    Mini Croissant Sandwiches are quick and easy to make ticking the 'I got brunch sorted box'. With oozy melted cheese, salty ham, buttery croissants and a honey mustard glaze they will be the talk of the town.     • Crowd pleasing: I haven't met many people in my day who don't enjoy a croissant every now and then. They are so soft and buttery that the craving needs to be satisfied when it hits! These mini croissants will be loved by all!
    • Simple ingredients: everything you need to make the recipe can be sought from your local grocery store. They are year round easy to get your hand on products.
    • Family friendly: everyone of all ages will love these croissants. They are both sweet and savory, a perfect breakfast recipe and a popular choice for getting the whole family together.
    • Taste and texture: there is the soft, flaky buttery pastry, the oozy melting cheese and chewy ham. This combination ticks a lot of the taste and texture boxes and them some.
    • Versatile: these work for breakfast, brunch, a late lunch, an appetizer, snack food, party food, game day snack or picnic food. They are very versatile and lends themselves to a wide variety of serving ideas.

    ๐Ÿฅ— Ingredients

    The photo below is to show you everything you need to make the mini croissant sandwich recipe. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.

    Ingredients to make Mini Croissant Sandwiches

    As you can see the recipe calls for:

    • Butter: we use this combined with a few other ingredients to make a glaze to brush over the tops of the croissants before we bake them.
    • Garlic powder: a fantastic ingredient to always have in the spice cupboard. It is easy and convenient to use.
    • Onion powder: as above and a complimentary pairing to the garlic. This saves time peeling, dicing and crying!
    • Honey: we use this combined with mustard to make a glaze to brush over the tops of the croissants. It is both sweet and savory with hints of mustard.
    • Mustard: this brings the savory element to the glaze. Honey and mustard are a winning combination at all times and when combined with ham and cheese it is a home run!
    • Worcestershire sauce: we use this to give the glaze a little oomph and the croissants a little more colour. We only need a small amount of this and a little of it goes a long way!
    • Poppy seeds: we use these as one of the 2 seeds on top of the croissant to add a textural element to the surface.
    • Sesame seeds: much like a bagel, we combine sesame seeds and poppy seeds for the surface cause we are 'all about the bagel' urm I mean croissants ๐Ÿ˜‚.

    ๐Ÿฅ Mini Ham and Cheese Croissants

    • Chives: we use these (finely chopped) to add some pops of colour and texture when we are serving the croissants.
    • Tomato: this is optional as I know some people prefer a plain ham and cheese croissant. However, then I also know some people like their croissants with ham, cheese and tomato. So I aim to please both peoples ๐Ÿ˜‰๐Ÿ‘Œ.
    • Cheese: I like to use Jarlsberg or Swiss cheese (the one with the holes) when making this recipe. Both of these have more flavour that mozzarella yet about the same amount of 'cheese pull'.
    • Ham: it wouldn't be a ham and cheese croissant without adding ham now would it ๐Ÿ˜‚๐Ÿ‘. I like to use shaved ham from either the deli or the fridge section. Or when I have them leftovers from the Bourbon Glazed Ham ๐Ÿ˜‰๐Ÿ‘Œ.
    • Mini croissants: head to the bakery section of the supermarket to find these. Ask if you can't see them or another place to look is in the bread aisle.

    Tasty Tip: I like to provide you with a number of substitutions and variations giving you an array of options when making my recipes. If in doubt of any of the above ingredients, or wanting alternatives, read this section (further below) before jumping into the instructions on how to make the recipe which are coming next ๐Ÿ˜‰๐Ÿ‘Œ.

    ๐Ÿณ Instructions

    Here are the step by step instructions to make the recipe. We start by preparing the croissants.

    • Slice the croissants in half (Photo 1)
    • Place a piece of cheese on each one (Photo 2)
    • Add the ham (Photo 3)
    • Add more cheese (Photo 4)

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Mini Croissant Sandwiches

    We start the recipe by slicing each of the mini croissants in half, lengthways.

    Once you have done that, top the base of each one with a piece of the sliced cheese. Then place 2 small pieces of the sliced ham on top.

    Next add another layer of cheese on top of the ham and then place the tops of the croissants back on to close them.

    • Place the tops on the croissants (Photo 5)
    • Option 2 - add tomato (Photo 6)
    • Close the croissants (Photo 7)
    • Transfer the croissants onto a baking tray (Photo 8)

    If you want to offer variety and make some of the croissants with tomato, now is the time to do it. Simply layer the tomato in between the ham and top cheese slice and then close it off like you see in the photo above.

    Once all of the croissants are filled, transfer them to a silicon mat above a wire baking tray and rack. Next get ready to make the glaze.

    Add the butter to a heatproof jug, microwave this in 20 seconds intervals until melted. Once melted add the honey, mustard, garlic powder, onion power, Worcestershire sauce, poppy seeds and sesame seeds then give them a stir to combine.

    • Melt butter (Photo 9)
    • Add remaining glaze ingredients and whisk (Photo 10)
    • Brush each croissant with glaze (Photo 11)
    • Bake for 10 minutes (Photo 12)

    ๐Ÿฏ Croissant Glaze

    Once you have combined the ingredients to make the glaze you can pop it into the microwave for 20 seconds (on high) then use a pastry brush to coat the top of each croissant.

    Repeat brushing all of them with the glaze until they are each covered.

    Once done you want to pop the baking tray into the oven to bake for around 10 minutes.

    This allows the glaze to work its magic and the cheese to melt (so good).

    ๐Ÿฝ Serving Suggestions

    If you want to make a mini croissant sandwich platter like I am showing you in the 2nd image in the post, that will work!

    Ham cheese tomato croissant

    These little guys are fun, practical, friendly and go down a treat. You might find them enough and not need or want other things to go with them. Or simply a glass of oj and a cup of tea or coffee will do the trick!

    If you want a salad on the side some easy options are the Fresh Herb Salad, Tomato Mozzarella Salad or the Italian Bread Salad.

    If you are thinking of sauce a couple of good workable options with this combination is a squeeze of balsamic glaze (thicker than balsamic vinegar) or the Mustard Yogurt Sauce. You can also have a look at all of my homemade sauces for further inspiration.

    ๐Ÿ‘ How to Guide

    How to Store

    Store leftover croissants on a plate with cling wrap and place in the fridge. They can be kept for 2 days and can be consumed cold or hot.

    How to Reheat

    Place leftover croissants onto a silicon mat and reheat in the oven for about 5 minutes.

    You can also use the microwave on high which will take only 2 minutes, however, the pastry won't be crispy and flaky, it will simply be warm.

    How to Freeze

    This recipe is best cooked and consumed without freezing leftovers.

    As a means to be organised however, you can purchase the mini croissants and freeze them then remove and thaw when you are ready to make the recipe.

    ๐Ÿ˜‰ Substitutions and Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • If you are feeding a younger crowd (less sophisticated palate) you can omit the garlic powder, onion powder and Worcestershire sauce from the glaze. This will simplify the flavor combination.
    • You can use sliced green onions in place of the chives if you wish to.
    • You can use your favorite type of ham. Be it shredded, honey ham, smoked ham, leftover ham or ham of your personal preference.
    • If you are a 'ham and cheese croissant' lover, you can omit the tomato, I get it ๐Ÿ˜‰๐Ÿ‘.
    • Most delis will sell a type of Jarlsberg or Swiss cheese. If you can't see it, ask them for it as they make have it but not on display. The cheese you see in the photo above was then cut into 4 slices each.

    ๐Ÿ’ก Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Turn the oven on before you get started on the croissants as then it will be at the right temperature as soon as you put the croissants into the oven.
    • When slicing the croissants in half, move the knife down a bit lower closer to the board so that you don't end up cutting only some of the top of the croissant off, not the full thing into half.
    • I sometimes find that 'deli ham' is a bit haphazardly cut and not sliced into a nice chewy piece of ham. In which case ham from the fridge section works best as these are cut by machine and well formed.
    • However, when it comes to deli cheese, they often cut it fresh for you and check the width of the slices to see if you are happy with them so deli cheese is a great option.
    • A pastry brush is the best way to brush the honey mustard glaze onto the sandwiches.

    What can I fill croissants with?

    Some easy ways to fill croissants are to use ham, cheese, tomato, cream cheese, fresh berries, cream, nutella or brie and cranberry.

    Should you toast a croissant for a sandwich?

    Toasting the croissants in the oven is a guaranteed way of having the outside of the croissants be crispy and flaky and the insides soft and buttery.

    What is the best melting cheese for croissants?

    Swiss cheese, Jarlsberg and Brie cheese are all good options that melt well in a toasted croissant.

    Mini Croissant Sandwiches

    Ingredients

    • 16 mini croissants
    • 8 slices Jarlsberg cheese each slice cut into 4 long strips
    • 200 grams/7 oz ham
    • 2 roma tomato thinly sliced

    Croissant Glaze

    • 40 grams/3 tablespoons butter unsalted
    • 1 tablespoon honey
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon sesame seeds
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 tablespoon dijon mustard

    Garnish (optional):

    • chives finely chopped

    Instructions

    • Preheat the oven: preheat the oven to 180ยฐC / 350-375ยฐF / Gas Mark 4-5.
    • Prepare the croissants: use a knife and chopping board to cut each mini croissant in half lengthways.
    • Cheese: layer the base of each croissant with a cut slice of cheese.
    • Ham: place 2 slices of cut ham on top of the cheese.
    • Tomato (optional): place 2 pieces of sliced tomato on top of the ham.
    • More cheese: place another piece of cut cheese on top of the ham.
    • Close: place the top of the croissant onto the base of the croissant.
    • Baking tray: transfer each mini croissant sandwich to a silicon mat above an oven rack and tray.
    • Glaze: melt the butter in a heatproof jug. Then add the honey, mustard, Worcestershire sauce, garlic powder, onion powder, poppy seeds and mustard seeds. Whisk to combine. Then microwave for 20 seconds. Use a pastry brush to brush the honey mustard glaze over the top of each mini croissant.
    • Oven bake: place the baking tray into the oven on the middle shelf. Bake the croissants for 10 minutes until the cheese has melted and the croissants have turned golden brown.
    • Serve: use oven mits to remove the baking tray from the oven and place it onto a heat proof surface. Then use kitchen tongs to transfer the croissants to a serving plate. Sprinkle freshly chopped chives over the top for garnish.

    Notes

    • Portion size: this will really depend on if you are serving only the croissants or if you are serving them as an appetizer and or with other finger foods. As a starting point 1 mini croissant sandwich per person will tick things off.ย
