Corn Relish Dip

Equipment

  • 1 Serving platter
  • 1 Cheese knife

Ingredients

  • 250 grams / 8oz cream cheese Note 1
  • ¼ cup corn relish Note 2
  • 2 tablespoon crispy bacon pieces Note 3
  • ½ jalapeno seeds removed, finely diced, Note 4
  • crackers to serve

Instructions

  • Cream cheese: remove the cream cheese from the fridge, tear off the cardboard, peel off the foil and place in centre of serving board.
  • Relish: use a spoon to dollop the relish onto the cream cheese. Flip the spoon over, then gently pat the relish down so that it is in a thick layer.
  • Jalapeno: sprinkle the chopped jalapeno over the corn relish.
  • Crispy bacon: sprinkle the crispy bacon over the top of the chopped jalapeno.
  • Crackers: place crackers around the edges of the dip and provide a cheese knife for serving

Notes

  • Note 1 - Cream cheese: go for a block over a tub of this as it looks better if the dip is being presented ie at a party or gathering. Any block within the range of 225 - 250 grams will work fine. It doesn't need long to soften as it will soften as you prepare the dip.
  • Note 2 - Corn relish: sweet, easy to get your hands on and available all year round, this ingredient has taste and texture. Leftovers can be used on burgers, hot dogs or roll ups (sandwiches).
  • Note 3- Jalapeno: sliced in half, seeds removed and finely chopped is best. This will take the heat out (leave the seeds in if you want a little spice). Use capsicum (bell pepper) as an alternative with the same colour and texture but no spice.
  • Note 4- Crispy Bacon: this is store bought crispy bacon that works so well as a 'ready to use' ingredient. You will find in the salad section of the supermarket, where things like the croutons are.
