Brie Croissant
Brie Croissants are buttery, cheesy and ready in minutes. Croissants are layered with ham, creamy brie, swiss and cranberry for the ultimate breakfast.

- 4 large croissants Note 1
- 2 slices swiss cheese each cut into 4 smaller pieces
- 200 grams/7 oz ham thinly sliced
- 200 grams/7 oz wheel brie cheese Note 3
- ⅓ cup cranberry sauce Note 2
Croissant Glaze
- 40 grams/3 tbs butter unsalted
- 1 tablespoon honey
- 1 tablespoon dijon mustard
- 1 tablespoon sesame seeds
- 1 tablespoon poppy seeds
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Preheat the oven: preheat the oven to 180°C / 350-375°F / Gas Mark 4-5.
Prepare the croissants: use a knife and chopping board to cut each of the croissants in half lengthways.
Swiss cheese: layer the base of each croissant with 2 slices of cut swiss cheese.
Ham: place 2 slices of cut ham on top of the swiss cheese.
Cranberry and brie: butter the sliced brie pieces with the cranberry sauce and then place these on top of the sliced ham.
Close: place the top of each croissant onto the base of the croissant.
Baking tray: transfer each brie croissant to a silicon mat above an oven rack and tray.
Glaze: melt the butter in a heatproof jug. Then add the honey, mustard, garlic powder, onion powder, poppy seeds and sesame seeds. Whisk to combine. Then microwave for 20 seconds. Use a pastry brush to brush the honey glaze over the top of each filled croissant.
Oven bake: place the baking tray into the oven on the middle shelf. Bake the croissants for 10 minutes until the cheese has melted and the croissants have turned light golden brown.
Serve: use oven mits to remove the baking tray from the oven and place it onto a heat proof surface. Then use kitchen tongs to transfer the croissants to a serving plate. Sprinkle freshly chopped chives over the top for garnish.
- Note 1 - Croissants: either your local grocery store or bakery will have these. If you want to freeze them and prepare them later, check the packet's fine print. Some will state that they have been frozen already in which case, check another packet as most stores have a couple of different brands and sizes.
- Note 2 - Cranberry sauce: if you can't find this with the jam at the supermarket look for it with the mustards and mint sauces.
- Note 3 - Brie cheese: a 200 gram which is 7 oz wheel will be enough for 4 croissants. A wheel is easier to cut into 'slices' than a wedge is.
