As you can see the recipe calls for:
- Peanut oil: we use the peanut oil to fry off the pork mince in the initial stages of bringing together the rice.
- Salt and pepper: we use salt and a little bit of black pepper for seasoning in the recipe.
- Garlic: you can use 2-3 fresh garlic cloves finely chopped, chunky chopped garlic as you see in the photo above or jarred minced garlic. Whichever works for you the most easily.
- Sesame oil: this is a lovely light aromatic oil that is popular in Chinese recipes.
- Soy sauce: this is sushi style or regular soy sauce.
- Oyster sauce: thick and rich! Oyster sauce is a classic sauce in Chinese cooking, very popular and widely used across an array of recipe.
- Worcestershire sauce: this gives the rice a little oomph! Not traditional or common in fried rice. But it is my secret sauce that I like to use and believe the results tell the story of why 😉👌.
- Chinese cooking wine: you will find this in the Asian foods section of the supermarket. No need to drive to the local Asian grocery store. It is also known as 'Shaoxing wine'.
- Ginger: crushed ginger from a jar or finely chopped fresh ginger. Both options will work.
- Onion: we want to peel and dice half of a large onion.
- Bacon: store bought diced bacon is the most convenient to use. It saves you chopping or dicing and you can simply throw it into the pan.
- Eggs: free range is always the best choice! We want to whisk these and scramble them in the pan to cook them.
- Green onions: optional! Spring onion is a great way to garnish the finished dish if you choose to use them. Simply discard the roots and tips then finely slice them into small pieces.
- Frozen vegetables: I like to use a combination of frozen veggies such as peas, corn and carrot. This trio is sold as a packet in the freezer section of the supermarket. They offer pops of colour and an array of textures to the dish. We add them frozen to the pan.
- Pork mince: also known as ground pork. This is an excellent, cost effective cut of pork meat. Pork mince can be frozen, then thawed and used when needed. It is very handy to have in the freezer so you can whip it out as needed.
- Day old rice: it will only take minutes to make the rice the day before and doing so gives the best results. I use 2 cups of dried basmati rice in 3 cups of water in a microwave rice cooker. Then I cook this for 12 minutes on high. Once it has cooled, I place it in the fridge until the next day.

Here are the step by step instructions to make the recipe. We start by making the sauce.

👩🍳 How to Make Pork Mince Fried Rice
To make the pork mince fried rice, start by bringing together the ingredients for the sauce. Add the soy sauce, oyster sauce, Chinese cooking wine, Worcestershire sauce and sesame oil to a small glass and whisk to combine then set aside.
Now get ready to cook the pork. To do so place a large sauté pan on the stove top, pour in the peanut oil then add the pork mince, garlic, ginger, salt and pepper. Cook the pork for 8-10 minutes till browned. During this time use a slotted spoon (vertically) to break up any clumps of meat as you go.
Once the ground pork is cooked, transfer it out of the pan into a paper towel lined bowl.

- Then add the frozen vegetables (Photo 7)
- Add the day old rice to the pan (Photo 8)
🍚 Ground Pork Fried Rice Recipe
Next, crack the eggs one by one into a bowl and use a fork to whisk them. Then add the whisked eggs to the hot pan and cook by scrambling them. Once the eggs are cooked, remove them from the pan and place them onto a plate.
Now add the diced bacon and onion to the pan and cook these till the bacon is a little crispy and the onion has softened. Once done add the frozen vegetables to the pan and cook for 1-2 minutes.
The next step is to then add the cooked day old rice to the pan. You can see me having done this in the photo above.
Once you have, you can then pour the sauce over the top, like you see in the photo below.

- Heat and garnish (Photo 12)
Once you have added the sauce to the pan, take a couple of minutes to work it into the rice. We want to aim for consistently coloured rice with no blobs of cooked white rice in the mix. Use a little elbow grease and give it a good stir for this step 😉👌.
Next add the cooked egg back to the pan, then add the cooked pork mince as you see in the photos above.
When all of this is done, allow the dish to heat through and then give it a garnish with some sliced spring onions.
Grab some bowls, forks, and spoons and call everyone to the table as 'dinner is ready!!'.

When it comes to serving your fried rice, there is a wide variety of options available to you.

Store leftovers of the fried rice in a sealed airtight container in the fridge. They can be kept for 3-4 days and need to be reheated before being consumed.
How to Freeze
Allow the dish to fully cool. Then portion into containers and place into the freezer. They can be kept for up to 3 months and are best fully thawed and then reheated.
If you have used frozen then defrosted pork mince to make the recipe, it is best not frozen again.
How to Reheat
Add leftover pork mince fried rice to a bowl and cover with cling wrap. Heat on high in the microwave for 1-3 minutes until warmed through. Stir halfway through to ensure that it is consistently heated across the bowl.
😉 Substitutions and Variations
Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:
- Basmati or Jasmine rice are the best to use.
- You will get the best results if you make the rice ahead of time. My top tip is to cook your rice the day before. The way I like to prepare it is to use a microwave rice cooker. To it I add 2 cups of dried basmati rice and 3 cups of water. I then cook this for 12 minutes on high in the microwave. Once it is done, I give it a fluff with a fork, let it cool then refrigerate it till the next day.
- You can use hoisin sauce in place of the oyster sauce if you wish too (same amount, sub 1 for the other).
- Alternative meats you can use are ground chicken or turkey mince.
- If you want to use fresh vegetables as opposed to frozen ones, broccoli or cauliflower florets are good choices. They need to be cooked till softened and will take a little bit longer to cook than their frozen counterparts.
- If you don't want to scramble the egg, you can individually fry them and serve them on top of the dish as an alternative cooking method.
- For a spicy pork fried rice, add a tablespoon of sriracha (hot chilli sauce) to the sauce.
💡 Tasty Tips
Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:
- If you don't have a sauté pan, you can use a large wok.
- Mince or ground meat always has some clumps of meat as it cooks. We want to break these up to ensure all of the meat is cooked through. You will find using a silicon turner (used vertically) or wooden spoon handy to help with this.
- When you are cooking the eggs and scrambling them, you will need to break them up as them cook. We want 'bits of eggs' not a whole omelette of fried egg. A flat turner will help with this process.
- Once you have added the cooked rice if there is some clumps of stuck together rice, you can put a lid on the sauté pan for a couple of minutes and let it steam. Condensation will then fall from the inside of the lid and enable you to break up these clumps more easily.

Pork Mince Fried Rice
Ingredients
Sauce
- 1 tablespoon soy sauce Note 1

- 500 grams/ 1 pound pork mince (ground pork) Note 7
- 1 tablespoon garlic chunky chopped, Note 8
- 1 teaspoon minced ginger Note 9
- ¼ teaspoon salt Note 10

Instructions
- Sauce: add the soy sauce, oyster sauce, Chinese cooking wine, Worcestershire sauce and sesame oil to a small glass and whisk to combine then set aside.
- Pork: place a large sauté pan or wok onto the stove top, turn the heat to high and add the peanut oil. Then add the pork mince, garlic, ginger, salt and pepper. Cook the pork mince for 8-10 minutes breaking up any clumps with a slotted turner as the meat cooks. Once the pork is cooked, transfer it out of the pan and place it into a paper towel lined bowl.
- Egg: crack the eggs one by one into a small bowl and then use a fork to whisk them. Pour the beaten eggs into the hot pan, scramble them and break them into small pieces as they cook (around 2 minutes). Once they are done, transfer them out of the pan, onto a plate.
- Bacon and onion: next add the bacon and onion to the pan and cook until the bacon crisps a little and the onion softens (1-2 minutes).
- Frozen vegetables: now add the frozen peas, corn and carrot to the pan and let them cook for 1 - 2 minutes.
- Cooked rice and sauce: once the vegetables have softened, add the cooked, day old rice to the pan. Break up any clumps with a wooden spoon, then pour the sauce over the top and take a couple of minutes to work it into the rice.
- Egg and pork: once the rice and sauce are consistently mixed in, add the cooked egg and pork back to the pan. Stir to gently combine these and let them heat through.
- To serve: once the dish is warmed through, garnish with some finely chopped green onions.
Notes
- Note 1 - Soy sauce: this is sushi style or regular soy sauce. If you want darker looking fried rice, you can use dark soy sauce in place of this. We don't however, want to use both as that would make the rice 'too salty'.
