    Slow Cooker Yellow Curry is a flavor rich melt in your mouth homemade dish. With juicy beef and fluffy potatoes in a simple curry sauce we cook rather than order in from our favorite Thai restaurant. This slow cooker yellow beef curry is perfect for chilly nights and can be paired with fluffy rice for a complete meal.

    ๐Ÿค Recipe Highlights

    I have summarised everything that you will come to know and love (LOVE โค) about this crock pot recipe in the points below:

    • Store bought curry paste: we use a store bought curry paste for this recipe to keep the prep time to a minimum. This makes the recipe cost effective and the ingredients list practical. A jar of Thai yellow curry paste from your local grocery store will set you back around $4.
    • Minimal prep time: the prep time from start to having everything in the slow cooker and starting to cook is around 15 minutes.
    • Set and forget: when you have gotten to the stage of putting the lid on the slow cooker, it is then simply a matter of letting it cook. You can be 'hands free' during this time and use your time achieving other tasks as dinner pretty much cooks itself ๐Ÿ˜‰๐Ÿ‘.
    • Optional cook time: whilst I like to think of myself as being a fast slow cooker (I rarely use the low setting due to needing daylight to take the photos) you have the option of either 4 hours on low or 8 hours on high.
    • Something different: red curry and green curry are arguably the most popular of the Thai curries. Massaman Curry is up there as well. Yellow curry is less popular, yet delicious in itself and offers you the chance to try something that you would otherwise skip or overlook on the menu.

    ๐Ÿฅ— Yellow Curry Beef Ingredients

    The photo below is to show you everything you need to make the recipe. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.

    As you can see the recipe calls for:

    • Salt and pepper.
    • Bay Leaf.
    • Cinnamon stick: this is one of those warming spices that adds to the curry flavor. It is not essential (same for the bay leaf) but an added bonus for a greater depth of flavor.
    • Brown sugar.
    • Lime juice.
    • Fish sauce.
    • Yellow curry paste: this is store bought Thai Yellow Curry Paste. You will find it in the Asian foods section where the coconut milk and coconut cream tins are located.
    • Onion: one large onion that we peel and dice.
    • Coconut milk: this helps to make our creamy curry sauce.
    • Chicken stock.
    • Beef chuck.
    • Potatoes: I like to use baby potatoes when making this recipe. This is so that the smaller ones can be kept whole and the larger ones sliced. They hold up really well when slow cooked and are a great way to absorb some of the delicious yellow curry sauce.

    ๐ŸŒถ๏ธ Curry Garnishes

    Then here are some curry garnish ideas that you may or may not choose to run with:

    • Peanuts: roasted and salted.
    • Cilantro: coriander or cilantro as it is know around the world.
    • Jalapeno.
    • Limes: sliced into wedges and drizzled over the top.
    • Green chili.
    • Beans: these get prepped at the start but added to the curry towards the end of the cook time.

    ๐Ÿ˜‰ Substitutions and Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Vegetables: for an alternative to the green beans you can use other green veggies like spinach or kale. For either of these add in the final 15 minutes (high) or 30 minutes (low), let wilt and stir into the curry. Or use red bell pepper like the Slow Cooker Thai Red Curry Beef (this can be added at the same time as the beans).
    • Potatoes: sweet potatoes can be used in place of the washed potatoes if you wish to make this change. If choosing to do so I would peel and dice (again see the Thai Red Curry Beef) as I use them for that recipe.
    • Protein: if you want to use chicken in place of the beef you can. My recommendation is boneless skinless chicken thighs to give you a juicy yellow chicken curry.
    • Herbs: I like to use fresh coriander (cilantro) to garnish the dish. You can also, however, remove the stems, finely chop some of the leaves and stir these into the curry if the final stage of the cooking process. If choosing to do so I would recommending adding a tablespoon.
    • Beef stock: you can use beef stock (beef broth) in place of the chicken broth if you wish to.
    • Jalapenos: when garnishing you can use either thinly sliced green chili or thin sliced of jalapeno.
    • Nuts: you can use roasted, salted cashews in place of the peanuts. Or omit the nuts completely.

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Slow Cooker Yellow Curry

    To make the slow cooker yellow curry with beef we start by preparing the vegetables.

    ๐Ÿณ Instructions

    You will need a sharp knife and cutting board for the prep work.

    • Dice the onion (Photo 1)
    • Prepare the potatoes (Photo 2)
    • Chop the green beans (Photo 3)
    • Slice the beef (Photo 4)

    • Add beef, Thai curry paste, salt and pepper (Photo 5)
    • Add onion, potatoes, coated beef (Photo 6)
    • Remaining ingredients (Photo 7)
    • Add the cinnamon stick and bay leaf (Photo 8)

    Next add the diced beef, salt, black pepper and yellow curry paste to the slow cooker insert. Stir till the beef is fully coated by the curry paste then use a wooden spoon to transfer it out of the slow cooker and into a bowl (temporarily).

    Once done add the diced onion, potatoes and coated beef back to the slow cooker (layer these as such).

    Then pour in the chicken stock, coconut milk, fish sauce, lime juice and brown sugar. You will see what this will look like in the photos above.

    Then pop the bay leaf and cinnamon stick on top.

    When these steps are done, put the slid on the slow cooker and turn the timer and temperature to high for 4 hours or low for 8 hours.

    • Cook then stir (Photo 9)

    After 3 hours on high or 6 hours on low, remove the lid and use a wooden spoon to gently stir the curry. It will look like the photo above at this point.

    Next add the green beans like you see in the photo below.

    After adding the beans put the lid back on and let the curry cook for a final hour on high or 2 hours on low.

    Once the cook time is up, remove the lid and get ready to plate it up ๐Ÿ˜Š๐Ÿ‘.

    ๐Ÿฝ Serving Suggestions

    When it comes to serving your yellow curry, rice is an easy choice. I like to use my Microwave Coconut Rice and that is what you see throughout the photos and video in this post. Some other options are long grain white rice, Jasmine rice, basmati rice, cauliflower rice or brown rice. Or go for naan bread that will absorb the wonderful flavor of the sauce.

    Garnishing curries can be great fun too and you have plenty of options like chili slices, cilantro, peanuts and or lime wedges. Simply portion into individual servings and let the whole family add their own bits and pieces.

    ๐Ÿ‘ How to Guide

    How To Store

    Let the curry fully cool. Once it has, portion it into an (or multiple) airtight container and place into the fridge. These leftovers can be kept for 3 days and need to be reheated before being consumed.

    How To Freeze

    Or to freeze the curry, do the step above so that it is portioned into containers. Then stack these in the freezer. These portions can be frozen for 3 months.

    How To Reheat

    For refrigerated portions of the dish, transfer them to a bowl and cover with cling wrap. Reheat in the microwave on high for 2-3 minutes until warmed through. For frozen portions, let them thaw during the day then reheat in the microwave following the step above, adding an extra minute or so until they are warmed through.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Browning the meat: you will see that I don't brown the meat before adding it to the slow cooker. I find for many recipes it is an unnecessary step that takes extra time, effort and cleaning up. If you wish to you can, however.
    • Spray oil: I like to spray the slow cooker insert with cooking oil. Whilst not an essential step I find that it helps to ensure that the curry paste sticks to the beef in the initial stages of the cooking process as well as making the ceramic bowl easier to clean.
    • Beans: you will notice that we don't add the green beans to the curry until the final part of the cooking process. This is because their cook times varies significantly to the beef and potatoes and we don't want them to get mushy. So add them in the final hour (high) or the final 2 hours (low).

    Can you slow cook yellow curry?

    Yes, you can use the slow cooker to make yellow curry. Doing so ensures juicy, melt in your mouth meat with a flavor packed curry sauce.

    Do you cook meat before adding to curry?

    If you are using the slow cooker to make curry you can skip the step pf browning the meat to start with. If however, you are making your curry on the stove top browning the meat would be one of the first steps to take.

    How to spice up yellow curry?

    If you want to add more spice to yellow curry you can garnish it with slices of freshly chopped green or red chili.

    Ingredients

    • 500 grams/1.1 lb beef chuck diced into small one to two bite size pieces, Note 1
    • ยผ teaspoon salt
    • ยฝ teaspoon black pepper
    • ยผ cup Thai Yellow Curry Paste Note 2
    • 1 large brown onion peeled and diced
    • 1 kg/2.2 lb baby potatoes Note 3
    • 400ml/14 oz coconut milk
    • 1 cup/250 ml chicken stock
    • 2 tablespoons fish sauce
    • 1 tablespoon lime juice
    • 1 tablespoon brown sugar
    • 1 cinnamon stick
    • 1 bay leaf

    Instructions

    • Beef and curry paste: spray the slow cooker insert with olive oil. Then add the diced beef, salt, pepper and yellow curry paste. Use a wooden spoon to stir until the beef is consistently coated and then use the wooden spoon to remove the beef and place in a bowl (temporarily).
    • Onion, potatoes and beef: next sprinkle the diced onion into the slow cooker across the base of the insert. Then add the potatoes and transfer the coated beef back in as a layer on top.
    • Liquids and sugar: next pour in the chicken stock, coconut milk, fish sauce, lime juice and then sprinkle the sugar over the top.
    • Cinnamon and bay leaf: put the cinnamon stick and bay leaf on top of the other ingredients, towards the middle of the dish.
    • Cook: then put the lid on the slow cooker and set the timer and temperature to either 4 hours on high or 8 hours on low. In the final hour (high heat) or 2 hours (low heat) remove the lid, add the green beans (no need to stir) then put the lid on and let the curry cook till the time is up.
    • To serve: spoon the curry into bowls with rice and garnish with chili slices, cilantro leaves, lime wedges and roasted peanuts (optional).

    Notes

    • Note 1 - Beef:ย I like to use beef chuck for the recipe. It comes in a fillet and you then need only slice it into one to 2 bite size pieces. If you want more protein and less carbs you can double the amount of beef and reduce (by half) the amount of potatoes used.ย 
    • Note 2 - Thai Yellow Curry Paste: you will find the curry paste in the Asian aisle of the supermarket. It will be with the coconut milks, creams and other curry pastes like red and green. It is an easy option as you don't have to make your own curry paste from scratch and a jar will set you back around $4.ย 
    • Note 3 - Potatoes: I like to use baby potatoes for the recipe. Some can be kept 'whole' and some (the larger ones) sliced in half or quarters. Or you can cut them into smaller pieces. No need to peel the potatoes.ย
