Basmati Fried Rice

Basmati Fried Rice is quick and easy! Loaded with bacon, peas, corn, green onions, fried egg and rice this combo will tick a lot of boxes.

Ingredients

  • 4 large eggs free range, Note 1
  • 1 cup bacon diced, Note 2
  • 1 cup frozen peas Note 3
  • 6 green onions roots and tips trimmed, then finely sliced, Note 4
  • ΒΌ teaspoon salt Note 5
  • Β½ teaspoon pepper
  • 400 grams/14 oz corn kernels
  • 2 cups basmati rice dried, cooked according to packet instructions
  • 2 tbs Worcestershire sauce

Instructions

  • Eggs: crack the eggs into a small bowl and use a fork to whisk. Then place a large saute pan on the stove top, add the whisked eggs and let them cook for 2-3 minutes. Once cooked, use a slotted spoon to slide them out of the pan onto a chopping board.
  • Bacon: add the diced bacon, frozen peas, sliced green onions, salt and pepper to the pan and cook, stirring to combine for 2 minutes.
  • Rice: read and follow the instructions on the packet to cook the rice in the microwave, rice cooker or other element on the stove top. It will generally need 3 cups of water for 2 cups of the rice and take around 12-14 minutes to cook. Once it is cooked, use a fork to fluff it up.
  • Corn: add the rinsed corn to the pan with the bacon mixture and then add the cooked fluffed rice.
  • Worcestershire sauce: pour the Worcestershire sauce over the rice and then use a wooden spoon to stir to fold this in.
  • Sliced egg: then add the sliced egg to the pan and again stir combine.
  • To serve: after stirring the egg into the rice, allow the dish to heat through. Then use a large spoon to transfer it into a serving bowl.

Notes

  • Note 1 - Eggs: we want to whisk these and then fry them in the pan and then the chop them up. The fried bits of egg are delightfully delicious when combined with the other ingredients.
  • Note 2 - Bacon: chunky bits of diced bacon are perfect. I find it easiest to buy store bought diced bacon as then you can simply throw it into the pan, no prep work needed.
  • Note 3 - Peas: everyone has frozen peas in their freezer, right 😁. We only need measure a cup of them and add them to the pan with the bacon. They thaw and cook very quickly.
  • Note 4 - Green onions: we simply need to trim the roots and tips of these and then use a sharp knife to slice them into thin pieces. They bring both flavor and texture to the dish.
  • Note 5 - Salt and pepper: we use salt and a little bit of black pepper for seasoning in the recipe.
  • Note 6 - Corn: this is a standard tin of corn kernels. We drain and rinse them.
  • Note 7 - Basmati rice: a long grain white rice that is a popular choice. It has a chewy texture and is excellent to use for fried rice.
  • Note 8 - Worcestershire sauce: this gives almost anything an oomph and it does the trick to bringing a little flavor packed oomph to this fried rice πŸ˜‰πŸ‘Œ.
