- Salt and pepper: a little of each for seasoning.
- Garlic powder: a wonderful versatile powder to have in the pantry. It works well for so many recipes!
- Onion powder: a partner in crime to the garlic powder. These 2 tend to dry out if you have them in the cupboard yet don't use them regulalry so check the bottle before you head to the shops to ensure they will be good to use.
- Paprika: you can use either smoked or hot paprika, whichever one you already have in the cupboard to make things easy.
- Dried parsley: we use dried parsley as a herb in the mixture. This gives the seasoning an added boost and a little pop or 2 of colour.
- Parmesan cheese: the cheese gives the breadcrumb mixture an extra touch of flavour. Finely grated with a micro plane zester is the best type to use.
- Flour: flour is one of the 3 key steps in the dredging process. It is plain flour, also known as all purpose flour that we need not self-raising or self-rising flour.
- Eggs: free range is always best when it comes to eggs! We crack these into a small bowl and whisk them. These are the glue that holds the crispy coating onto the mushrooms.
- Panko breadcrumbs: bright white and crunchy, these breadcrumbs are popular in Japanese cooking. You will find them in the Asian foods aisle of the supermarket.
- Mushrooms: I like to use white button mushrooms or cap mushrooms for this recipe. They work well, are usually a similar size so they will cook for the same time each and are juicy and delicious when air fried.

Here are the step by step instructions to make the recipe. We start by making the breadcrumb seasoning mixture.

👩🍳 How to Make Air Fryer Breaded Mushrooms
To make the breaded mushrooms in the air fryer, start by gathering the ingredients for the panko seasoning.
Add the panko breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, dried parsley, salt and pepper to a small bowl and use a mini whisk to stir until they are consistently combined.
Next set up the dredging station with the flour in one bowl, then the egg wash (beaten eggs), followed by the seasoned breadcrumb mixture. You can see what this will look like in the photos above.

Next, you want to start the process of coating the mushrooms.
Firstly put them in the flour, then move them to the whisked eggs, followed by the breadcrumb mixture. You can work 1 at a time till you get the hang of it or add more to the mix as you get used to the process and want to speed things up.
Keep going until all of the mushrooms are breaded and they will look like the photo below.
- Repeat the process for all mushrooms (Photo 6)
Once the mushrooms are all covered by the crumb mixture, it is time to air fry them.
They will work both in a basket style air fryer or an air fryer with the wire racks. If your appliance needs pre heating you can do that or simply set the time for 6 minutes to begin and pop them in. For best results ensure they are in one flat layer.
- Cook the mushrooms for 6 minutes, then repeat for another 6 mins (Photo 7)
Start with the intial 6 minutes of cook time, then once that is up, use an oven mitt to remove them and rotate them on the tray or basket. Then return them to the air fryer and let them cook for a further 6 minutes.
The total cook time for the mushrooms is 12 minutes. However, as air fryer models can vary a bit, it is best at the end of this time to test one to ensure you are happy or continue to cook them for a further minute or so to really get the crumb to dry and crisp up.
🍽 Serving Suggestions
When it comes to serving your mushrooms, you are going to want a sauce! The Herbed Yogurt Sauce is shown in the photos throughout the post and a great choice.
Some alternatives to this are the Cilantro Lime Yogurt Sauce, Lemon Yogurt Sauce, Parsley Yogurt Sauce or the Basil Yogurt Sauce.
For sauce that is bold in flavor try the Gorgonzola Sauce, Horseradish Yogurt Sauce, Mustard Yogurt Sauce or the Spicy Yogurt Sauce.

To store leftover breaded mushrooms add them to a airtight container and place them in the fridge for 2-3 days. These leftovers then need to be reheated before being consumed.
How to Freeze
To freeze the breaded mushrooms, ensure that they have been cooked and cooled. Then portion into zip lock bags and push down to remove any excess air. Seal and then lay flat in the freezer for up to 3 months.
How to Reheat
Place refridgerated leftover mushrooms back onto the wire rack of the air fryer or into the basket. Reheat on high heat for 4-5 minutes until the crumb is crisp and the insides of the mushrooms are warmed throughout.
For frozen mushrooms, these are best reheated from frozen (not thawed 1st). Opt for placing them into the air fryer on high for 6 minutes to start, then rotate and cook for another 10-12 minutes until they are warmed through. Check them as they cook as some models of air fryer will cook them faster than others.
Note: whilst you can reheat the mushrooms in the microwave they will warm but the crumb won't crisp up again. Something to consider if you want the best results.
😉 Substitutions and Variations
Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:
- You can use plain bread crumbs (equivalent amount) in place of the panko bread crumbs in you wish too.
- If you want an alternative dried herb to the parsley, try dried basil, thyme or oregano. Or use Italian seasoning which is a combination of these dried herbs.
- Or another idea is that you can use 1 tablespoon of chopped fresh parsley in place of the dried herbs if you prefer to.
- For a little heat use cayeene pepper as a substitute for the paprika.
💡 Tasty Tips
Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:
- Start working 1 by one with the dredging but when you get the hang of it, try and do multiple mushrooms at once. This will speed up the process and get them ready to cook faster.
- You can give the mushrooms a spray with olive oil or cooking spray if you wish too before putting them in the air fryer (optional step).
- If you are not looking to cook the mushrooms straight away once breaded, you can place them into the fridge until you are ready to cook them.
- You can use pecorino romano in place of the parmesan cheese if you wish too. It is a milder cheese made from sheep's milk with a sweeter flavor to the parmesan which some people prefer.
- Larger mushrooms will take longer to cook. So try and opt for button mushrooms or white mushroom caps that are on the smaller size.
- The mushrooms will cook best in a single layer. So whilst the temptation might be there to stack them in the air fryer basket, you will get the best results from spreading them out a little.

Air Fryer Breaded Mushrooms
Ingredients
- 2 cups panko breadcrumbs Note 1
- 1 cup parmesan cheese finely grated using a micro plane zester, Note 2
- 1 teaspoon garlic powder Note 3
- 1 teaspoon onion powder Note 4
- 1 teasppon smoked paprika Note 5
- 1 teaspoon dried parsley Note 6
- ½ teaspoon salt Note 7
- ½ teaspoon pepper also Note 7
- 1 cup plain flour Note 8
- 4 large eggs free range, whisked, Note 9
- 4 cups white mushrooms Note 10
Instructions
- Seasoning: add the panko breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, dried parsley, salt and pepper to a small bowl and use a mini fork to whisk it consistently together then set it aside.
- Dredging: set up 3 bowls alongside each other. In the 1st have the plain flour, the 2nd the beaten eggs and the 3rd the seasoned breadcrumb mixture. Start with 1 mushroom and coat it in the flour, then transfer it to the egg mix, once done, place it into the breadcrumbs and toss to ensure it is fully coated. Once each step has been completed transfer the breaded mushroom to a chopping board and repeat this process for all mushrooms.
- Air fryer: place the breaded mushrooms on the wire rack of the air fryer or into the air fryer basket, Cook on high heat (180 degrees, 356°F) for 6 minutes, then remove, rotate and cook for a further 6 minutes. The total cook time will be round 12 minutes.
- To serve: use a pair of tongs to transfer the cooked mushrooms onto a plate and serve with sauce. Garnish the plate with chopped parsley (optional).
