Vanilla Fudge Recipe

This vanilla fudge recipe is quick, easy and seriously delicious! Using a simple melt and mix method and the microwave.

Ingredients

  • 500 grams/1 pound white chocolate Note 1
  • 397 grams/14 oz sweetened condensed milk this is 1 standard tin of sweetened condensed milk, Note 2
  • 50 grams/ ½ stick butter unsalted, Note 3
  • 1 teaspoon vanilla extract Note 4

To decorate (optional):

  • multi coloured sprinkles Note 5

Instructions

  • Cake tin: use 2 overlapping sheets of baking paper with a 2 cm or 1 inch over hang on each of the 4 sides with a spray of cooking oil to line a 24 cm or 9 inch square cake tin.
  • Fudge: add the white chocolate chips, sweetened condensed mill, butter and vanilla to a large heatproof jug.
  • Microwave: place the jug into the microwave and use high heat for 2 minutes to begin to melt the ingredients. After 2 minutes remove the jug and use a fork to stir the melting mixture. Then return the jug to the microwave and heat for 30 seconds. Again, remove and stir. If all of the chocolate has melted and the mixture is consistent, use the fork to whisk. Or return the jug to the microwave for further 30 second increments (no more than 3 in total) until the chocolate has melted and the mixture is consistent.
  • Prepared tin: pour the wet fudge into the prepared tin and let it spread so that it forms an even layer and reaches all 4 corners.
  • Decorate: sprinkle the top surface of the wet fudge with multi coloured sprinkles.
  • Set: place the decorated fudge into the fridge and let it set for at least 1 hour.
  • Portion: after the hour remove the fudge from the fridge and use the overhanging paper to lift the set fudge up and out of the tin. Then discard the paper. Use a knife and cutting board to slice the large square into 4 smaller squares and then each of those squares into 4 smaller squares. This will give you 16 pieces of evenly sized vanilla fudge.

Notes

  • Note 1 - White chocolate: you can use either white chocolate chips (as shown in the photo above or white chocolate melts). Whichever you choose, the main point is that it needs to be 'cooking chocolate' not 'eating chocolate'.
  • Note 2 - Sweetened condensed milk: sweet, thick and sticky, sweetened condensed milk helps us to achieve fudge with a super soft and creamy texture with sweet tasting flavour. This amount is 1 standard tin. 
  • Note 3 - Butter: I like to roughly chop the butter into small pieces as I find it is then even more evenly distributed when it is going into the microwave as opposed to one big hunk of butter. Unsalted butter is best for this recipe. 
  • Note 4 - Vanilla extract: this is how we get the vanilla flavor in the fudge. We only need to use a small amount of this.
  • Note 5 - Sprinkles: bright and colourful! These are great to add some vibrant pops of colour to the otherwise plain white vanilla fudge. They are optional however and it is up to you if you want your fudge to be plain white or topped with multi coloured sprinkles.
