Ingredients

Pizza Sauce

  • 4 tablespoons tomato paste
  • 1 tablespoon dried onion Note 1
  • 1 teaspoon dried Italian herbs Note 2

Pizza Base

  • 1 pizza base Note 3

Pizza Toppings

  • 2 cups black olives drained, not rinsed, thinly sliced, Note 4
  • ½ cup capers drained, not rinsed, Note 5

Cheese Toppings

  • ¼ cup mozzarella cheese freshly grated using a handheld or box grater, Note 6
  • ¼ cup colby cheese freshly grated using a handheld or box grater, Note 7

Garnish (optional):

  • chives finely chopped

Instructions

  • Preheat the oven: preheat the oven to 180°C / 350-375°F / Gas Mark 4-5.
  • Pizza sauce: add the tomato paste, dried onion and Italian herbs to a small bowl and stir to combine. Then set side.
  • Pizza base: roll and or shape your pizza dough into the shape you desire and then place it onto an oiled pizza tray.
  • Sauce onto base: dollop the sauce onto the pizza dough and then use the back of a spoon to spread it into the thin layer.
  • Cheese: sprinkle half of the mozzarella and the colby cheeses over the pizza sauce.
  • Olives and capers: spread the olives out to form a layer on top of the cheese. Then do the same with the capers.
  • Cheese: sprinkle the remaining cheese over the top of the olives and capers.
  • Oven bake: place the pizza tray into the oven and cook the pizza for 20 minutes.
  • To serve: remove the cooked pizza from the oven once the cheese has melted, place it onto a cutting board and use a pizza wheel to slice.
  • Garnish: sprinkle some finely chopped chives over the top of the pizza and serve.

Notes

  • Note 1 - Dried onion: saving time by not peeling or dicing an onion, we use dried onion also for the sauce. You will find this in the herbs and spices section of the supermarket. It is dried onion flakes.
  • Note 2 - Italian herbs: you can substitute 1 teaspoon of either dried parsley, dried oregano or dried basil for this if you wish too.
  • Note 3 - Pizza base: you have a wide variety of options here. Whether you want to make your own pizza dough, use store bought, buy a premade pizza base or use your favorite pizza base. Each will work with the recipe 😉👌.
  • Note 4 - Black olives: easily the star of the show! If you purchase sliced black olives then all you need to do is drain them and throw them on top of the pizza. It is too easy!
  • Note 5 - Capers: despite their tiny size, these little green buds positively burst with flavor. They will come in a bottle with liquid. We need to drain but not rinse them.
  • Note 6 - Mozzarella: this is a good melting cheese yet it can be a bit bland in flavor. For that reason we pair it with another cheese and end up with the best of both cheese worlds.
  • Note 7 - Colby cheese: this cheese compliments the mozzarella on top of the pizza as well as bringing a little bit more flavor to the pizza. Freshly grated from a block using a handheld or box grater is best.
