- 200 grams/ 8 oz Greek feta cheese Note 1
- 1 tablespoon olive oil Note 2
- 2 tablespoons honey
To serve
- thyme sprinkled over the top
- toasted pita bread toasted and warm
Preheat the oven: preheat the oven to 180°C / 350-375°F / Gas Mark 4-5.
Feta cheese: remove the feta from the packet and use a folded piece of paper towel and chopping board to pat it dry. Note 3
Olive oil: pour the olive oil over the top of the feta and use a basting brush or back of a spoon to spread it to cover the surface.
Bake: place the baking dish into the oven on the middle shelf and bake the feta for 8-10 minutes. Then use oven mitts to remove it and place it onto a heatproof surface.
Grill/broil: change the oven setting to grill/broil at 200°C 392°F6. Move the oven rack up to the top bracket.
Honey: pour the honey over the top of the cheese and again use either a basting brush or back of a spoon to spread over the surface. Return the baking dish to the oven and grill (broil) the feta for 5-6 minutes until golden and caramelised.
To serve: use oven mitts to remove the baked feta from the oven and place it onto a heatproof surface. Then slide a silicon turner underneath the feta and transfer it to a serving plate. Sprinkle thyme sprigs over the top of the feta, pop some toasted pita bread around it and provide a cheese knife.
- Note 1 - Feta cheese: I use and recommend you use Greek style feta cheese for the recipe. It has a firm texture and is not as soft and creamy as Danish feta. Most blocks will be sold as a 180 -200 gram size which is the 7 oz mark.
- Note 2 - Olive oil: don't worry if the oil goes down the sides of the cheese when pouring it over. We are not actively brushing the sides but if they get wet, that is fine! Plus we are not serving the feta in this dish, we are simply using it ti bake the feta.
- Note 3 - Patting dry: this step is optional. If the feta is very wet do this, if it is not, simply pop it into the baking dish and start the oil step.
