- 2 tablespoons olive oil
- 1 tablespoon garlic minced, chunky chopped or 2 cloves finely chopped
- 500 grams/16 oz beef mince Note 1
- ¼ teaspoon salt
- ½ teaspoon black pepper
- 1 large onion peeled and diced
- 40 grams/1.4 oz french onion soup mix Note 2
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 cup/250ml beef stock
- 2 cups frozen vegetables Note 3
- 500 grams/16 oz macaroni Note 4
To Garnish
- parmesan cheese
- parsley stems removed, leaves finely chopped
- black pepper
Beef mince: place a large sauté pan on the stove top, turn the heat to medium-high and add the olive oil. Next add the garlic and cook for 1 minute. Then add the beef mince, salt, pepper and diced onion. Cook the beef using a wooden spoon to break up any clumps of meat as you go. It will take 8-10 minutes to cook.
Savoury mince: add the French onion soup mix, tomato paste, Worcestershire sauce and beef stock to the cooked mince, stir to combine. Next add the frozen vegetables and let these cook for 1-2 minutes.
Pasta: read and follow the package directions to cook the pasta in a large sauce pan of boiling salted water. Once it is al dente use a colander to drain the pasta over the sink and discard the water.
Combine: add the cooked pasta to the savoury mince. Stir to combine and allow to heat through.
Garnish: garnish the dish with some parmesan cheese, finely chopped parsley and black pepper.
- Note 1 - Beef mince: if you wish to use other proteins you can. Pork mince, lamb mince, chicken or turkey will work well.
- Note 2 - French Onion Soup Mix: this is a packet of the dried French Onion Soup mix that you find in supermarkets. We tip the whole thing in. The packet size is 40 grams or 1.4 oz.
- Note 3 - Frozen vegetables: I like to use a combination of frozen peas, corn and carrots. They are sold as a trio in a bag in the freezer section. We add them to the mince mixture frozen and they thaw and cook very quickly.
- Note 4 - Macaroni: or your favorite pasta. You can reduce the amount of dried pasta if you are wanting to reduce the total carb volume.
