    Vegemite Bread

    Vegemite bread is a loaf of 3 ingredient homemade bread filled with cheese and vegemite. It is a no knead, no yeast bread that tastes like a cross between a cheesymite scroll and buttered vegemite on toast.

    The Slow Cooker Cheese And Bacon Bread was the starting place for this recipe's development. The Slow Cooker Apple Cake is a sweet variation that also came from the initial cheese and bacon bread idea.

    There was also an inspiring conversation had between me and 2 others about the speed at which I witnessed a savory pull apart bread loaf be devoured. Each of the above went into the commitment to making a bread loaf with its own vegemite and cheese filling.

    🤍 VEGEMITE BREAD

    I have summarised everything that you will come to know and love (LOVE ❤) about the recipe in the points below:

    • This popular spread is one that a lot of us Aussie kids group up with. Vegemite toast, vegemite scrolls, vegemite sandwiches in the lunch box, you name it, we likely had it.
    • As adults we don't grow out of this. I love it. Not so much on this that and everything else but in the context of toast, a toasted cheese and vegemite sandwich or simply spread between 2 slices of white bread.
    • I have pursued the development of this recipe with serious intent. I really wanted to be a happy little vegemite 😊. Once the thought had popped into mind, I needed to try it. I explored my own version of cheesy mite scrolls with wholemeal self raising flour (no yeast) but found them too dry. I looked at recipes where you purchase a loaf of bread and then stuff it with cheese and vegemite and then pull it apart. But none of these ideas offered the thick fluffy white bread with ribbons of cheese and vegemite sewn through with melted butter on top. Hence forth came the product of the thinking and boy oh boy its delicious. I could eat it for breakfast every single day. I have even had it for dinner one night when I had made it late in the day.

    🥗 Ingredients

    The photo below is to show you everything you need to make the recipe. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.

    As you can see the recipe calls for:

    • Vegemite: vegemite squeezy is easier than using a spoon/knife to take out the vegemite from a jar.
    • Cheese: I use a block of freshly grated cheddar cheese (known as tasty cheese at Woolies, Coles and Aldi).
    • Milk: skim milk or full cream milk will work, you can use your favorite.
    • Greek yogurt: full fat.
    • Self raising flour: this is the primary of the 3 dough ingredients.

    😉 Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • Dried onion: I have tested this recipe with 2 tablespoons of dried onion flakes (not onion powder) in the batter. It works. Main reason I refined to keep it our for the final recipe is that I have a little dog who sometimes has a bit of leftovers and she can't have onion.
    • Cheese: you can add a little parmesan cheese (or pecorino romano) to the top of the bread if you wish to. Where I use grated tasty cheese you can use a store bought cheese blend if you prefer. I have done this also for the recipe as I have made it about a billion times now and sometimes the store bought cheese saves you time and is a bit more convenient. Results are much of the same. Other cheese to try are colby, pizza blend or your favorite combination.

    👩‍🍳 How to Make vegemite bread

    To make the bread we start by lining the slow cooker insert. You can see how I do this in the video. It is basically 2 sheets of overlapping baking paper. I prefer to put the longer direction ie left to right on the top layer.

    Next we make the bread mix.

    🍳 Instructions

    • Add the flour, milk and yogurt to a large bowl (Photo 1)
    • Stir to combine (Photo 2)
    • Add the cheese and combine (Photo 3)
    • Add the vegemite and combine (Photo 4)

    Use a spatula to stir to combine the wet bread mixture. You want all of the flour to be absorbed with none left visible in the bowl or at the base.

    Once done add a handful of the shredded cheese, stir, then repeat.

    Next add the vegemite, stir and then repeat.

    • Transfer the bread into the slow cooker (Photo 5)
    • Add the vegemite on top (Photo 6)
    • Add the cheese (Photo 7)
    • Place a tea towel on top and lid (Photo 8)

    Transfer the bread batter into the slow cooker like you see in the photos above. Then drizzle vegemite over the top. Next top the vegemite with the remaining grated cheese.

    From there place a folded tea towel over the top and place the lid on.

    We use high heat and set the timer to 2 hours 30 minutes.

    Once the 2 hours are up, remove the lid, take the tea towel off and let the bread cook (still in the slow cooker) for the final 30 minutes).

    Then when the cook time is finished, grab the paper, lift the bread up and out and place it onto a wire rack to cool.

    Leave it for a bit to cool (so that it doesn't smear when you slice it) and then once it has cooled a bit slice into pieces.

    🍽 Serving Suggestions

    My favorite way to enjoy this vegemite bread is warm (toasted) with butter.

    It is simple, it tastes delicious and you don't find yourself having to spread both butter and vegemite.

    If you want to put a layer of cheese in the middle with more vegemite and make it a grilled cheese be my guest!

    How to Store

    Let the bread fully cool. Then store in a sealed, airtight container with a lid. It can sit out on the bench for a day or so but then is best kept in the fridge.

    How to Freeze

    Cool then slice the bread to your desired thickness. Wrap in cling wrap and place in the freezer for up to 3 months.

    How to Reheat

    Use either the air fryer or oven for 5-6 minutes.

    💡 Tasty Tips

    Here are my top tips and tricks that I want to share with you so that you master the recipe from the get go:

    • Sifting: sometimes I sift the flour, sometimes I don't. I haven't noticed much difference in doing so or not sifting.
    • Slicing: wait for the bread to cool after cooking before slicing. It doesn't have to be 'cold' but it is best cut 'warm', not 'hot'.
    • Vegemite on toast: I find that the bread needs only butter when heating and eating which saves spreading 2 layers but you can also spread with a layer of butter followed by a layer of vegemite if you wish to.
    • Love baking breakfast? Then you might like the Blueberry Croissant Bake, Egg And Croissant Bake or the Croissant Bread Pudding.

    🤓 vegemite bread fAQ's

    Can I make the vegemite bread using a jar of vegemite?

    Yes you can. If doing so I would recommend combining the cheese and vegemite in a bowl 1st and using a knife to cut it. This is because once you scoop it out of the jar it invariably stays as one big scoop and you want to try and distribute that throughout the loaf not have it just sit in one big clump.

    What other ways can I use vegemite?

    Vegemite toast, homemade scrolls and cheesy pull apart loaf are some popular ways to enjoy this Aussie spread.

    Vegemite Bread

    Vegemite bread is a loaf of 3 ingredient homemade bread filled with cheese and vegemite. No knead, no yeast and it tastes like a cheesymite scroll cross with vegemite on toast.

    Ingredients

    • 3 cups self-raising flour Note 1
    • 1 ⅓ cups/ 330ml milk Note 2
    • 1 cup/250ml greek yogurt Note 3
    • 2 cups cheddar cheese grated, Note 4
    • 5 tablespoons vegemite Note 5

    Instructions

    • Bread: add the self-raising flour, greek yogurt and milk to a large mixing bowl. Stir to combine. The dough will look wet and sticky with no visible flour left at the base of the bowl.
    • Cheese and vegemite: add a handful (½ cup) of the grated cheese to the bread mixture, stir to fold in, then add another handful (½ cup) and repeat. Squeeze in approximately 1 ½ tablespoons of vegemite, stir to mix it in. Then repeat for the other 1 ½ tablespoons.
    • Slow cooker insert: line the slow cooker insert with 2 overlapping (left-right and top to bottom) sheets of baking paper with overhang that reaches the top of the bowl.
    • Transfer and cook: transfer the combined bread mixture into the baking paper. Squeeze the remaining vegemite (2 tablespoons) on top and then sprinkle over the remaining grated cheese (1 cup). Put a clean folded tea towel over the opening of the slow cooker and then put the lid on. Set the temperature to high and the timer to 2 hours 30 minutes.
    • WHEN THERE IS 30 MINUTES LEFT ON THE TIMER: remove the lid and tea towel. Then let cook for the final 30 minutes. Note 6
    • Cool: once the total cook time (2 ½ hours is up) grab the baking paper and lift the bread up and out of the slow cooker. Sit it on a wire rack. Let it cool for at least 15 minutes before slicing.

    Notes

    • Note 1 - Self raising flour: I have made this loaf of bread both by sifting the flour and not sifting the flour. I didn't find there to be a great deal of difference either way. You can sift it if you want to but it is not an essential step. 
    • Note 2 - Milk: full cream milk or skim milk will both work. I have tried it with both with no noticeable difference. 
    • Note 3 - Greek yogurt: I have only tried this with the full fat version and that is the only way I want to make it. This is such a great fridge ingredient as a substitute for sour cream. I use it for everything! Home brand is fine. It doesn't need to be a fancy brand. 
    • Note 4 - Cheese: I have made this with both a store bought blend of cheese (also different combinations) or freshly grated cheese like you see in the video. You can use your preferred cheese. 1 cup will go into the bread and 1 cup will go across the top. 
    • Note 5 - Vegemite: I initially tried this recipe with vegemite from a jar. It works, but it is a little harder to manipulate the vegemite so that it is through and spread out on top of the bread. I then tried it with the squeezable jar and it was easy as (so this is recommended for convenience). 4-6 tablespoons is going to give the best vegemite flavour both throughout the bread and on top. 
    • Note 6 - Cook time: in the final 30 minutes of the cook time the bread is still in the slow cooker. The only difference is that the lid and tea towel are off. We don't remove it until the 2 hours and 30 minutes are up.
