Preheat oven to 200°c/400°F, gas 6
Combine olive oil, thyme, salt, pepper and whisk to combine
Use a knife to cut the tops off the garlic bulbs Note 3
Place your garlic bulbs into an oven proof pan cut side up Note 4
Use a pastry brush to coat each bulb with the seasoned oil. Pour the remaining oil into the base of the pan.
Cook for 20 mins, use an oven mitt to remove your pan from the oven, then use tongs to turn each garlic head cut side down. Return pan to oven and roast for a further 10 mins
Remove from oven, allow to cool for 1-2 mins and serve Note 5
