As you can see the recipe calls for:
- Salt and pepper: for seasoning the beef.
- Egg: to help bind the filling ingredients together.
- Onion: for flavor and texture.
- Pickles: is it even a cheeseburger without pickles ๐.
- Mustard: we want to use smooth all American mustard.
- Ketchup: to ensure that the filling tastes like a 'cheeseburger'. We also use additional tomato sauce for serving.
- Panko breadcrumbs: ensure that the sausage rolls don't dry out.
- Beef mince: beef mince, also known as ground beef for the primary ingredient in the filling much like an 'all beef patty'.
๐ฅง Sausage Roll Pastry
We also need:
- Egg: this gets uses an egg wash to brush the sausage rolls with before we bake them.
- Puff pastry: is our go to pastry for wrapping around the filling.

Here are the step by step instructions to make the recipe. We start by preparing the pickles and onion. You will need a food processor for this initial step.

๐ฉโ๐ณ How to Make Cheeseburger Sausage Rolls
To make the cheeseburger sausage rolls add the beef mince, salt, pepper, panko breadcrumbs, ketchup, mustard and egg to a medium sized mixing bowl.

Next use clean hands to combine the beef mixture until the filling is consistently mixed like you see in the photo below.

Next crack the egg into a small bowl and whisk then set aside.

Once the egg is ready, we can start on filling the pastry with the beef mince mixture.
To do so simple place one thawed sheet of pastry onto a clean, dry chopping board and ensure it is spread out in the shape of a long log.
- Add the filling to the pastry (Photo 5)
Next roll the pastry around the mince mixture to encase the filling.
Leave an overlap so that there will be a 'base' to the sausage rolls where 2 layers of the pastry are on top of each other.

Once done use a basting brush and the egg mixture to seal the base and overlap of the pastry.

Gently push down to ensure that the sausage roll is sealed, with no exposed filling and a base that overlaps itself.
- Trim the excess pastry (Photo 8)
Use a knife to trim the excess pastry and then cut the longer shape into individual portions like you see in the photo below.
- Cut the sausage rolls into pieces (Photo 9)
Now we want to spread the individual sausage rolls out using 2 silicon mat lined baking trays.

Once done use the basting brush to cover the top of each sausage roll with the egg wash (its ok if some of this slips down the side of the pastry too).

Now that the steps are all set and done, you can place the 2 trays into the preheated oven and bake the sausage rolls for 25 to 30 minutes.
Once they are cooked with the pastry looking crisp and golden brown, we can use oven mitts to remove the 2 trays from the oven and place on a heatproof surface to cool before moving them to a wire baking rack.

It's a sausage roll party! When it comes to serving your cheeseburger sausage rolls you will want a sauce to go with them.
Tomato sauce (ketchup) seems the obvious choice, but you can stretch this to barbecue sauce if you prefer it. Or have a small bowl of both on the table.
Extra mustard will work too if you want to have that on hand for cheeseburger lovers who enjoy the tang.

How to Store
After you have removed the sausage rolls from the oven let them cool for 5-10 minutes. Once cooled, gently remove them from the silicon baking mat and place them onto a wire cooling rack.
How to Freeze
Once the sausage rolls have cooled, you can portion them into zip lock bags, push the air out and seal. These can then be stacked in the freezer and kept in there for up to 3 months.
How to Reheat
To reheat refrigerated leftovers place them into the oven and warm for 10 to 15 minutes. Or place the sausage rolls into the air fryer and heat for 3-5 minutes until the filling feels hot to the touch again.

Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:
- When it comes to adding cheese to recipes sometimes it will ooze out so much that there will be more cheese on the outside than in! These cheeseburger sausage rolls take on the flavour profile of a humble cheese burger without having messy results and a cheese covered baking tray. You won't notice the difference with cheese in the mix or not.
- If you insist you can add a โ cup of shredded cheese to the burger filling (cheddar cheese or colby cheese are both good choices). Be sure to mix this in well (not have as a separate layers or layer of cheese slices as a means to avoid the cheese sliding out of the pastry).
- Option to add a teaspoon of garlic powder and a teaspoon of smoked paprika to the beef mince mixing for additional seasoning.
- I like to keep these sausage rolls plain without sesame seeds much like a brioche burger bun. You can however, sprinkle some sesame seeds or everything bagel seasoning on top of the egg wash before putting the sausage rolls into the oven. (If you wish to)

- The puff pastry will take a little while to thaw. So grab it out of the freezer as a starting point so that it will be ready to use when the time comes.
- Preheat the oven from the start so that it will be read to go once the sausage rolls are made.

Cheeseburger Sausage Rolls
Ingredients
Filling
- 1 small onion Note 1
- 1 cup pickles drained, not rinsed, Note 2
- 500 grams/16 oz beef mince
- ยผ teaspoon salt
- ยฝ teaspoon black pepper
- ยฝ cup panko breadcrumbs Note 3
- โ cup ketchup
- ยผ cup mustard
- 1 medium egg free range
Pastry
- 4-5 sheets puff pastry thawed
- 1 medium egg free range, whisked
To serve
- ketchup
Instructions
- Preheat the oven:ย preheat the ovenย to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
- Onion and pickles: peel the onion then use a knife and cutting board to quarter it. Place the onion quarters and pickle slices into the food processor and blitz for 2-3 seconds to combine. Remove the slide and use a spatula to scrape down the insides of the bowl then put the lid back on and blitz for a further 2-3 seconds.
- Filling: add the beef mince, salt, pepper, panko breadcrumbs, ketchup, mustard and egg to a medium sized mixing bowl. Use clean hands to thoroughly combine.
- Egg: crack the egg into a small bowl and use a mini fork to whisk, then set aside.
- Pastry: working one sheet at a time place a thawed sheet of puff pastry onto a clean, dry cutting board. Spoon a long shaped amount of the beef mixture along the edge of one side of the square. Next roll the pastry so that it covers the filling and use a basting brush to brush egg wash on the base of the pastry. Push gently down to seal the sausage rolls (slight overlap at base) then cut each long roll into 6 smaller portions. Note 4
- Baking tray: spread the individual sausage rolls out across 2 silicon mat lined baking trays. Use a basting brush to coat the top of each sausage roll with the egg wash.
- Oven bake: place the 2 baking trays into the oven and cook the sausage rolls for 30 minutes rotating the top and bottom positions of the tray at the half way point.
- To serve: once the cheeseburger sausage rolls are cooked, use oven mitts to remove the baking trays from the oven and place them onto a heatproof surface. let them cool for 5-10 minutes and then gently transfer them to a wire rack. Serve with ketchup.

Notes
- Note 1 - Onion: all we need to do is peel the skin, quarter it then add it to the food processor bowl with the pickles. The food processer will work its magic to perfectly dice it.ย
- Note 2- Pickles: I like to use 'burger pickles' these are sliced already and can simply be thrown on a cheeseburger, hamburger etc. Once combined with the diced onion they are an oniony pickle dream! Like the perfect cheeseburger condiment.ย
- Note 3- Panko Breadcrumbs: I increase the amount of panko breadcrumbs used compared to some of my other sausage roll recipes to allow for the extra moisture from the ketchup and mustard.ย
- Note 4 - Cutting the long rolls: in the video you will see that I do this with dental floss. This is a trick to ensuring very smooth cuts on either side of the sausage rolls. You can do the same or simply use a sharp knife. If the knife is too blunt you will end up with message edges.ย
