Ingredients

  • 1 medium onion skin peeled and diced, Note 1
  • 2 cups frozen vegetables (peas, corn and carrot) Note 2
  • 500 grams/ 16 oz beef mince Note 3
  • ½ teaspoon salt Note 4
  • ½ teaspoon black pepper also Note 4
  • 1 teaspoon Italian seasoning Note 5
  • 1 tablespoon garlic Note 6
  • 2 tablespoons tomato paste Note 7
  • 2 tablespoons Worcestershire sauce Note 8
  • 400 grams/ 14 oz tomato puree Note 9
  • 2 beef stock cubes Note 10
  • ½ cup/125 ml water Note 11

To serve

  • parsley stems removed and leaves finely chopped

Instructions

  • Vegetables: add the diced onion to the slow cooker insert, followed by the frozen vegetables.
  • Beef and seasoning: next add the beef mince, salt, pepper, Italian seasoning and garlic.
  • Liquids: next add the tomato puree, tomato paste, Worcestershire sauce, crushed stock cubes and water.
  • Stir: once all of the ingredients have been added to the bowl, take a wooden spoon and stir, breaking up any clumps of mince and gently combining everything.
  • Cook: place the lid on the slow cooker and set the temperature and timer to either 8 hours on low or 4 hours on high. Let the dish cook, then change the setting to 'warm' once the cook time is up. Remove the lid and gently stir.
  • To serve: portion the savoury mince onto toasted bread or pair it with cooked rice in bowls. Sprinkle some finely chopped parsley over the top and provide forks and spoons.

Notes

  • Note 1 - Onion: simple and easy, we peel and dice 1 medium onion and add the whole thing.
  • Note 2 - Frozen vegetables: I like to use a combination of frozen peas, corn and carrot for this recipe. It is a trio of vegetables that you can purchase in a bag from the freezer section. No prep work needed for these as you can simply measure and then add them to the slow cooker. (Yes, they get added 'frozen'. Turn the heat on after adding them).
  • Note 3 - Beef mince: beef mince or ground beef is one of the most economical and easy to get your hands on cuts of beef. Hugely versatile, satisfying and delicious, it lends itself to a wide number of flavor combinations, this one included!
  • Note 4 -  Salt and pepper: we use salt and a little bit of black pepper for seasoning in the recipe. Cooking salt is the best type to use over table salt.
  • Note 5 - Italian herbs: Italian herbs or Italian seasoning is a combination of dried oregano, thyme and parsley. It is super handy to have in the cupboard and great to use in many recipes. In its place you can use 1 dried teaspoon of either parsley, oregno, thyme or basil.
  • Note 6 - Garlic: you can use 2-3 fresh garlic cloves finely chopped, minced jarred garlic or chunky chopped garlic like you see in the photo above. Choose whichever option is the most convenient for you to use.
  • Note 7 - Tomato paste: this is also a great pizza sauce should you ever need a quick go to!
  • Note 8 - Worcestershire sauce: a fantastic sauce for adding a little oomph to recipes. I simply love the smell and taste of this sauce (you will too!). I don't recommend substituting it with soy sauce.
  • Note 9 - Tomato puree: you will find this in a can in the pasta ailse in the supermarket, where the pasta sauces are. It is rich in tomato flavor and helps to thicken the sauciness of the savoury mince.
  • Note 10 - Stock cubes: we want to use 2 stock cubes that we crush with our fingers and sprinkle into the slow cooker. (Not adding water to them, simply sprinkle them in). These help to add a ton of flavor to the savory mince.
  • Note 11 - Water: we use a small amount of water in the recipe to increase the overall liquid volume and to not add another flavor, but to allow the flavors already in the mix to shine through!
