    This 4 ingredient rocky road is a quick and easy chocolate recipe. Using simple ingredients and a melt and mix method we whip up this much loved chocolate treat. This easy rocky road can be your go to for sweet treats, gift giving, festive baking and more!

    As you can see the recipe calls for:

    • Coconut: this is dessicated coconut. The short white most popular form of coconut. You will find it in the cooking aisle where the food colouring and sugars are.
    • Crushed nuts: sometimes called granulated nuts. These will be where the dried fruits and nuts are in the cooking section also. They are handy as they require no prep work and can simply be added to the mixing bowl.
    • Marshmallows: soft and fluffy these white and pink marshmallows smell and taste amazing. We need to slice them in halves.
    • Milk chocolate: I always recommend using cooking chocolate when using chocolate in the kitchen. It melts perfectly for baking which many popular brand names of don't. Eating chocolate is best for snacking not cooking.

    Tasty Tip: I like to provide you with a number of substitutions and variations giving you an array of options when making the recipe. If in doubt of any of the above ingredients, or wanting alternatives, read this section (further below) before jumping into the instructions on how to make the recipe which are coming next ๐Ÿ˜‰๐Ÿ‘Œ.

    ๐Ÿณ Instructions

    Here are the step by step instructions to make the recipe. We start by preparing the marshmallows. You will need a knife and chopping board for this initial step.

    • Slice the marshmallows (Photo 1)
    • Add them to a bowl (Photo 2)
    • Add the crushed nuts (Photo 3)
    • Add the coconut (Photo 4)

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make 4 Ingredient Rocky Road

    To make the rocky road, start by using a knife and chopping board to slice the marshmallows in halves. Once done add them to a large mixing bowl.

    You can also use this time to line a square cake tin with baking paper. I find 2 sheets overlapping with a 1-2 inch (3cm) overhang works best. Also using a little butter in the tin will help as the paper will 'stick' in place.

    Then add the crushed nuts and coconut to the bowl also as shown in the photos above.

    • Melt the chocolate (Photo 5)
    • Add it to the fillings (Photo 6)
    • Stir to combine (Photo 7)
    • Transfer the rocky road into the tin (Photo 8)

    Next use the microwave to melt the chocolate. To do so add the milk chocolate melts to a large microwave safe jug.

    Then place the chocolate into the microwave and melt it on high for 1 minute. Then remove and stir. Place it back into the microwave for a further minute then remove and stir again. Then return the chocolate to the microwave for 1 further minute. The total time needed to melt the chocolate is 3 minutes.

    Once it is melted pour it into the bowl with the fillings as you see me doing in the photo above.

    Then use a spatula to stir until the mix is consistently combined. When it is, use the spatula again to transfer the wet rocky road into the prepared tin and then place the rocky road into the fridge and let it set.

    I find 1 hour is usually enough so that it has a chance to set and will hold its own and not crack when slicing it.

    ๐Ÿฝ Serving Suggestions

    Everyone will have their own special way of indulging in a piece of this fabulous homemade chocolate. I don't need in this instance to tell you what to do ๐Ÿ˜‰๐Ÿ‘Œ.

    The only point that I will convey in this sense is that if you use a square tin, you can then grab the paper overhang, lift the rocky road up and out of the tin, discard the paper and then cut the square into 4 smaller squares.

    Then cut these squares also into 4 squares. This technique allows you to end up with 16 pieces of rocky road. Using a rectangular tin is fine, but doesn't allow you to know from the get go how many pieces you will have.

    How to Store

    Store the rocky road in a sealed, airtight container in the fridge. It can be kept for 2-3 weeks.

    ๐Ÿ˜‰ Substitutions and Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • You can use mini marshmallows if you prefer to. These don't require any chopping.
    • If you want to use whole peanuts in place of the granulated peanuts you can.
    • If you want to use white chocolate or dark chocolate in place of the milk chocolate you can.
    • You can use shredded coconut (long strands) in place of the desiccated coconut if you wish to.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Line your cake tin or slice tray with 2 overlapping sheets of baking pepper. This will make it easy for you to grab the edges and lift the rocky road up and out of the tin when it is set.
    • To help these stick and stay in place so that they don't move when you are transferring the rocky road into the tin use a little butter and grease the pan before adding the paper.
    • When you are microwaving the chocolate use high heat and 1 minute increments. After each 1 minute, remove the chocolate from the microwave and give it a stir before continuing to melt it.
    • You don't have to go flat out, but once the chocolate is melted and combined with the rocky road fillings, work reasonably quickly to transfer it into the pan so that it doesn't start to set.
    • I use boiling water straight away after using melted chocolate in the kitchen ie for the mixing bowl and microwave jug. The hot water melts and dissolves the chocolate making cleaning up a breeze. The longer it sits without being cleaned with an initial rinse, the harder it will be to clean as the chocolate will have set.

    Ingredients

    • 3 cups pink and white marshmallows Note 1
    • ยฝ cup granulated nuts
    • ยฝ cup desiccated coconut
    • 4 cups milk chocolate melts Note 2

    Instructions

    • Marshmallows: use a knife and chopping board to slice each of the marshmallows in halves.
    • Combine: then place the marshmallow halves into a large mixing bowl and add the crushed nuts and coconut.
    • Chocolate: add the milk chocolate melts to a heatproof microwave jug and heat on high for 1 minute increments (3 minutes total) using a chop stick to stir the chocolate after each 1 minute period. Note 3
    • Chocolate and fillings: pour the melted chocolate into the bowl with the marshmallows, coconut and nuts. Stir to combine until the ingredients are consistently mixed together.
    • Cake tin: use a spatula to transfer the wet rocky road into the prepared cake tin. Ensure that the mixture is pushed into each of the corners and even across the top (not flat but evenly distributed).
    • Refrigerate: place the wet rocky road into the fridge and leave for at least 1 hour to set.
    • To serve: once the rocky road has set, remove it from the fridge and place the tin onto a chopping board. Grab the paper at either side of the tin and lift the rocky road up and out. Then pull the paper off and discard. Use a knife to cut the rocky road into pieces.

    Notes

    • Note 1 - Marshmallows: use a knife and cutting board to slice these in halves. Aussies, this is 1 x 280 gram packet of marshmallows and we use them all. Non Aussies, this amount of marshmallows measures approximately 3 cups. If you are not in a marshmallow chopping mood you can use mini marshmallows instead. If you are in a marshmallow chopping mood, you will find it quickest to cut 4-5 marshmallows along the knife edge at the same time. Then you will find it easiest if the knife gets too sticky to use a wet chux and clean it in every so often. Just be super careful near the sharp blade with your hands ๐Ÿ˜‰๐Ÿ‘Œ.
    • Note 2 - Milk chocolate: I always recommend using cooking chocolate, not confectionery chocolate for baking. You can use white chocolate or dark chocolate if you prefer. This amount ie 4 cups is 2 x 280 gram bags of milk chocolate melts.ย 
    • Note 3 - Chocolate: the total time it will take for the chocolate to melt is 3 minutes in the microwave on high. However, we want to break this into 1 minute increments and stir the chocolate with a chopstick after each 1 minute period to make sure that we don't overcook it. When the total cook time is up, give it a bit more of a vigorous stir to ensure that all of the individual melts have melted and been consistently mixed in with the other chocolate.
