Ingredients

Turmeric Energy Balls

  • 15 medjool dates
  • 1 ¼ cups almonds
  • ¼ cup coconut oil
  • cup tahini paste
  • ½ tbsp turmeric matcha
  • turmeric matcha (optional) to decorate
  • poppy seeds (optional) to decorate

Instructions

Turmeric Energy Balls

  • Preheat your oven to 180 degrees F 82.2 degrees C. Line a baking tray with paper.
  • Add almonds to baking tray and toast toast for 4 minutes
  • Remove pit from dates and discard 
  • Add almonds to a food processor and blitz to combine
  • Add dates and blitz again
  • Add tahini and blitz 
  • Pour in coconut oil and blitz 
  • Add turmeric matcha and blitz to combine 
  • Roll into balls 
  • Coat with poppy seeds or additional turmeric match powder (optional)

Notes

  • You don't have to toast the nuts, but I think you get an overall better flavour to the energy balls when you do. If you are short on time, you can skip this step.
  • These snacks will keep in the fridge for at least 2 weeks and for about 3 months in the freezer 
  • You can use plain turmeric for these or turmeric match like I did 
  • The turmeric powder or turmeric matcha powder has a strong bitter, powdery taste, I would not recommend coating all of the energy balls in it or using too much as it will overpower the flavour of them 
  • If using plain turmeric, the balls will be slightly more yellow, as the turmeric matcha is a combination of powdered green tea and spices so it has a more green than yellow colour
