oz beef mince Note 1
    • ยผ teaspoon salt
    • ยฝ teaspoon black pepper
    • 400 grams black beans drained and rinsed
    • 400 grams corn kernels drained and rinsed
    • 375 grams/13 oz enchilada sauce Note 2
    • 10 large corn tortillas Note 3
    • ยฝ cup cheese

    To Serve

    • cilantro stems removed, leaves finely chopped

    Instructions

    • Preheat the oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
    • Beef: place a large frying pan onto the stove top, turn the heat to high and add the olive oil and garlic. Sautรฉ the garlic for a minute then add the diced onion and cook for 1-2 minutes. Next add the beef mince, salt and pepper to the pan. Cook using a spatula to break up any clumps of meat until it is browned (7-8 minutes).
    • Beans and corn: once the beef is cooked add the black beans and corn kernels to the frying pan and stir to combine. Then turn the heat off and let this mixture cool (3-5 minutes).
    • Tortillas: working one at a time place a corn tortilla in the centre of a clean, dry cutting board. Spoon 1 ยฝ spoonful's of the cooked beef bean mixture into the centre of the tortilla and then roll. Set aside and then repeat this for the rest of the tortillas.
    • Baking dish: use cooking spray to grease a large baking dish with olive oil. Then spread 1-2 tablespoons of the enchilada sauce over the base of the baking dish and use a spatula to spread this out.
    • Enchiladas: starting at one end place each of the rolled beef filled tortillas into the baking dish and repeat to create one flat layer. Next pour the remaining enchilada sauce over the top of the tortillas. Now take the remaining beef bean mix and spread this over the top of the sauce. Sprinkle the cheese over the top to form its own layer.
    • Oven bake: place the baking dish (uncovered) into the preheated oven on the middle shelf. Bake the enchiladas for 15 to 20 minutes or until the cheese has melted with golden brown bits visible.
    • To serve: once the enchiladas are cooked, use oven mitts to remove the baking dish and place it onto a heatproof surface. Let them cool for a minute and then sprinkle chopped cilantro over the top to garnish. Plate with a side of lettuce, tomato, avocado and Greek yogurt.

    • Note 1 - Beef mince: beef mince (ground beef) is the primary protein used. For alternatives you could use ground chicken or turkey. These 2 are both lighter proteins than the beef.ย 
    • Note 2 - Enchilada sauce: this is one standard size store bought enchilada sauce. It will be in the international foods section of the supermarket where the Mexican foods are.ย 
    • Note 3 - Tortillas: this is 1 x 10 pack of large corn tortillas.ย 
    • Portion size: for adults the standard dinner size is 2 enchiladas with a side of salad. Little ones will likely eat only one as they are quite filling and satisfying.ย
