Spinach and Feta Pizza

Spinach and Feta Pizza is a quick and easy way to make pizza. With spinach, garlic and Greek yogurt this vegetarian pizza is full of flavor.

Ingredients

Spinach and Feta

  • 1 tablespoon olive oil
  • 1 tablespoon garlic chunky, minced
  • 1 teaspoon chilli flakes
  • ¼ teaspoon salt Note 1
  • ¼ teaspoon black pepper
  • 8 cups spinach leaves firmly packed, Note 2

Pizza Sauce

  • 2 tablespoon Greek yogurt

Pizza Base

  • 1 pizza base Note 3

Cheese Topping

  • ¼ cup mozzarella cheese grated using a hand held or box grater
  • ¼ cup tasty cheese grated using a hand held or box grater

Garnish (optional):

  • fresh basil leaves stems removed

Instructions

  • Preheat the oven: preheat the oven to 180°C / 350-375°F / Gas Mark 4-5.
  • Garlic and spinach: place a large frying pan on the stove top, turn the heat to high, add the olive oil and garlic and cook for 1 minute.
  • Chilli, salt and pepper: then add the chilli flakes, salt and pepper to the pan. Stir to combine with the sauteed garlic.
  • Spinach: add the spinach leaves to the pan and stir, allowing them to soften and wilt. Once done, transfer them to a bowl.
  • Feta: hold the block of feta cheese over the bowl of spinach, then use your fingers to break the cheese and allow the crumbles to fall into the bowl. Stir this mixture to combine.
  • Pizza base: spray a pizza tray with cooking oil, then use a rolling pin to push the dough into a semi round shape and place it onto the oiled tray.
  • Sauce: dollop the Greek yogurt onto the pizza base and use the back of a spoon to spread it out into a thin layer.
  • Spinach and feta: spoon the combined spinach and feta mixture onto the Greek yogurt. Spread so that it is in one consistently even layer.
  • Cheese: sprinkle each of the mozzarella and grated cheese over the top of the spinach and feta mixture.
  • Oven bake: place the pizza into the oven (uncovered) and allow it to bake for 15 to 20 minutes. Use an oven mitt to remove the tray from under the pizza (slide it off) and place it onto a lower shelf for the last 5 minutes of cooking to allow the base to crip up.
  • Serve: once the pizza is cooked, use oven mitts and a pair of tongs to slide the pizza out and place it onto a chopping board. Allow it to rest for 1-2 minutes (to set the cheese layer) and then use a pizza wheel to slice it into pieces. Garnish with basil leaves and serve warm.

Notes

  • Note 1 - Salt: the feta is known for being a salty cheese. If you don't like salty foods, both omit this (salt) and rinse the feta before using. These 2 steps will moderate the flavors and reduce the salt flavor in the pizza. 
  • Note 2 - Spinach leaves: this sounds like a lot of spinach (8 cups!!) but it wilts down considerably. This is a bit less than a large 280 gram (9.8 oz) bag. If you have purchased a big bag (280 grams/10 oz) and want to use it all, you can. I give specific measurements as I know some readers want precise instructions 😁.
  • Note 3 - Pizza base: you can use your favorite pizza base. Thin bases will take less time to cook than thicker bases. Store bought dough that you only need roll yourself is totally fine to use 😉👌.
  • Note - Portion size: this makes 1 hearty pizza which will easily serve 2 people. Or double the batch for hungry eaters.
