Oreo Blondies

- 1 cup brown sugar
- 1 cup white sugar
- 250 grams/2 sticks butter unsalted, Note 1
- 2 large eggs free range
- 2 teaspoons vanilla
- 2 cups plain flour no need to sift
- 2 packets oreo cookies Note 2
- 1 cup milk chocolate chips Note 3
- 1 cup white chocolate chips Note 4
Preheat the oven: preheat the oven to 180°C / 350-375°F / Gas Mark 4-5.
Baking dish: lightly grease a square (24 x 24 cm or 9.4 inch) baking dish with cooking oil then line it with 2 overlapping sheets of baking paper with a 2-3 inch overhang on each side.
Sugars and butter: add both the brown sugar and white sugar to a large mixing bowl. Then transfer the butter into a heatproof jug. Microwave the butter using high heat in 30 second increments until melted. Remove the butter from the microwave, give it a gentle stir then pour into the bowl and stir until it is consistently mixed in with the sugar.
Flour: add the plain flour to the bowl and stir till it is no longer visible.
Oreos and chocolate chips: next add the chopped oreo cookies as well as the milk and white chocolate chips. Then stir gently to fold these in.
Baking dish: next use the spatula to transfer the blondie batter to the prepared baking dish. Then use the reserved oreo pieces and chocolate chips and push these into the top of the blondies.
Bake: place the baking dish into the preheated oven (middle shelf) and bake for 35 minutes. Once the cook time is up use oven mitts to remove the baking dish and set it on a heatproof surface.
Cook: leave the blondies in the baking dish for 20 minutes. Then use the parchment paper to lift them up and out of the dish. Set them onto a wire rack and let them cool for a further 20 minutes (or overnight) before slicing into even pieces.
- Note 1 - Butter: I use unsalted butter as to not add additional salt to the recipe. I also like to melt this in the microwave to save using the stove top. I add it to a heatproof jug and use the high setting for 30 second increments till melted. Once it is, remove it with a tea towel around the (hot) handle and gently stir it before pouring it in and mixing it with the sugar. It will dissolve the sugar granules.
- Note 2 - Oreo cookies: I use 2 packets of the traditional chocolate oreo cookies with vanilla centers. I then use a knife and chopping board as the recipe is so easy that I don't want to use the food processor and then have to clean that up later. Roughly chop them and save some for the top of the blondies.
- Note 3 - Milk Chocolate Chips: this add the 'melty worthy' factor to the blondies. You could also use dark choc chips if you want a bolder flavor.
- Note 4 - White Chocolate chips: you can reduce this to ½ cup if your mind is boggling at the amount of chocolate involved 😂.
