Brocolli, Bacon and Cream Cheese Frittata

Recipe for a simple and easy frittata that you can bake on school or work night. With 3 key ingredients combined for optimum flavour, you will want to make this time and time again.

Ingredients

  • 6 eggs free range
  • cup grated cheese
  • 1 tablespoon almond milk or cows milk
  • 1 head broccoli
  • 2 rashers bacon free range
  • 125 grams cream cheese
  • ¼ cup basil pesto
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  • Preheat oven to 180 degrees
  • Crack the eggs into a medium sized bowl and whisk to combine 
  • Add grated cheese and milk
  • Cut broccoli stem off and make smaller amounts out of the head (no pieces too big), add to the bowl
  • Cut bacon into thin strips and add to the bowl 
  • Cut cream cheese into small cubes and add to the bowl 
  • Add pesto, then season all ingredients with salt and pepper 
  • Stir together all ingredients till mixed in well. Bake for 30 mins or until there is no wet egg look in the centre part of the frittata 

Notes

  1. This recipe will freeze well and reheat again 
  2. If freezing, best to let portion defrost before heating as opposed to heat from frozen
  3. Serve with basmati or brown rice and spinach leaves or bean shoots
