As you can see the recipe calls for:
- Butter: we want to use unsalted butter as we use salt as a separate ingredient when making the sauce.
- Garlic: I like to use chunky chopped garlic as it is convenient. You can also use 2 fresh garlic cloves finely chopped or minced garlic.
- Salt: is used to give a depth of flavor to the homemade alfredo sauce.
- Parsley: the chopped parsley gives the pasta a herby freshness as well as adding a few pops of colour here and there.
- Parmesan cheese: one of the key ingredients in the alfredo sauce! Finely grated using a micro plane zester is best. Or you can use store bought pre grated cheese for the convenience.
- Cream: this forms the basis of the creamy pasta sauce.
- Fettuccine: a long pasta with a flat wide appearance. Very similar to linguine, albeit a bit broader. We simply cook according to package directions.
- Tuna: my recommendation is to use tuna in springwater. Whilst we discard the liquid, using springwater and not tuna in olive oil ensures that we are not adding excess oil to the alfredo sauce.

Here are the step by step instructions to make the recipe. We start by making the sauce. You will need a large sautรฉ pan to begin with.

๐ฉโ๐ณ How to Make Fettuccine Alfredo With Scallops
To make the fettuccine alfredo with tuna we start by making the creamy homemade alfredo sauce. To do this simply place a large saute pan on the stove top, turn the heat to high and add the butter. Let it melt then add the garlic and salt and sautรฉ for about 1 minute.
Once done turn the heat down and then add the cream and parmesan cheese to the pan. Use a wooden spoon to stir gently and combine.

Next place a large sauce pan onto the stove top, bring salted water to the boil and cook the pasta according to the packet instructions.
When the pasta is al dente (cooked with a little bite to it) use a heatproof mug to scoop out some of the pasta water. Then use a colander over the sink and drain the rest of the water.
- Reserve pasta water (Photo 3)
Next add the cooked pasta to the alfredo sauce. You can see what this will look like in the photo below.

Then measure and pour in ยฝ cup of the reserved pasta water.
Followed by the drained tuna like you see in the photo below.

Sprinkle in the parsley and then use a pair of tongs to gently toss and combine.
To finish season the tuna pasta with black pepper and grate a little bit more parmesan cheese over the top.

- You can use a different type of pasta if you wish to. Some good options are linguine, spaghetti, penne or rigatoni.
- If you want to put your own twist on the dish you can try adding some capers. Simply drain (don't rinse) and add at the same time as the tuna so they get tossed throughout. Frozen peas offer an alternative.
- If you would like to add a splash of white wine to the sauce you can. Do this when sautรฉing the garlic and salt. I would use 2 tablespoons at most. For a non wine option you can use the equivalent amount of white wine vinegar.

Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:
- The tuna is already cooked. We are not cooking it so to speak, we are simply heating it through.
- I recommend draining the tuna to remove the excess lid from the tin but there is no need to rinse it. Doing so washes away some of the flavor.
- Cans of tuna are SO handy to have in the pantry! They can quickly turn into a spectacular recipe with the addition of a few complimentary ingredients.

Fettuccine Alfredo With Tuna
Ingredients
- 2 tablespoons/40 grams butter unsalted
- 1 tablespoon garlic chunky chopped or minced
- ยฝ teaspoon salt
- 1 cup/250 ml heavy cream
- 1 cup parmesan cheese finely grated with a micro plane zester
- 425 grams/15 oz tuna in springwater, drained
- 500 grams/16 oz fettuccine
- ยฝ cup/125ml reserved pasta water
- โ cup parsley stems removed, finely chopped
To serve
- black pepper
- parmesan cheese
Instructions
- Alfredo sauce: place a large sautรฉ pan on the stove top, turn the heat to high and add the butter. Let this melt then add the garlic and salt and cook for around 1 minute. Next turn the heat down to low, pour in the cream, use a wooden spoon to stir then add the cheese and continue to stir until melted and combined.
- Cook pasta: cook the pasta in a large saucepan of boiling salted water according to the packet instructions. When it is al dente (a little bit chewy) reserve some of the pasta water then use a colander over the sink to drain the pasta and discard the rest of the water.
- Combine: add the drained pasta to the alfredo sauce, pour over the reserved pasta water and use a pair of kitchen tongs to toss. Next add the drained tuna, followed by the chopped parsley and continue to toss until consistently combined.
- To serve: portion the tuna alfredo onto plates. Season with black pepper and give them a sprinkle with parmesan cheese.
