Caramilk Rocky Road

- 1 cup raspberry lollies Note 1
- ½ cup pistachio nuts Note 2
- 2 cups mini marshmallows Note 3
- 3 cups caramilk chocolate Note 4
Raspberry lollies: use a knife and cutting board to slice each of the raspberry lollies in halves and then add them to a large mixing bowl.
Fillings: add the pistachio nuts and mini marshmallows to the chopped raspberries and stir to combine.
Square tin: use 2 overlapping sheets of baking paper to line a square cake tin with parchment paper and leave a slight overhang on the sides. Then set aside.
Chocolate: add the caramilk chocolate to a medium sized heatproof bowl. Microwave it on high for 1 minute then remove the from microwave and use a chopstick to stir it. Return the chocolate to the microwave and heat it for a further 1 minute on high then again remove and stir it. Place the chocolate back into the microwave and heat on high for 30 seconds. Then remove and stir. Note 5
Combine: pour the melted chocolate over the fillings in the bowl and then use a spatula to stir and combine.
Into tin: next use the spatula to help transfer the combined rocky road into the prepared tin, push it out as you go so that it reaches all 4 corners and is in a somewhat even layer.
Set: now place the rocky road into the fridge to let it set. You can cut it when it is firm and general rule of thumb for that is to wait 3 hours until you remove it. Once you do start by grabbing the paper overhand to lift the rocky road up and out of the tin. Then pull both sheets of paper off and discard them. Next slice the big square into 4 smaller squares. Then slice each of those squares into 4 pieces. You will have 16 pieces of rocky road. Store in the fridge in a sealed, air tight container until ready to serve.
- Note 1 - Raspberry lollies: 1 cup of raspberry lollies is the equivalent of 1 standard bag of them ie 190 grams or 6.7 oz.
- Note 2 - Pistachio nuts: ½ cup of pistachio nuts is the equivalent of 1 small packet of them weighing 80 grams or 2.8oz.
- Note 3 - Mini marshmallows: 2 cups of mini marshmallows is the equivalent to 1 standard bag of them ie 100 grams or 3.5oz.
- Note 4 - Caramilk chocolate: 3 cups of caramilk baking chips is the equivalent of 2 x 260 gram bags or a total of 18.3 oz.
- Note 5 - Melted chocolate: if you find that there is still some whole baking chips or melts in the jug you can microwave it for an additional 30 seconds and stir until these melt and the chocolate is smooth and consistently textured.
