Blueberry Smoothie is for breakfast on Sweet Caramel Sunday!
Today's post is all about the humble blueberry.
I am not sure if everyone loves blueberries as much as I do but I am sure you would like this smoothie if you gave it a try. One good thing about writing this food blog is that I try to create new recipes whereas before I probably would have stuck to an ole faithful. In coming up with this recipe, my focus was on the colour as I wanted to make a pretty purple drink.
This smoothie is easy to make, takes hardly any time at all and is so much more refreshing than a soft drink.
I was shopping recently and grabbed a frozen bag of blueberries thinking I would have time that weekend to make this but as I got distracted with other things, I chose to make this smoothie today instead.
Trying something new
Ironically in heading out and about, it is not a combination I have ordered too often at places as it seems less popular than strawberry or mango smoothies, but I am super happy I made it as it tastes delicious! Hope everyone has had a great weekend - I don't know why they always go so fast!
Whip it up!
To prepare it, all you need to do is combine the ingredients in the blender and blitz for a few minutes and it is all done - easy as!

Ingredients
Blueberry Smoothie Recipe Ingredients
- 1 cup frozen blueberries
- ½ cup almond milk
- 1 scoop vanilla ice-cream
- 1 pinch frozen blueberries to serve
- 1 teaspoon cacao nibs
Instructions
Blueberry Smoothie Recipe Method
- Combine all ingredients in smoothie cup and blend until smooth
- Top with additional blueberries and cacao nibs
Notes
- This smoothie does not refrigerate well. I think it is because of the ice-cream in the recipe. Best off making and drinking straight away.
