This Artichoke and Blue Cheese pizza is seriously to die for!!

 

I started making it a few years back, after a long wait in a library line to get a JP to sign some documents and I used that time to peruse magazines with a recipe that really stood out to me. The photo was for blue cheese and green olives, but over the time when I have made it, I have varied it up a little bit as I really wanted to tick the flavour boxes and I felt that the kalamata olives went best with the other ingredients.

I have made this countless times now and it is always a success. The artichokes literally melt in your mouth and as it is a vegetarian option, I think you feel satisfied but not overly full after eating. (I think we have all had one of those meat lovers pizza’s in our day, that seem delicious initially but after several pieces, the craving has well and truly subsided!)

Finding Inspiration

 

Today, I spent a little bit of time on pinterest and was drooling over some pizza recipes I saw there. It made me realise that even though I have made and posted plenty of pics of my pizzas on my instagram feed, it doesn’t seem like I have posted any of the recipes to my new site. So I thought I better get onto that pronto.

So, here is my Artichoke and blue cheese pizza recipe – enjoy it, I know you will, it is damn good!

Artichoke and Blue Cheese Pizza

This Artichoke and Blue Cheese Pizza is seriously to die for! The artichokes and blue cheese melt in your mouth!

Ingredients

Artichoke and Blue Cheese Pizza

  • 1 wholewheat pita bread
  • 1/2 cup basil pesto dip
  • 1/2 cup artichokes marinated, hearts
  • 1/4 cup kalamata olives pitted

Instructions

Artichoke and Blue Cheese Pizza Method

  • Preheat your oven to 180 degrees F 82.2 degrees C. Line a baking tray with baking paper 
  • Place pita bread on baking paper 
  • Use 1/2 the basil pesto dip to cover the pizza base, spread the sprinkle of grated cheese around.
  • Drain the artichokes hearts, then spread out over the pizza, crumble the blue cheese around and add the kalamata olives.
  • Cook for 30 minutes, until base is crispy.

Notes

  • Grab the pesto dip from the fridge section, not freezer section of the supermarket 
  • The dip will be enough to make 2 pizzas (don't use all as it will overwhelm the flavours) 
  • I don't use too much extra cheese when making this pizza as I find the blue cheese is enough and don't like drowning all of the good toppings with extra cheese as it really isn't necessary.

Ok, Artichoke is one of my favourite pizza topping and funny enough – i usually dont like blue cheese, but if on a pizza… that’s another story! All sounds so delish girl!
