    Slow Cooker Sausage And Potato Soup is creamy, comforting and delicious! Super easy to make with a base of tender potatoes and your favorite sausages this soup will win hearts and fans. There is minimal prep work involved, no browning needed and a satisfying set and forget method whilst the soup cooks itself.

    ๐Ÿค Slow Cooker Sausage And Potato Soup

    I have summarised everything that you will come to know and love (LOVE โค) about this slow cooker sausage soup recipe in the points below:

    • Set and forget.
    • Non same, same as every other soup recipe.
    • Comforting and delicious: is there anything better than a piping hot bowl on soup of those chilly days where the wind gets through to your bones! Nope, I don't think so either.
    • Freezer and kid friendly: how good is it to cook one meal that the whole family can enjoy. This soup is one of those loved by all ages recipes that won't have you making 3 different meals just to get one dinner on the table.

    ๐Ÿฅ— Ingredients

    The photo below is to show you everything you need to make the crock pot sausage potato soup. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.

    As you can see the recipe calls for:

    • Italian herbs.
    • Garlic.
    • Onion.
    • Salt and pepper.
    • Worcestershire sauce.
    • Creamed corn.
    • Corn kernels.
    • Pork Sausages: you can use your favorite sausages be they beef, chicken or smoked sausage. I like to use simple pork sausages or sometimes fancy Italian sausage.
    • Potatoes: my recommendation is to use red potatoes and leave the skins on. This gives the potatoes an extra layer of texture which is great with the contrasting ingredients in the recipe.
    • Chicken stock.

    Extra Ingredients

    We then also have a couple of finishing touch ingredients. These get added towards the very end stages of the cooking process and they are:

    • Thyme leaves.
    • Heavy cream: this ingredient can cause funny results in the slow cooker. For that reason, we add it right at the end after we have blitzed some of the soup. This way it provides creaminess but doesn't curdle.
    • Red capsicum.

    ๐Ÿ˜‰ Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Vegetables: you can add fresh kale when adding the red capsicum/bell pepper. Or you can use kale in place of it if you wish to. Green beans can also be added if you want another robust vegetable.
    • Herbs: I like to use fresh thyme leaves for garnish. Equally you could use fresh parsley or chives (finely chopped).

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Slow Cooker Sausage And Potato Soup

    To make the soup, we start by prepping all of our ingredients. You will need a knife and cutting board to begin.

    Step by step instructions 1 to 4

    ๐Ÿณ Instructions

    • Dice the onion (Photo 1)
    • Remove the casings and chop (Photo 2)
    • Dice the potatoes (Photo 3)
    • Add the potatoes and sausages (Photo 4)

    Peel the skin and dice the onion to begin. Then use a sharp knife and remove the casing (skin) from each sausage. Once done dice the potatoes into chunky pieces.

    From there lightly grease the slow cooker insert with cooking spray then start layering. The order doesn't matter too much, however, I like to start with onion, then the potatoes followed by the chunky sausage meatballs.

    Step by step instructions to 8
    • Add the chicken broth (Photo 5)
    • Add the corn, creamed corn, salt and pepper (Photo 6)
    • Next add the Worcestershire, garlic and dried herbs (Photo 7)
    • Put the lid on and cook (Photo 8)

    Next add in the chicken stock, corn kernels, creamed corn, Worcestershire sauce, garlic, dried Italian herbs, salt and pepper.

    Once you have done that, put the lid on and set the timer and temperature to either 4 hours on high or 7-8 hours on low.

    We now let the soup cook.

    If using high temperature cook it for 3 ยฝ hours to begin. If using low temperature cook it for 7 hours.

    At some point during this time, dice the capsicum (pepper) like you see below. We remove and discard both the stem and the seeds.

    Step by step instructions 9 to 12
    • Dice the capsicum (Photo 9)
    • Blitz some of the cooked soup (Photo 10)
    • Add the cream and combine (Photo 11)
    • Add the capsicum and combine (Photo 12)

    Next, we want to remove the lid of the slow cooker and use a hand held immersion blender to blitz some of the soup. We do this to add thickness to the soup but we only blitz some as to still have the chunky texture from all of the different ingredients in the rest of the soup.

    Now we pour the cream into the slow cooker and gently stir to combine.

    After that we add the chopped capsicum and stir again to combine.

    You can leave the soup for the final 30 minutes (high) or hour (low) which let the cream heat through and capsicum soften. Test, when ready to ensure you are happy with the capsicum texture, then get ready to portion and serve.

    ๐Ÿฝ Serving Suggestions

    I like to garnish the soup with fresh thyme leaves. They add a lovely aromatic touch which compliments the flavors of the potato and sausages.

    Cracked black pepper is also a nice finishing touch and I also love to toast some dark rye bread, butter it a little and pop it on the plate for dipping and dunking.

    You can of course also dollop a little sour cream or Greek yogurt on top if that's the way you like to serve your soup.

    Other bread pairings to try are the Tortilla Garlic Bread, Turkish Garlic Bread, Garlic Ciabatta or the Garlic Pizza Bread.

    ๐Ÿ‘ How to Guide

    How to Store

    Once cooled, portion the soup into a sealed, air tight container (or multiple). These can then be stacked in the fridge and consumed within 3-4 days.

    How to Freeze

    Or do the above across multiple containers and then stack them in the freezer.

    How to Reheat

    Transfer refrigerated soup to a bowl, cover with cling wrap and heat on high in the microwave. They will take 2-3 minutes to warm through. Give the soup a stir in the middle during this process to ensure that it is heated through.

    Or for frozen soup, let this thaw during the day in the fridge. Then reheat following the step above. Test to ensure the full bowl is heated through or reheat for an extra minute or so until it is.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Cooking spray: I do give the slow cooker insert a light spray with cooking oil. Across the base and up the sides to make sure nothing sticks.
    • Blitzing: we blitz some of the soup (about ยผ of the whole) once it has cooked before adding the cream. This helps to thicken it without extra ingredients or making a slurry with corn starch.
    • Cream: this gets added in the last hour of cooking (low heat) or 30 minutes (high heat). If you try and add it at the start, it will curdle due to the heat and long cook time.
    • Capsicum: as per above, adding the diced capsicum (pepper) at the end allows it to have a firmer texture than if we cooked it the whole time. Doing that would make it mushy which we want to avoid to keep a little crispness to it.

    Do you have to cook sausages when making soup?

    You do have to cook sausages when making soup. However, you don't need to brown them if you are making the soup in the slow cooker. Skipping this step saves time as well and ensuring a quick clean up of just the slow cooker insert.

    Can raw onion be added to the slow cooker?

    Yes, it can. There is no need to sautรฉ the onion o the stove top before adding it to the slow cooker.

    Do you have to boil potatoes before putting them in a slow cooker?

    No, you don't have to boil potatoes before putting them in the slow cooker.

    What is the secret ingredient in potato soup?

    Adding cream towards the end of the cooking time is a secret trick to ensuring your potato soup is thick, creamy and delicious.

    Equipment

    • Slow Cooker mine is 6.5 L

    Ingredients

    • 500 grams/1.1 lb red potatoes skin on, diced
    • 500 grams/1.1 lb pork sausages casings removed, chopped into chunky pieces, Note 1
    • 1 large brown onion skin peeled and diced
    • 4 cups/1 litre chicken stock
    • 400 grams/14 oz corn kernels drained and rinsed
    • 400 grams/14 oz creamed corn Note 2
    • 1 tablespoon garlic chunky, chopped
    • 2 tablespoons Worcestershire sauce
    • 1 teaspoon dried Italian herbs
    • ยฝ teaspoon salt
    • ยฝ teaspoon black pepper

    After the initial cook time

    • 1 cup/300ml heavy cream Note 3
    • 2 medium red capsicum

    To serve

    • thyme leaves

    Instructions

    • Slow cooker insert: lightly grease the base and sides of the slow cooker insert with cooking spray.
    • Primary soup ingredients: add the diced onion, chopped potatoes and chunky sausage pieces. Then add the corn kernels, creamed corn, chicken broth, Worcestershire sauce, garlic, Italian herbs, salt and pepper.
    • Cook: put the lid on and set the timer and temperature to either 4 hours on high or 7-8 hours on low. Let cook till there is 1 hour of cook time remaining.
    • Secondary soup ingredients: remove the slow cooker lid and use a stick blender to blitz about ยผ of the total soup. Then pour in the cream and stir to combine. Next add the chopped capsicum and gently stir to fold in. Let the soup cook for a further 30 minutes (high) or 1 hour (low) to warm the cream and let the capsicum cook. Note 4
    • To serve: garnish with fresh thyme leaves and cracked black pepper.

    Notes

    • Note 1 - Sausages: I like to use pork sausages or Italian sausages. In either case (or with he sausages that you choose to use) there is no need to brown them 1st. We do remove the casing (skin) and roughly chop the sausages so they are like little meatballs.ย 
    • Note 2 - Creamed corn: this gets added as is. Simply open the tin and pour the whole contents in the slow cooker.ย 
    • Note 3 - Cream: Cream at most major supermarkets in Australia (Woolies/Coles and Aldi) sell cream in either 300ml (just over a cup) or 600ml (just over 2 cups) sizes. I use the 300ml size and use the whole thing. The technical measurement is '1 cup' but its also 1 cup plus a wee little bit more.ย 
    • Note 4 - Second cook time: after adding the cream and capsicum, the soup will warm through and cook the capsicum quickly. You don't have to cook it for the full 3o minutes to an hour. Taste it after about 5 minutes and if the capsicum is cooked to your liking, it is done or cook it a little longer until it is.ย 
    • Note 5 - Serving size: easily 4 dinner sizes. 6-8 if serving smaller for lunch size.ย  Serve with toast and or a garden salad if you wish to.ย
