As you can see we have:
- Salt and pepper: we use salt and a little black pepper to season the garlic and tomato mixture before we pair it with the brie.
- Thyme: we use a little dried thyme as one of the herbs giving fragrance and flavor in the dish.
- Garlic: fresh garlic cloves are best for this recipe as they bring the flavor and the texture. We use ½ head of garlic.
- Dried onion: saving time peeling and no tears when using. This dried onion is sold in flakes and it will be in the herbs and spices section of the supermarket.
- Olive oil: we use the oil to fry off the garlic and cherry tomatoes before we use them as toppings for the baked brie.
- Brie cheese: we need a 200 gram or 7 oz round wheel of this cheese. It is soft, decadent and all kind ofs of yum.
- Cherry tomatoes: these add another texture to the garlic and bread combination and offer both a sweet and savory addition.
- Crackers: robust crackers that are hard and thick are good for dunking. Thin crackers like wafer style break off mid dunk into the cheese which we want to avoid.
- Rosemary: the 2nd dried herb we use for the recipe. It brings the perfect festive touch to the brie.

🍳 Instructions
Here are the step by step instructions to make the baked brie recipe. We start by preparing the garlic and cherry tomatoes.
- Slice your garlic into thin pieces (Photo 1)
- Use a knife to slice your cherry tomatoes (Photo 2)
- Add olive oil to fry pan (Photo 3)
- Add the sliced garlic (Photo 4)
👩🍳 How To Make Baked Brie With Garlic
To make the recipe start by grabbing the brie from the fridge and unwrapping it.
Next place a large frying pan onto the stove, turn the heat to high, add the olive oil and garlic. Fry the garlic for 1-2 minutes until softened and golden brown. Then add the sliced cherry tomatoes like you see me doing in the photo below.
- Add the sliced tomatoes to the garlic (Photo 5)
- Next add the salt (Photo 6)
- Followed by the pepper (Photo 7)
- Then add the dried onion (Photo 8)
Next add the salt, pepper, dried onion and dried thyme to the tomato mixture. Stir to soften and combine allow the flavors to develop.
- Add the dried thyme to garlic and tomatoes (Photo 9)
- Then score the rind (Photo 10)
- Top the baked brie with some of garlic and rosemary (Photo 11)
- Oven bake the cheese then plate (Photo 12)
Use a knife to score the top of the rind in diagonal marks and put the brie in the centre of a baking dish. Then place a little of the garlic and rosemary onto the top of the brie.
Next place the baking tray into the oven and bake the cheese. It will be ready in around 10 minutes when it feels soft if you gently press the rind from the top.
Use a flat turner to transfer the baked brie onto a serving plate. Then decorate the top of the cheese with the softened garlic mixture and place the tomatoes around the side for garnish and dolloping. Add some crackers on the outside perimeter of the tomato mixture.

To serve the cheese, it is a good idea to have a cheese knife or 2 on the plate. The cheese pull is what everyone will be wanting and craving 🥰😍!!
Sometimes scooping and dolloping is easier than dipping and dunking.
Provide robust crackers that won't break in half and some serviettes to use as plates.

- Get the bigger of the brie cheese size options. Eg if you have 2 to choose from, 100 grams or 200 grams, get the 200 grams (7 ounces). It will shrink down a bit and you want it to be a feature on the plate.
- You can buy a large ½ wheel portion of brie cheese which is huge, if you are feeding an army, purchase this crowd pleasing size so that it can be shared around by everyone.
- Use a smaller platter if you want to do less tomatoes and crackers.
- Add some rosemary leaves for a festive touch.
- Provide a cheese knife so more than 1 person can load their cracker at the same time 😉👍.

Baked Brie with Garlic
Ingredients
- 8 cloves garlic peeled, cut into thin slices, Note 1
- 2 cups cherry tomatoes cut in halves
- 200 grams/ 7 oz wheel brie cheese
- 1 tablespoon olive oil
- ¼ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon dried onion
- 1 teaspoon dried thyme
Garnish (optional):
- fresh rosemary optional to serve
To serve:
- crackers to serve
Instructions
- Preheat your oven: 180°C / 350-375°F / Gas Mark 4-5.
- Sauté garlic and tomato mixture: add oil to a fry pan and bring to a medium heat. Add garlic and fry for 2-3 minutes, then add tomatoes, dried onion, thyme, season with salt and pepper. Reduce the heat and continue to cook until tomatoes are cooked by not mushy (2-3 minutes).
- Bake the brie: line a baking tray with non stick paper and place your brie in the centre. Take a sharp knife and score diagonally in both directions. Top with some of the fried garlic and fresh rosemary leaves. Bake the brie for 8 to 10 minutes using the middle shelf of the oven. Note 2 and 3
- Decorate: spoon out about a soup spoon size of cooked garlic from your tomatoes and place this on top of the rosemary on your scored brie.
- Serve: place brie on centre of serving platter and spoon cooked tomatoes around in an out circle. Spread a circle of crackers around the outside and then add some of the rosemary leaves on top. Provide a cheese knife for serving.
Notes
- Note 1 - Garlic: the garlic can be chunky, don't worry too much about perfect slices (never been my thing), it will soften a lot after being cooked so the harsh taste dissipates.
- Note 2 - Scoring the cheese: the scoring term refers to cutting but not all the way down. So score the cheese only on the top rind. It will be much easier for guests to dip their cracker and get to the delicious brie centre.
- Note 3 Baked brie: the only real way to tell if the brie is baked to the extent we are looking for is to push it with the tip of your finger. It should be soft and give a bit. It is still seems quite firm, bake for another 3 mins. The rind helps the cheese keep its shape. The risk in over cooking it is that it will melted into a big pile of goo if you leave it in the oven too long and that makes it hard to transfer it to a serving platter 😂👍.
