Equipment

  • 1 Baking dish
  • 1 Glass jug
  • 1 Mini whisk
  • 1 Cooking spray
  • 2 Oven Mits
  • 1 Tin foil
  • 1 Baking rack
  • 1 Silicon Baking Mat

Ingredients

  • 1kg/2.2 pounds pork ribs (pork spare ribs) Note 1
  • cup honey Note 2
  • ¼ cup soy sauce Note 3
  • 1 tbsp garlic, minced Note 4
  • 1 tablespoon ginger, minced Note 5
  • 3 tablespoon sweet chilli sauce Note 6
  • ¼ teaspoon salt Note 7
  • ½ teaspoon cracked black pepper also Note 7

Instructions

  • Preheat the oven: preheat the oven to 180°C / 350-375°F / Gas Mark 4-5.
  • Marinade: add honey, soy sauce, sweet chilli sauce, garlic, ginger, salt and pepper to a glass jug and use a mini whisk or fork to consistently combine. Then set aside.
  • Baking tray: spray a baking dish with cooking oil and use kitchen tongs to place the ribs in one flat layer next to each other.
  • Marinade: use a pastry brush to coat each rib with the honey soy glaze. Then use the tongs to flip to the other side. Coat this side of each rib with the glaze also.
  • Oven bake: place the baking dish into the oven and cook the ribs for 10 mins.
  • Marinade and cover: use oven mits to remove the baking dish from the oven, pour the remaining marinade into the dish, spread with the pastry brush then cover with tin foil. Cook the covered ribs for 40 mins.
  • Grill: use oven mits to remove baking dish and set on heatproof surface. Use kitchen tongs to remove ribs one by one and place on oven baking rack above silicon lined baking tray. Grill the ribs for 15 mins at 200°C392°F6.
  • Serve and enjoy: use oven mits to remove cooked ribs from the oven and place on heat proof surface. Use tongs to portion onto serving plates and serve immediately.

Notes

  • Note 1 Pork spare ribs: these are individually cut ribs that are larger than baby back ribs. You will be able to source them from your local grocery store or butcher.
  • Note 2 Honey: this sweet, sticky syrup is an excellent ingredient to use in marinades as it blends subtly with a multitude of other ingredients.
  • Note 3 Soy sauce: regular, not dark soy is used for the recipe. You have the option when purchasing to choose a salt reduced version.
  • Note 4 Garlic: used to add a lovely depth of flavour to the marinade. The recipe calls for minced, you can also used finely chopped cloves (1 to 2) should you wish to 😉👍.
  • Note 5 Ginger: a great pairing to the flavours of honey, soy and garlic. Again the recipe calls for minced and for this ingredient I recommend sticking to that as to not let the ginger flavour overpower any of the other ingredients in the recipe.
  • Note 6 Sweet chilli sauce: an optional ingredient, but you will find that it helps add a lovely sweetness to the ribs.
  • Note 7 Salt and pepper: a small amount of each of these is added to the sauce to help season the ribs.
