    Chorizo Noodles are a quick and easy fuss free recipe! Using simple ingredients we whip up this spicy sausage, noodle and veggie packed combo with a slick savory sauce. These chorizo stir fry noodles will tick the taste, texture and craving a noodle bowl boxes.

    I have summarised everything that you will come to know and love (LOVE โค) about the recipe in the points below:

    • Simple ingredients: you will be able to get everything you need for the recipe at your local grocery store. The chorizo is usually sold both in the deli section or in the fridge section where the bacon, chicken pieces and ham is.
    • Homemade takeout: whilst we all love going out for dinner every now and then or ordering in, it can get expensive quickly! Cooking your favorite noodles at home is a great way to cut the expense of eating out!
    • Back to basics: this is a very easy recipe that doesn't take a lot of cooking skill or hard work to make. We add the different ingredients to a hot pan, stir it a bit and cook some noodles according to the guide written on their packet. You don't have to worry that they won't turn out right as there really is not a lot you can do to muck them up ๐Ÿ˜‰๐Ÿ‘.
    • Versatile: for the vegetables, we use a simple combination of 4 easy to get your hands on veggies that add colour and texture to the dish. If you are looking for more ideas I offer you some alternatives that you can try if you wish too.
    • Family friendly: whilst the chorizo is known for being a 'spicy sausage' it is not 'too hot'. The whole family can sit around the table together and enjoy this dish for an easy dinner that takes barely any effort (less than 15 minutes woot)!

    ๐Ÿฅ— Ingredients

    The photo below is to show you everything you need to make this veggie chorizo recipe. Please refer to the printable recipe card for specific ingredient measurements as well as detailed instructions.

    As you can see the recipe calls for:

    • Peanut oil: this is optional as we don't need to use it when cooking the chorizo. However it does help the veggies to cook and soften.
    • Salt and pepper: we use salt and little bit of black pepper to season the sliced chorizo pieces.
    • Sesame seeds: these are optional. Yet make a great way to garnish the dish for serving and add an extra texture. So worth it if you have time to toast them (it only takes a minute or 2 ๐Ÿ˜‰๐Ÿ‘Œ).
    • Garlic: chunky minced, chopped garlic or a couple of fresh cloves finely diced will all work.
    • Ginger: a lovely pairing with the above. We need to use minced ginger.
    • Green onions: we want to trim the roots and tips from these and then chop them into small pieces. They are an excellent vegetable to stir fry or use as a garnish for Asian recipes.
    • Capsicum (also known as bell pepper): another great ingredient to stir fry. It is robust and has a crisp texture when cooked for 2-3 minutes.
    • Mushrooms: I like using thinly sliced swiss brown mushrooms for stir fry recipes. They hold up well and maintain a chewy texture when cooked.
    • Snow peas: crisp and bright. They bring both great colour and texture to the dish. When preparing them you will have to trim the top end of each one.
    • Noodles: the noodles you see in the photos throughout the post are instant noodles. Also known as 2 minutes noodles or ramen noodles. We don't need the dried little packet of seasoning that comes with some packets, so you can discard that if yours has it.

    ๐Ÿœ Stir Fry Sauce

    • Brown sugar: we use a small amount of sugar in the sauce to balance out the salty flavors in the recipe.
    • Chinese cooking wine: also known as Shaoxing wine. You will be able to get this from the Asian foods section of the supermarket. It is a pretty mainstream ingredient to get your hands on these days with many popular Asian recipes being recreated by home chefs around the globe.
    • Dark soy sauce: our 'secret ingredient'. This is how the noodles get their golden brown colour. Regular soy sauce won't achieve this.
    • Teriyaki sauce: this sauce has a slightly thicker consistency than soy sauce. Combined with the 3 ingredients above, we create a delicious umami stir fry sauce.

    Tasty Tip: I like to provide you with a number of substitutions and variations giving you an array of options when making my recipes. If in doubt of any of the above ingredients, or wanting alternatives, read this section (further below) before jumping into the instructions on how to make the recipe which are coming next ๐Ÿ˜‰๐Ÿ‘Œ.

    ๐Ÿณ Instructions

    Here are the step by step instructions to make the recipe. We start by whisking together the sauce ingredients.

    • Whisk to combine (Photo 2)
    • Toast the sesame seeds (Photo 3)
    • Add the chorizo, salt and pepper to a pan (Photo 4)

    ๐Ÿ‘ฉโ€๐Ÿณ How to Make Chorizo Noodles

    We start by making the stir fry sauce. To do so add the teriyaki sauce, Chinese cooking wine, dark soy sauce and brown sugar to a small glass then whisk to combine and set aside.

    Add the sesame seeds to the pan and use high heat to toast them. This will take 2-3 minutes. Then remove them from the pan.

    Place the pan you used for the sesame seeds back onto the stove and turn the heat to high. Add the sliced chorizo pieces and sprinkle in the salt and pepper. Cook the chorizo for 3-4 minutes using a slotted turner to flip the pieces as they brown.

    Once cooked, use the turner to lift them up and out of the pan and place them into a paper towel lined bowl.

    Next add the garlic and ginger to the pan (they will sizzle!) and fry off, cooking for 1 minute.

    Now we are ready to add the vegetables to the pan. Transfer in the snow peas, red capsicum, sliced mushrooms and peanut oil.

    Cook the vegetables for 2-3 minutes.

    • Add garlic and ginger (Photo 5)
    • Add vegetables and oil (Photo 6)
    • Then add the cooked noodles (Photo 7)
    • Next add the cooked chorizo to the pan (Photo 8)

    Next read and follow the instructions on the noodle packet to cook them, drain using a colander over the sink and discard the noodle water.

    Add the cooked noodles to the cooked vegetables and then add the cooked chorizo back to the pan.

    Once everything is in the dish, take a pair of tongs and or chopsticks and toss. Stirring to combine the noodles, veggies, chorizo and sauce.

    You can reduce the heat to medium at this point as we are no longer cooking anything, rather simply combining what we have cooked.

    Now you can get your garnish on as the dish is ready to go ๐Ÿ˜‰๐Ÿ‘Œ.

    ๐Ÿฝ Serving Suggestions

    A bowl of these and you will likely be all good without wanting or needing anything else.

    If however, you want an appetizer that is along the same lines as the dish you can try the Air Fryer Spring Rolls. They cook very quickly and will make you feel that you really are having take out at home!

    Otherwise all you need to do is portion the noodles into bowls, provide chopsticks for serving and sprinkle the toasted sesame seeds over the top.

    You can then also spread some sliced green onions around and everyone can dive on in!

    How to Store

    Store leftovers of the dish in a sealed airtight container in the fridge for 2-3 days. Reheat prior to serving.

    How to Freeze

    I don't recommend freezing this dish. That process cuts the love and joy out of fresh home cooked noodles! You can however, purchase the chorizo, freeze it and then defrost and use it for the recipe as a means to be organised if you wish.

    How to Reheat

    Leftovers can be heated in the microwave or a pan on the stove, using non stick is best or add a couple of drops of peanut oil. They will take 2 to 3 minutes in the microwave or 3 to 4 minutes in a pan on the stove.

    ๐Ÿ˜‰ Substitutions and Variations

    Here are my sub ins and outs that you might be thinking about as you read the post and I will tell you if I think they will work or why they won't:

    • You can use regular soy sauce if you prefer, however, the colour of the noodles and dish won't be as golden brown. The dark soy sauce is the 'secret ingredient' which gives the dish the lovely depth of colour.
    • A wide variety of noodles will work with this recipe. Some good options are ramen noodles, udon, egg noodles, rice noodles or Singapore noodles. You can even use linguine noodles, spaghetti or zucchini noodles if you want!
    • You can use a different combination of vegetables if you wish to. Try chopped corn spears, sugar snap peas, zucchini, broccolini or cabbage.
    • For extra protein you can cook and add some chicken or add leftover cooked chicken cut into small pieces.

    ๐Ÿ’ก Tasty Tips

    Here are myย top tipsย andย tricksย that I want to share with you so that you master the recipe from the get go:

    • We don't need to use oil when we are cooking the chorizo as the fat from it will render out helping it to cook.
    • Sprinkle the salt and pepper into the pan with the chorizo so it seasons the whole lot (not sprinkle over the pieces directly as it will stick to 1-2 pieces only).
    • If you want to omit the oil entirely from the recipe you can if using a non stick wok or frying pan.
    • Read and follow the instructions on the noodle package to cook them. Then drain the water and discard. We don't need it in the dish.
    • Both kitchen tongs and chopsticks are super handy to use when stir frying and also cooking and combining noodles.
    • Use high heat for most of the time (other than combining at the end) and keep things moving in the pan. This is a quick cooking, fast moving recipe.

    How to cook chorizo?

    Use a knife and chopping board to thinly slice the chorizo sausage into pieces. Then place a frying pan onto the stove top and turn the heat to high. Add the chorizo pieces and cook them for 2-3 minutes, removing from the pan when they are golden brown and crispy looking.

    What does chorizo go well with?

    Chorizo goes well with crisp cooked crudites. Try stir frying bell peppers, cabbage, snow peas and mushrooms. Then combine the chorizo, sauce and serve with rice or noodles. Or use sliced chorizo as a pizza topping with a similar combination of diced vegetables.

    What's in chorizo?

    Most chorizo sausages have a basic ingredient combination of pork, paprika and garlic.

    Ingredients

    Noodle Sauce

    • โ…“ cup/ 80ml teriyaki sauce
    • 1 tablespoon Chinese cooking wine Note 1
    • 1 tablespoon dark soy sauce
    • 2 teaspoon brown sugar

    Stir Fry

    • 2 chorizo sausages thinly sliced, Note 2
    • ยผ teaspoon kosher salt
    • ยผ teaspoon black pepper
    • 2 tablespoon peanut oil optional
    • 2 cups snow peas trimmed
    • 1 medium red capsicum (bell pepper) deseeded and cut into long thin strips
    • 200 grams/7 oz swiss brown mushrooms
    • 6 green onions roots and tips trimmed then cut into segments
    • 4 cakes instant noodles cook according to packet instructions

    Garnish (optional):

    • sesame seeds toasted
    • green onions thinly sliced

    Instructions

    • Sauce: add the teriyaki sauce, Chinese cooking wine, dark soy sauce and brown sugar to a glass jug and whisk to combine then set aside.
    • Cook chorizo: place a large saute pan or wok on the stove top, turn the heat to high, add the sliced chorizo pieces and sprinkle the salt and pepper in. Pan fry the chorizo until the edges of each piece are browned and crispy (3-4 minutes). Once cooked use a slotted spoon to transfer the cooked chorizo to a paper towel lined bowl.
    • Garlic and ginger: without rinsing or cleaning the pan we cooked the chorizo in add the garlic and minced ginger. Stir and allow these to lightly fry for 1 minute.
    • Vegetables: next add the peanut oil, snow peas, capsicum, mushrooms and green onions to the pan. Cook these for 3-4 minutes.
    • Noodles: read and follow the instructions on the packet to cook the noodles. Then use a colander over the sink to drain them and discard the water.
    • Combine: add the cooked noodles to the pan with the cooked vegetables. Then add in the cooked chorizo. Pour the sauce in over the top of the noodles, reduce the heat to medium-high and then use tongs to toss and combine. Allow the dish to fully heat through.
    • Serve: sprinkle the toasted sesame seeds and some thinly sliced green onions over the top of the dish for serving. Provide bowls and chopsticks.

    Notes

    • Note 1 - Chinese cooking wine: this will be in the Asian foods section of the supermarket. But it will be labelled in English and state 'Chinese Cooking Wine' and 'Shaoxing wine' on the bottle.
    • Note 2: Chorizo: you will be able to purchase this from the deli section of the supermarket. It will be with the salamis and ham. Or you will find it in the fridge section with the chicken pieces for sandwiches, bacon and pepperoni's.ย 
    • Note 3 - Noodles: you are good to use most types of noodles with this recipe. Simply read and follow the instructions written on the packet, discard the water and add them in. I use instant noodles (no seasoning) as I love how quickly they cook and like to switch it up between them and udon (my other most favorite type of noodles).
