    Shredded Brussel Sprout Quinoa Salad

    Shredded Brussels Sprout Salad is one of the most popular salad recipes in our lunch collection! We use raw brussel sprouts for a feel good salad!  You can call it a shaved brussel sprout salad or shredded brussel sprout salad and either way, it is delicious.

    What is a shredded brussel sprouts salad?

    Happy Friday! It feels good to say that to you guys. As you know last weekend, I headed off to Sydney with a friend of mine and we did a 35km walk whilst there. We had a fabulous trip and saw many sights however, I admit I was a little pooped when we came back.

    We ate pretty well whilst we were away, lots of Vietnamese and yummy healthy breakfasts but we did celebrate our epic walk with a burger and fries and as such I wanted to pack the greens back in on returning to Brisvegas.

    This Shredded Brussels Sprout Quinoa Salad was my solution to wanting to refuel and replenish my body, plus have all meals ready to go, so I could have some down time ie not cleaning dishes. Don't get me wrong, I would cook every single day if I had a bit more time and energy but this week needed to be tackled in advance. So I whipped up this massive (and it is massive, you could feed a family of 10 plus with it!!) salad, and then I had a little bit of time to try and get back into the swing of things.

    You probably saw my recent post where I shared my recipe for Oven Roasted Brussel Sprouts and if you missed it, you can get it here. That dish really reminded me of how good these little green veggies are and how I would like to have them more often. It got me thinking about including them in a salad, which I did here with my Roasted Brussel Sprout Salad. But... I wanted to change it up a little, so in developing the recipe for this Shredded Brussels Sprout Salad, the following is where I was coming from.

    About the recipe:

    • I wanted to create a huge salad that would make many smaller meals
    • Brussels Sprouts were to be hero of the dish but shredding them is a bit different and you eat them raw, yummo!
    • I needed to create a dressing which complimented the flavours, but also had its own wow factor
    • You know me, I LOVE including bacon in the salads I am going to heat and eat for that 'yum' factor.

    To get that flavour into our drizzle, I have gone for a combination of greek yoghurt, curry powder and poppy seeds. This might suprise you, but trust me and you will be seeing where I am coming from when you give it a go!

    Our Brussels Sprouts are easy to prepare as we cut the stems off and throw them into the food processor. You will end up with lovely little shreds of the vegetable. We are going to add them to our salad, just like that - raw and all, YUM!

    The quinoa and bacon will cook up nicely, they are the most time consuming parts of the salad preparation other than the shredding.

    Then we get to drizzle, or dress and toss our salad and everything will look fabulous as you mix it in together (I use 2 spoons to do this).

    What does a shredded brussel sprouts salad taste like?

    It tastes delicious! Raw and full of nutrients, you feel like you are eating high energy foods.

    I had a bowl of this one night for dinner during the week, with lots of drizzle and ½ an avocado and boy let me tell you, it hit the head on the nail. You really will LOVE this salad combination.

    Shredded Brussels Sprout Salad

    This salad is full of the good stuff. Packed with shredded brussels sprouts, quinoa, chick peas, edamame and crispy bacon, you will be loving it. The drizzle is a curry yoghurt flavour with poppy seeds - refuel your body today!

    Ingredients

    Shredded Brussels Sprout Quinoa Salad

    • 500 grams brussels sprouts
    • 2 cups dried quinoa tri colour
    • 4 cups water
    • 425 g chickpeas drained and rinsed
    • 200 g edamame frozen
    • 200 g streaky bacon

    Curry Yoghurt Poppy Seed Drizzle

    • 1 cup low fat greek yoghurt
    • 1 tbsp curry powder
    • 1 tbsp poppy seeds

    Instructions

    Shredded Brussels Sprout Quinoa Salad

    • Preheat oven to 180 degrees and line a baking tray with grease-proof paper and a baking tray 
    • Add water and dried quinoa to a medium sized saucepan and cook at a medium heat until all of the water is absorbed (stir occasionally to ensure it doesn't stick to the bottom of the pan) 
    • Cook bacon for 20 minutes or until crispy. Cut when cool 
    • Cut stems off brussels sprouts and shred in food processor 
    • Drain and rinse chickpeas
    • Heat edamame in microwave safe jug for 3 minutes 
    • Combine all ingredients in salad bowl. Dress and toss salad 

    Curry Yoghurt Poppy Seed Drizzle

    • Add yoghurt to blender jug and top with curry powder. Blend for 2 minutes or until combined 
    • Top drizzle with poppy seeds and stir well to oombine 

    Notes

    • This is a HUGE salad. If you want to make a smaller version, I would only use ½ or 1 cup of dried quinoa (which will make either 1 cup or 2 cups). But keep the rest of the ingredient portions the same 
    • You can use stock to cook the quinoa but I find there is so much flavour in the dish, it is unnecessary
