Curry Beef Mince

Equipment

  • 1 Sauté pan
  • 1 Silicon flexible turner to cook and break up the meat
  • 1 Wooden spoon alternative to the above for cooking the mince

Ingredients

  • 2 tablespoons olive oil
  • 500 grams/16 oz beef mince (ground beef) Note 1
  • 2 teaspoons curry powder Note 2
  • 1 tablespoon dried onion
  • ¼ teaspoon salt
  • ½ teaspoon cracked black pepper
  • 2 cups frozen peas Note 3
  • 1 cup corn kernels Note 4
  • 1 cup sultanas
  • flatbreads optional to serve
  • 2 tablespoons crispy onion for garnish
  • Greek yogurt optional to serve

Instructions

  • Cook beef mince: heat 2 tbs of olive oil in a large heavy based pan using high heat. Add the beef mince, curry powder, dried onion, salt and pepper. Cook till browned and use a wooden spoon to stir and break up any clumps of meat as you go.
  • Peas: microwave the peas to cook them. Start with 2 mins on high, remove and stir, then microwave for 1 more minute.
  • Combine: add the peas, corn and sultanas to the curried beef mince. Stir to combine and cook for 2 to 3 minutes to allow ingredients to heat through.
  • Serve and enjoy: portion the curried beef mince onto plates with whole wheat flatbreads (optional), Greek yoghurt and crispy onion.

Notes

  • Note 1 Beef mince: this is the same thing as ground beef. It is budget friendly, freezer friendly and extremely versatile! Lean beef mince or regular both work well for the recipe. Purchase from Walmart, Safeway, Woolies, Tesco, Aldi, Coles or your local butcher!
  • Note 2 - Curry powder: the key ingredient in this recipe that provides maximum flavour. As with all spices a little goes a long way!
  • Note 3 - Frozen peas: one of the easiest vegetables that always needs to be in every freezer! We microwave these to cook them and then add them to the pan to stir and combine.
  • Note 4 -Corn kernels: you can use frozen corn kernels or canned. If using canned, simply open, rinse and discard liquid. If using frozen, do the same thing I mention for the peas and microwave then add for a speedy technique 😘😁🥰.
