As you can see the chicken drumsticks and potatoes recipe calls for:
- Olive oil: a little olive oil is used in the seasoning. This also helps to crisp up the skin of the chicken should you want to take the step of air frying or grilling the legs prior to serving.
- Salt and pepper: we use a small amount of salt and black pepper to season the chicken legs.
- Italian seasoning: a super handy dried herb mix to have in the pantry and whip out as needed. This combination is made from dried parsely, oregano and thyme.

Here are the step by step instructions to make the recipe. We start by preparing the vegetables. You will need a knife and cutting board for these initial steps.

👩🍳 How to Make Slow Cooker Chicken Drumsticks With Potatoes
To make the slow cooker chicken drumsticks with potatoes we start by preparing all of the vegetables. Chop any larger potatoes in halves but keep the skins on. Then use a vegetable peeler to peel and slice the carrots and a sharp knife to cut the corn cobs into halves.
Next slice the mushrooms as you see in the photos above.

- Season the chicken legs with salt and pepper (Photo 7)
- Add the potatoes to the slow cooker (Photo 8)
Next gather the ingredients to make the chicken seasoning, add them to a glass jug and use a mini whisk to combine then set aside.
When ready place the chicken legs onto a chopping board and season both sides with salt and pepper.
Now start to add the ingredients to the slow cooker, beginning with the potatoes, then add the carrots as you see in the photos below.

- Place the chicken legs on top of the vegetables (Photo 12)
Next pour half of the chicken blend over the top of the potatoes and carrots and then take a wooden spoon to stir and combine ensuring that the veggies are fully covered.
Once done use a pair of tongs to place the chicken legs on top as you see in the photo above.
- Add the sliced corn cobs (Photo 13)
- Pour over the rest of the seasoning (Photo 14)
- Stir to combine and then cook (Photo 15)
- Add the sliced mushrooms (Photo 16)
Next add the sliced corn cobs on top of the chicken and once you have pour the rest of the chicken seasoning over the top. Then take the wooden spoon or tongs and gently stir so that all of the chicken and vegetables are covered.
Once done, put the slow cooker lid on and set the timer to either 8 hours on low or 4 hours on high.
In the final hour of the cook time, remove the lid and add the sliced mushrooms. Then put the lid back on and let the chicken and potatoes continue to cook.
After the total cook time is up, you can then remove the lid and turn the heat off.
Now, you do have the option of using a pair of tongs to remove the chicken drumsticks and air frying them for 8-10 minutes or grilling them as this will help them to turn golden brown and the skin to get a little crispy.
- Air fry or grill legs for 10 mins to brown (Photo 17)
You might want to skip this step if you are wanting to be done at the end of the cook time and that is totally fine. You will still get a delicious roast like chicken dinner with juicy tender chicken.

🍽 Serving Suggestions
This is a filling and satisfying dish that is a a complete meal! With a ton of veggies in the mix you are unlikley to need or want anything else on the side.
If however, you do want to add in a little extra, some bread will do the trick be it the Turkish Garlic Bread, Ciabatta Garlic Bread, Garlic Pizza Bread or the Tortilla Garlic Bread 😄👍.
For a side salad, try the Cherry Tomato Caprese Salad, Healthy Panzanella Salad or the Fresh Herb Salad.
Get a little gravy on the plate too poured over the chicken as a nice finishing touch and add a little chopped parsely if you please.

Let the dish fully cool. Then portion into a sealed airtight container and place into the refridgerator. The refridgerated leftovers can be kept for up to 3 days and need to be reheated before being consumed.
How to Freeze
Or you can portion leftovers into sealed air tight containers and stack them in the freezer for longer storage.
Frozen leftovers can be kept for up to 3 months in the freezer.
How to Reheat
For refrigerated leftovers, simply transfer to a bowl with a layer of cling wrap. Heat on high in the microwave in 1 minute increments until warmed througout.
For frozen portions, remove these and let them thaw completeley. Then use the method above to reheat them in the microwave. You will find that these frozen thawed portions will take an extra 1-2 minutes to reheat.
😉 Substitutions and Variations
Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:
- You can use 2 teaspoons of either dried oregano, parsley, basil or thyme in place of the Italian seasoning if you wish too.
- You can use red potatoes in place of the white potatoes if you want too.
- If you want to dice an onion and add that to the mix you can. In which case I would omit the onion powder from the chicken seasoning.
- If you want to use skin-on chicken thighs in place of the chicken legs you can. They will do well with browning at the end of the cooking time as suggested for the legs.
- For a non gravy sauce you can use barbecue sauce or check out all of my homemade sauces on the blog for more ideas.
💡 Tasty Tips
Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:
- The edges of the corn cobs will brown if they are touching the sides of the slow cooker insert. So use a pair of tongs to arrange them slightly off the sides. Or you can use a little cooking spray on the sides of the bowl as a means to grease it.
- Try and keep the lid on the slow cooker as the recipe cooks so that the cook time will be accurate. Then simply lift it off to add the sliced mushrooms towards the very end of the cook time.
- When adding the mushrooms, you can simply spread them over the top of the dish, no need to try and stir them in.

Slow Cooker Chicken Drumsticks And Potatoes
Ingredients
- 1 kg baby potatoes larger ones sliced in halves, Note 1
- 3 large carrots peeled and chopped into chunky pieces, Note 2
- 6 mini corn cobs cut in halves, Note 3
- 200 grams/ 8 oz swiss brown mushrooms sliced in halves or think slices, Note 4
- ½ cup/125 ml chicken broth (chicken stock) Note 5
- 1 tablespoon olive oil Note 6
- 2 teaspoons Italian seasoning Note 7
- 1 teaspoon garlic powder Note 8
- 1 teaspoon onion powder Note 9
- 1 teaspoon paprika (ground or smoked) Note 10
- 6 chicken drumsticks Note 11
- ½ teaspoon salt Note 12
- ½ teaspoon black pepper also Note 12
To serve
- parsley stems removed and leaves finely chopped
- black pepper

Instructions
- Vegetables: use a knife and cutting board to slice any larger potatoes in halves and then give each potato a prick or 2 with a fork. Next use a vegetable peeler to peel the carrots and then chop into chunky pieces. Use a knife to slice the mini corn cobs in halves and then slice the mushrooms into halves to thin slices.
- Chicken seasoning: add the chicken stock, olive oil, garlic powder, onion powder, paprika and Italian seasoning to a small glass jug then use a mini whisk to stir them till consistently combined and then set aside.
- Chicken drumsticks: place the chicken legs flat on a chopping board and season them with the salt and pepper. Once done, rotate them to the other side and season this side with salt and pepper also.
- Corn cobs and seasoning: next place the sliced corn cobs into the slow cooker and then pour the remaining chicken seasoning over the top. Then take a pair of tongs and gently toss to combine everything ensuring the seasoning is covering the chicken and vegetables.
- Cook: now pop the lid on the slow cooker and let the dish cook for either 3 hours on high or 7 hours on low. In the final hour remove the lid and add the sliced mushrooms and then let them cook for a further hour. Once the 4 hours of cook time or 8 hours of cook time is up, you can remove the lid from the slow cooker and turn the heat off.
- Air fry or grill (optional step): use a pair of tongs to remove the cooked chicken legs and place them onto a wire air fry rack or baking tray. Air fry or grill the chicken legs for 8-10 minutes to brown and crisp up the skin a little. Then return them to the slow cooker with the rest of the cooked dish.
- To serve: portion the chicken legs with potatoes, carrots, corn and mushrooms into serving bowls. Drizzle a little gravy over the top and provide forks and spoons for serving. Garnish with chopped fresh parsely and a sprinkle of cracked black pepper.
