Easy Mini Pancakes Recipe
Mini Pancakes are quick and easy to make! These fun pancakes can be served with fresh fruit, maple syrup and or butter!

1 Medium mixing bowl
1 Sifter optional, for the flour
1 Wooden spoon
1 Crepe pan (or pancake pan)
1 Mini Cookie Scoop
1 Silicon flexible turner
- 2 cups self-raising flour sifted (optional)
- 2 cups milk
- 2 eggs free range
- ¼ teaspoon salt
Pancake Toppings
- strawberries rinsed, tops removed and thinly sliced
- banana peeled, thinly sliced
- maple syrup
- icing sugar sifted
Make the pancake batter: add self-raising flour, milk, eggs and salt to a large mixing bowl. Whisk to thoroughly combine.
Cook the pancakes: turn the stove onto a medium heat, use cooking spray to coat a crepe pan with oil, then use a mini cookie scoop to portion the pancake batter onto the pan. Repeat to cook 5 mini pancakes at the same time.
Flip the pancakes: once the pancakes start forming bubbles in the middle (approximately 2 to 3 mins), use a silicon turner to slide under each pancake and flip to the other side. Repeat to flip each pancake. Allow 2nd side to cook for 1 mins. Then use silicon turner to transfer pancakes to serving plate and repeat process till all batter is used up.
Add pancake toppings: pile the mini pancakes high into a stack. Put some sliced banana and strawberries on different layers throughout the stack. Drizzle maple syrup over and dust with icing sugar.
Serve and enjoy: it is best to top the pancakes just before serving so that they don't go soggy. Plate, provide forks and dig in!
- Note 1 - Self -raising flour: You can sift this ingredient to ensure that the batter has no lumps. If you skip sifting it, ensure that you whisk the ingredients together thoroughly as this will also rid the batter of any flour lumps.
