Ingredients

Homemade Coconut Granola

  • 2 cups rolled oats
  • ½ cup natural almonds
  • ½ cup sunflower seeds
  • ½ cup pepitas
  • cup coconut oil
  • ¼ cup honey
  • 1 cup coconut flakes
  • ½ tablespoon cinnamon

Instructions

Homemade Coconut Granola

  • Preheat your oven to 180 degrees F 82.2 degrees C. Line a baking tray with paper. 
  • Add oats, almonds, sunflower seeds and pepitas to a mixing bowl and stir to combine
  • Add cinnamon and coconut oil, stir again
  • Add honey and mix till the mixture is consistency sticky 
  • Tip granola onto the baking paper and bake for 5 minutes 
  • Remove from oven and top with coconut flakes 
  • Return tray to oven for 3 minutes 
  • Serve with yoghurt or milk

Notes

  • I use rolled oats as they are much better for you than quick oats
  • For a VEGAN option, use agave syrup instead of honey for the sweetener and coconut yoghurt or almond milk as the ingredient to add it to
  • The coconut will toast VERY QUICKLY so keep an eye on the oven during this time. As soon as it starts to turn a light brown shade, remove the tray from the oven and the heat will continue to cook it for a further couple of minutes
  • If you like really toasted coconut you can add it at the beginning. But it will turned brown and won't have the same flavour to it. Most store bought granolas with coconut cook it all at the same time
  • The granola is best stored in an air-tight storage container in the pantry, or in small ziplock bags in the freezer
