Chocolate layer: add chocolate melts and oil to a heatproof jug. Microwave in 30 second bursts, stirring in between (repeat x 4), stir till chocolate has a consistent smooth texture. Pour the melted chocolate over biscuit base and use a spatula to spread and smooth into 1 layer Note 5
Allow to set: tap the slice tray on bench gently then place in the refrigerator for a minimum of 4 hours or overnight to set.
To serve: remove the set Tim tam slice from the fridge, let it rest for 5 minutes then grab the baking paper at the edge and pull it up and out of the pan. Use a sharp knife and cutting board to portion the slice into equal pieces. Use a wet chux in between to clean the knife ensuring that each piece has smooth and straight edges.
